Special Salt Ramen for 950 yen. From Tobu Tojo Line, it is a 2-minute walk from Naka-Itabashi Station North Exit, arriving at 11:08 with a line of 18 people, waiting for 35 minutes to buy a meal ticket. Once the meal ticket was purchased at the vending machine, I sat in the third seat from the front of the counter with 6 seats outside the store in about 7-8 minutes. As usual, it was a one-person operation, with 3 batches, and the time until the ramen was served was about 5-6 minutes. The order was a special salt ramen with pork shoulder roast, 4 pieces of grilled pork, 5 meat-filled dumplings, a few seasoned bamboo shoots, a flavored egg, and garnishes of green onions and shallots. The soup was based on chicken with dried fish such as dried sardines, bonito, and mackerel, as well as dried ingredients. The salt sauce included white soy sauce and salt with dried clams, scallops, and kelp, and the fragrant oil was a blend of chicken oil and seafood. The noodles were medium-thin straight noodles from Mikawa-ya Noodle Factory, cut with a blade No. 22 and cooked with low water content. Starting with the soup, it had a strong seafood flavor with a hint of dried clams, and the umami and thickness of the soup were outstanding. The noodles were slightly firm, cooked to perfection, and had an excellent texture that paired well with the soup. The flavorful grilled pork shoulder roast was perfectly cooked and seasoned, making it very delicious. The meat-filled dumplings had a spicy ginger flavor, making them exceptionally tasty. The bamboo shoot strips for chopstick rest were mild, and the flavored egg had a subtle sweetness with a perfectly runny yolk, which I really enjoyed. Once again, I received a lot of extra service, and I am truly grateful. I actually forgot to hand in my meal ticket and only realized it after returning home. However, the staff must have noticed as I was served the special salt ramen according to the meal ticket I purchased. Even though there is no clear view of the vending machine, I appreciate their attentiveness. I apologized to Mr. Morita via DM, and he kindly reassured me not to worry about it, for which I am thankful. The restaurant's operating days are gradually decreasing, and they are closed on Thursdays as well, but I plan to visit as much as possible until September. Thank you for the meal.

Special Chinese noodles for 1,050 yen. Extra large portion (1.5 times) for 150 yen. There was information that it might be the last business day, so I visited at the first train. On Tuesday early morning at 5 o'clock, there were 5 people waiting for the opening. At 6 o'clock, there were about 30 people, and at the opening, there were about 45 people waiting. The store opened at 7:10, and the noodles were served at 7:25. This was my second visit in 2023. It's easy to see why this place captivates so many people, as the bowl was impressively delicious. I finished every last drop, and it was a delightful meal.

The restaurant opened at 8:30, but I arrived at 7:50 full of excitement. Surprisingly, the place was already open and customers were eating. There were 17 people ahead of me in line, showing that it's a popular spot. After waiting for about 30 minutes, I was prompted to purchase a meal ticket. I decided on the special salt ramen for 1050 yen. The food arrived in about 5 minutes, and it looked beautiful with clear soup, white noodles, 3 wontons, 4 slices of chashu, and menma. The soup had a delicious flavor with just the right amount of saltiness. The chashu was smoked and had a perfect thickness. The noodles were also tasty. I ended up finishing all the soup because it was just too good. The restaurant only opens in the morning, so it might be hard to visit again, but I'll definitely try to come back. I'm curious about the soy sauce ramen, but I'll probably end up choosing the salt ramen again because of how good it was.

Chuka Soba Sawa in Naka-Itabashi, Tokyo offers a special salt Chuka Soba for 1050 yen which is super delicious! The thin noodles from Mikawa-ya have a slight acidity and amazing umami flavor. The broth is rich in flavor with hints of dried seafood and a light soy sauce base. The wontons, half-boiled egg, and bamboo shoots are delicious, but the smoked char siu pork is the best! I revisited the place since it opened and it has become even more delicious. It's still reasonably priced as before! I used to interact with them on Twitter and mentioned that the noodles were a bit weak, but unfortunately lost my account. This place is so good that it's worth waiting for, even if it's a 2-hour wait. They will be open until the end of September at 25-14 Naka-Itabashi, Itabashi-ku. I had always wanted to go to Chuka Soba Sawa, and when I arrived at the parking lot near the restaurant, there were only about 3 people waiting in line in front of the shop. I thought it wasn't crowded at all, but when I turned the corner, there were over 20 people waiting. The owner was running the shop alone, and there were only 6 seats available, so I was hesitant about waiting. Just when I was about to give up, the owner came out with a sign saying they were closed for the day. I was disappointed, but then the owner asked if I wanted to wait in line. I asked if it was still okay to wait, and they said it was fine. I ended up waiting for 120 minutes. They had sold out of their special dishes, char siu ramen, and wonton ramen, but the soy sauce and salt ramen were delicious! The soy sauce ramen had a rich color but wasn't too salty, with a strong umami flavor. The wontons were filled with a tasty ginger-flavored filling, and the char siu was smoky and delicious. The salt ramen had a mellow and deep flavor. Even though the noodles were ordinary compared to the toppings and soup, the price of 800 yen was a great deal. This was the first time I had been to a shop where both the soy sauce and salt ramen were so delicious. In my opinion, the soy sauce ramen ranks 3rd and the salt ramen ranks 2nd. I would love to go back to the shop before it closes.

