Special Salt Ramen for 950 yen. From Tobu Tojo Line, it is a 2-minute walk from Naka-Itabashi Station North Exit, arriving at 11:08 with a line of 18 people, waiting for 35 minutes to buy a meal ticket. Once the meal ticket was purchased at the vending machine, I sat in the third seat from the front of the counter with 6 seats outside the store in about 7-8 minutes. As usual, it was a one-person operation, with 3 batches, and the time until the ramen was served was about 5-6 minutes. The order was a special salt ramen with pork shoulder roast, 4 pieces of grilled pork, 5 meat-filled dumplings, a few seasoned bamboo shoots, a flavored egg, and garnishes of green onions and shallots. The soup was based on chicken with dried fish such as dried sardines, bonito, and mackerel, as well as dried ingredients. The salt sauce included white soy sauce and salt with dried clams, scallops, and kelp, and the fragrant oil was a blend of chicken oil and seafood. The noodles were medium-thin straight noodles from Mikawa-ya Noodle Factory, cut with a blade No. 22 and cooked with low water content. Starting with the soup, it had a strong seafood flavor with a hint of dried clams, and the umami and thickness of the soup were outstanding. The noodles were slightly firm, cooked to perfection, and had an excellent texture that paired well with the soup. The flavorful grilled pork shoulder roast was perfectly cooked and seasoned, making it very delicious. The meat-filled dumplings had a spicy ginger flavor, making them exceptionally tasty. The bamboo shoot strips for chopstick rest were mild, and the flavored egg had a subtle sweetness with a perfectly runny yolk, which I really enjoyed. Once again, I received a lot of extra service, and I am truly grateful. I actually forgot to hand in my meal ticket and only realized it after returning home. However, the staff must have noticed as I was served the special salt ramen according to the meal ticket I purchased. Even though there is no clear view of the vending machine, I appreciate their attentiveness. I apologized to Mr. Morita via DM, and he kindly reassured me not to worry about it, for which I am thankful. The restaurant's operating days are gradually decreasing, and they are closed on Thursdays as well, but I plan to visit as much as possible until September. Thank you for the meal.
