I visited this restaurant with a friend during the early hours of opening. It had been two years since we last saw each other. We both ordered for the first time. Inside the restaurant, there was a ticket machine on the right side. I ordered the salt ramen with truffle oil (large) and extra toppings, while my friend ordered the aged soy sauce ramen with extra toppings. We sat at the long counter seats and placed our tickets on the counter. There were aprons and water available for self-service. Shortly after, our ramen arrived. The salt ramen had a unique flavor, made by a former Italian chef. The noodles were chewy and firm, with a good bite. The soup was warm and the ramen was filled with plenty of vegetables like lettuce, cabbage, and leafy greens. It was a satisfying and delicious meal. My friend enjoyed the aged soy sauce ramen, which had a miso-like flavor. We both agreed to come back to try the soy sauce ramen next time. The owner's attentiveness and excellent customer service added to the overall experience, making us want to return in the future.

First visit. Ordered salt ramen. Got a thick potage ramen. Despite being thick, it is quite light and easy to eat, so give it a try. It's too light, so the aftertaste is also light. It feels a bit lacking... Toppings include chashu, salad, etc.

Visited Nameless in the fiercely competitive ramen district of Kanda. Like other reviews mentioned, there is no sign so I almost passed by. I opted for the large size since it was the same price as the regular size when buying the ticket. However, in terms of soup quantity, I recommend the regular size over the large. I ordered the salt chicken broth with extra toppings for 1,100 yen. The amount and variety of vegetables were satisfactory and it was delicious. It was guilt-free eating, so I added a few extra points.

Today I had lunch in Kanda. I had been curious about this place for a while. I arrived at 11:20 am and there was no line. I had to wait outside for a bit. It's mid-September but still hot outside! When will it finally cool down? After waiting for about 10 minutes, I bought a meal ticket and got a seat. I was tempted by the salt truffle, but I chose the soy sauce ramen and meat rice bowl. The meat rice bowl was bigger than I expected, especially for its price of only 150 yen. When the dishes arrived, the ramen had a meat miso-like topping in the center, probably some sort of soy sauce paste. I took a sip of the soup first. It was delicious! A rich chicken broth, almost like a potage. The noodles were chewy flat noodles. I broke down the soy sauce paste in the middle of eating to change the flavor. However, I personally preferred the soup before it was mixed with the soy sauce as I initially found the chicken broth tasty, and the seafood soy sauce overpowered the flavor. Next time, I want to try the salt truffle ramen. This place offers a delicious, affordable bowl of ramen. Thank you for the meal.

This is a shop where you can eat ramen that is like potage soup! The number of seats is not large, so it seems less crowded if you avoid lunchtime. I had been curious because I often pass by here, so it was my first visit. A friend recommended the tsukemen, but when I went, there was no tsukemen, so I chose the salt ramen instead. It had truffle oil drizzled on it, so I thought it had an Italian-inspired name. When I tasted it, the noodles were thick and cooked firm, giving me more of a pasta-eating sensation than a ramen one. There were vegetables on top, so I felt like I was having a healthy ramen experience for the first time, haha. The soup seemed to be made with a lot of potatoes, tasting like a potage soup, and the other ramen seemed to accentuate that more. (If you add garlic to the other ramen, it turns into a taste similar to aglio e olio.) For those who want a light and smooth meal, I think the salt ramen is good, while those who prefer a thick and hearty option would be better off with the other ramen.

Finally visited a shop I had been meaning to check out. Arrived on a weekday around 6 pm and luckily didn't have to wait in line. The humble shop owner hasn't even revealed their name yet, so the shop is simply labeled with the word "noodles" on the curtain, without a sign. If you're not paying attention, you might just walk right past it. I ordered the aged blended soy sauce ramen with a seasoned egg topping. A generous amount of cabbage is the first thing you see. I enjoyed picking at the cabbage while slowly melting the aged blended soy sauce into the soup. It felt like the flavor was truly complete once the soy sauce was fully dissolved. The flat noodles had a nice texture and it was delicious until the last bite. Thank you for the meal.

It's good that the restaurant is close to the station. I had passed by the front of the restaurant many times but didn't know the name, so maybe it's unnamed? I bought the aged mixed soy sauce ramen from the ticket machine. We had to get our own water and paper aprons. The paper apron seemed mandatory as I was told twice. The price remained the same even when I ordered extra noodles, so I didn't hesitate to get the extra noodles. The soup had a light taste like consomme, but with a thick texture. You can gradually dissolve the mixed soy sauce to enjoy the change in flavor.