Arrived around 11:30 on a regular day. This shop is open from 8:30 to 12, so I lined up just in time before closing. 11:26 Waiting started (about the first 10 people). 11:35 Purchased meal ticket. 11:57 Seated. 12:06 Served. [Parking] Not available. Paid parking nearby costs 200 yen for 15 minutes or 200 yen for 30 minutes. Special Salt Ramen for 1050 yen. The clear soup has a subtle bonito flavor. Despite its simple appearance, it has a deep and complex umami taste from chicken and mushroom. The noodles are slightly rough on the surface, with a moderate water content and surprisingly thick. Personally, I found the quality of the soup to be extremely high, so the noodles were just average and did not match the level of the soup. The chashu (roasted pork) is delicious with a traditional smoky flavor. The wonton has a hint of star anise which complements the soup well. The seasoned egg is average. Overall, the soup and chashu are excellent, but the noodles, wonton, and egg are average. So, if I have the chance next time, I will try the chashu ramen at the same price. It seems that the price has recently been raised, but I think it's quite generous to get this quality for 1050 yen nowadays.

Egg Salt Ramen for 900 yen. This time, I'll keep it brief since it's a revisit. There are rumors that the restaurant will close at the end of August due to the redevelopment of Naka-Itabashi Station, so I wanted to visit one last time before it closes. After researching, I found out that they will continue operating in September. I'm relieved. However, the owner took a break around April this year, and sometimes handles the long lines alone, so I hope they take care of their health. Now, onto the ramen review. This time, I had the salt flavor. Honestly, I prefer the salt flavor. The broth at Sawa-san's place is delicious with a strong chicken and seafood flavor. With soy sauce, the broth and soy sauce color (flavor) compete. But with salt, the sauce is simple, allowing you to enjoy the broth more. The first sip of the soup was surprisingly delicious. Another great thing about Sawa-san's place is the generous toppings and affordable prices. Even when I went right before they sold out (salt flavor), I could only choose between plain or with egg, and additional toppings were limited to seaweed or bamboo shoots, so I chose the egg topping. Even the regular bowl with 2 slices of chashu and 3 wontons is only 800 yen, and with egg, it's 900 yen! Can you believe you get so many toppings for such a low price?! It's almost too good to be true. And each topping is delicious, especially the bamboo shoots, which I regret not adding more of. With the limited operating days, it has become difficult to visit, but I would like to try the special salt ramen and rice dishes next time. Especially the egg over rice, which I remember being incredibly delicious. I hope this renowned restaurant doesn't disappear.

I was able to enter the restaurant at 9:40 am. Although the waiting time was a bit shorter this time, I still had to wait for almost 2 hours. However, it was worth going early because I was able to eat the "special" version ✨ Salt Chuka Soba has a milder taste compared to soy sauce, allowing you to really taste the broth's flavor. The wonton with ginger is not just fragrant with ginger, but the roughly chopped ginger adds a unique texture, making it really delicious. The thick chashu is packed with meat but still tender and satisfying to eat. It's a perfect bowl of noodles. Good news here - it was rumored that Sawa-san would be closing at the end of August, but it seems they will still be open in September. They are currently looking for a new location. The current place seems to have a contract until September, so it's not ending in August after all. I revisited the Chinese soba restaurant Sawa in Naka-Itabashi, which is scheduled to close in August. I wanted to try the salt-flavored Chinese soba this time. The opening hours have been getting earlier, and recently it's from 8:30 am to 12 pm! It's basically become a morning ramen specialty shop, huh? So I arrived at 8 am before opening time, but there was already a line extending to the back alley next to the shop, and I finally found the end of the line after turning right... There were about 50 people in line? After waiting for 2 hours, I finally made it to the front of the shop around 10 am, only to find out that they had sold out with the people still in line, and a sign saying "Closed for the day." With the shop closing in half a month, being on summer break, and only open 3 days a week in the morning, it's quite a situation. I ordered the salt-flavored Chinese soba. It was delicious with plenty of umami from the seafood. The medium-thin noodles absorbed the soup well and were tasty! Under the chashu, there were also hidden wontons, and all the toppings were delicious. The soy sauce-flavored Chinese soba I had last time was also good, but I might prefer the salt-flavored one. Chukasoba Sawa @ Nakaitabashi "Chukasoba with Flavored Egg" I've been wanting to go to Sawa for a long time, but they are only open for lunch on Mondays, Wednesdays, and Fridays, so it's been hard to find the right time. They are closing at the end of August, so I really wanted to go before that. I was prepared to wait, so I arrived at 8:50 AM when they opened at 8:30 AM. There was already a line of 30 people ahead of me. I waited for 1 hour and 50 minutes, but finally got in. The "Special" and "Wonton Noodles" were already sold out. The soup had a strong flavor of dried sardines and chicken. The soy sauce flavor was just right, not too overpowering. The thin straight noodles were soft and went well with the soup. The chashu was tender and slightly sweet. The wonton had a nice ginger flavor and texture. The flavored egg was slightly sweet and perfectly half-boiled. The bamboo shoots had a crunchy texture and were easy to eat. Overall, the ramen was excellent and reasonably priced. The owner was working alone but was very diligent and provided good service. I heard that the restaurant was closing this month, so I finally visited SaWa-san, which I had been wanting to try. When I arrived around 8 o'clock, there were nearly 30 people waiting in line. Despite the rain and the sun coming out intermittently, the delicious soy sauce ramen made all the frustration disappear. I was completely satisfied after eating it.

First visit, arrived at 12pm and had to wait for about 40 minutes with 9 people ahead of us. Since they close at 1pm, there were limited options and we had to go with the Chinese noodles. The soup was incredibly delicious. They had soy sauce and salt options, and I chose soy sauce which was definitely the right choice. The portion size is good, young people could probably eat two bowls easily. The noodles were well put together, and after finishing it, I couldn't help but say out loud how delicious it was. I didn't see any notice about them closing at the end of the month. Is that really true?

It has now become a must-visit restaurant with long lines, and as someone who has been going since the opening, I am very happy to see how much better it has become compared to the past (although it was delicious back then too). They open at 8:30 am, but they open the shop around 7:00 am, showing the owner Mr. Morita's sincerity and passion through his one-man operation of customer service and soup preparation. The clear soy sauce-based soup has a sharp taste, and the careful work put into the bonito flavor and ginger wontons shows nothing but respect. The rumors of the restaurant closing were apparently false, so I want to continue visiting regularly in the future.

Ramen Kanto Summer Expedition Part 1 ☀️ Seeking the best morning ramen 🏃‍♂️ This place is only open on weekdays for 3 days, so it was hard to come, but finally made it here ✌️ The medium-thin noodles with a chewy texture have a satisfying bite and go down smoothly, with excellent soup interaction. The rich wheat flavor with a hint of acidity and umami in the soup is amazing. The soy sauce has a sharp taste with a deep umami flavor, and you can also taste the umami of the animal broth. The thickly sliced char siu has a great aroma and a hint of sweetness, making it delicious. The chewy wonton has a good texture, strong meat flavor, and a great kick from the ginger, very tasty. The crunchy bamboo shoots are sweet and well-seasoned, which I like. The flavored egg with a runny yolk and sweet seasoning is also to my liking. This bowl is personally my favorite, with a high level of satisfaction. It was incredibly delicious, starting the day with this in Tokyo is amazing. Thank you for the meal. I ordered the Special Shoyu Ramen for 1,050 yen, which comes with a seasoned egg, 3 slices of chashu, and a wonton. The soup had a strong soy sauce flavor with a rich chicken and seafood broth, which I really enjoyed. The medium-thin noodles paired well with the soup, and the chashu was nicely charred and flavorful, although I personally prefer it a bit more tender. I visited the special Chinese ramen place that I was curious about on a weekday for the first time. I arrived at 10:20 and there were 4 people waiting outside. I was seated after an 18-minute wait and got my ramen 10 minutes later. When I finished eating and left, there were about 15 people waiting outside. It seems like I timed my wait well. According to reviews, it seems like the restaurant is closing, so I'm glad I was able to visit.