On a hot day, I wandered over to the Kanda area. After passing by a few shops, I stumbled upon a ramen shop under the train tracks that seemed interesting. It had about 5 seats and a small interior. There was a ticket machine at the entrance, with a sign saying to wait outside if it's full. Luckily, I was able to get a seat right away. I chose the soy sauce ramen with extra toppings for 1050 yen, which is quite reasonable. They also had self-serve water and aprons available. Soon enough, my order arrived. The bowl was filled with cabbage and plenty of chashu (pork slices). The soup had a complex flavor, possibly due to the vegetables, with a chicken broth base. When the miso was mixed in, it added even more depth to the taste. The chashu was tender and delicious. The noodles were on the shorter side and had a unique texture. In Kanda, there's a place called "_____" (unnamed) that only serves two types of ramen: salt ramen (with truffle something) and soy sauce ramen with a lump of soy sauce to dissolve. There are only 6 seats and not many people know about it yet. It's like a hidden gem - a "secret famous restaurant." The large (240g) and regular (180g) sizes are the same price, so I ordered the large salt ramen with an extra seasoned egg topping. It was packed, but we managed to get seats after buying our tickets. The turnover is fast, and the ramen arrived super quickly, in about 4 minutes. The taste was amazing! I finished it in no time and the additional toppings like garlic, ground sesame, and chili flakes made the experience even better. This place is a hidden treasure, and if more people find out about it, there will be long lines for sure.

I visited for the first time at 11:30 on Thursday. The 6-counter seats were just full so I waited a few minutes outside. I ordered the aged miso ramen with lots of toppings added. Even though there were only 6 seats, the owner's efficiency seemed good and the turnover was smooth. The noodles were slightly firm, possibly due to a short boiling time, but had a nice chewy texture that I enjoyed. The salt-based soup was like potage and tasted delicious on its own. When the aged miso was mixed in, the flavor became intense and interesting, but it was a bit salty for me to finish the whole bowl. I think I'd like to try the salt ramen next time at this restaurant.

The shop is run by an Italian chef. Arrived before 3 PM on a weekday with no wait, as there were only 2 customers ahead. I had the aged soy sauce last time, so this time I went for the salt option. Since the large portion was the same price, I opted for that. The bowl arrived in about 5 minutes, topped with char siu, baby leaf lettuce, purple cabbage, spicy onions, and fried onions. The truffle oil aroma was incredible. The first sip of the soup revealed a creamy chicken broth with grated potatoes, giving it a thick vegetable-potato chicken broth texture. The noodles were slightly curled flat and thick, with a firm texture similar to al dente fettuccine, reflecting the chef's Italian background. The spicy onions provided a nice touch. Although the char siu was tender, it lacked depth of flavor. Personally, I am not a big fan of strong truffle oil aroma, but as I continued eating, the aroma mellowed out and I enjoyed the dish. I had aged soy sauce ramen. The noodles were flat and delicious, just the way I like them. However, it was troublesome to have to dissolve the soy sauce ball in the middle to make it into soy sauce ramen. Since it's such a delicious soy sauce ramen, I feel like it would be better to just have soy sauce soup from the beginning.

The staff have a somewhat unique aura. The soup is thick and has a vegetable potage-like flavor. Although it was soy sauce based, the potency of the potage flavor overpowers it. The taste is light, with the option to change the flavor by dissolving the matured miso halfway through. The miso's saltiness mixes in and transforms the soup into a punchy blend! The cost performance of the toppings such as cabbage and char siu is good. The thin noodles match well with this soup (^^) To be honest, it might be a love-it-or-hate-it kind of taste. I arrived at this ramen shop around 11 o'clock on a weekday, and there were already 3 people seated. I purchased a salt ramen ticket from the vending machine (tax included 900 yen), which also offers a large serving for the same price. I also ordered the large serving option. There is a water server and paper aprons at the counter, so I helped myself to water first. The salt ramen arrived in less than 10 minutes, with a colorful presentation of salad on top. I visited this place after several years. Water and paper apron are self-service according to the shopkeeper's comment. It is located under the Yamanote Line tracks, between Akihabara and Kanda. I ordered the aged mixed soy sauce ramen. I was curious about what mixed soy sauce is, but I didn't have the courage to ask the shopkeeper, so I ate in silence. The cloudy soup of chicken white broth had a good amount of saltiness and was delicious. Even when melting the mixed soy sauce, it did not become too strong in flavor. I ate while searching for the right taste, wondering if the correct state is when it is all melted. It was delicious.
