Arrived at 12:25 on Thursday, no parking available. Nearby coin parking was available with no waiting. Purchased a ticket from the vending machine. [Menu for Today]: Special Salt Ramen 1150 yen (*No upsizing available), Chashu Rice 350 yen. Ordered Chashu Rice thinking it might not be enough since upsizing was not available. Despite no upsizing, the special ramen had a satisfying amount and even the soup was so good that I wanted to drink it all. The soup looked beautiful and luxurious, full of umami from chicken and kelp. The salt flavor was smooth with lingering umami from kelp. The slightly yellowish chicken oil made the lips delicious. The sliced green onions paired well with the soup, boosting the flavor. The noodles were firm with a good bounce, not like the typical thin noodles from bonito-based ramen. The toppings included two types of chashu, a well-marinated soft-boiled egg, bamboo shoots, and chicken meatballs, offering a variety of flavors. The Chashu Rice had chashu marinated in soy sauce, a bit oily but tasty. Overall, the salt ramen was delicious and satisfying. Looking forward to trying the thick-sliced roast pork next time. Interested in their soy sauce and limited-time offerings too! Planning to visit again soon.

It was around 7 p.m. on Saturday. There was one customer before me and one customer after me. Personally, I prefer soy sauce ramen, but this restaurant seems to recommend salt ramen, so I tried salt ramen for the first time in a while. Salt ramen can be unsatisfying if the flavor is too light, or too salty if the flavor is too strong, making it quite challenging. However, the salt ramen at this restaurant was well-balanced. I was a bit hesitant to go because I had read reviews mentioning the difficult nature of the owner, but the atmosphere wasn't as bad as I had feared. It seems that as long as you carefully read and follow the rules that are written, it should be fine. Actually, before coming here, I tried revisiting Chinatown Iibuki, but there was a one-hour wait at 6:30 p.m. It seems impossible to avoid waiting unless it's a weekday evening.

I visited "Ramen Moto," located near the Toei Mita Line Hasunuma Station, which I had been wanting to try for a while. I confidently ordered the salt ramen that I had decided on beforehand. As expected from a popular restaurant, both the soup and noodles were exactly to my liking. I even thought that if it was just with green onions, the "kake ramen" would have been even better. I truly realized how difficult it is to make good salt ramen. The staff were also very kind and provided excellent service. It was a delicious meal. I would like to visit this restaurant again.

I visited a quite famous ramen shop by myself at night. I was surprised when I arrived at the shop because there were posters all over the outside and inside of the shop. Rules were written on them, which made me quite nervous. I wasn't sure if they were still following COVID-19 rules or if they were just being cautious, but I decided to eat quickly and quietly with that in mind. I bought a meal ticket from a new-looking vending machine and tried the salt ramen. The taste was to my liking, even though I usually don't like char siu with a reddish hue, it was very delicious. The soup was light and tasty, making me want to drink it all up before I knew it. The posters seemed to indicate that talking was strictly prohibited, so I tried to be careful not to speak to the staff as much as possible. However, the staff members were quite friendly and were chatting with the customers, so it seemed like I didn't need to be too nervous. It was a taste that made me want to visit again.

As of today, the restaurant is ranked 3.73 out of the top 5000 on Tabelog. The background music inside the restaurant is J-POP, with the song "Habit" by Sekai no Owari playing. There were two staff members. Due to the restaurant being full, an announcement was made to wait outside loudly, as mentioned in reviews. There weren't many notices posted outside, indicating a lack of attention to detail. I chose the "Raamen" for 950 yen. It had a mild salt flavor for a salt-based broth. The noodles were soft due to the high water content, creating a smooth texture. The chicken meatballs were tasty, although nothing extraordinary. The long and thin bamboo shoots had a flavorful taste as well. This smoothness in the broth is likely due to the abundant use of chicken and seafood broth. To put it in Power Pro Baseball status terms, the meatball could be liked by both men and women (Meat C), the broth had unexpectedly mild punch (Power C), and the bamboo shoots had low running power (Speed D). This ramen shop might be challenging for non-locals to visit. The service has a touch of uniqueness and good defense (Special Ability B). Overall, it was delicious. Thank you for the meal.

I arrived at the restaurant around 11:30 on a weekend with a wait for 2 people. We ordered the Ajitama Shio Ramen for 1050 yen, which was served in about 20 minutes. The soup was mild yet flavorful, with a nice balance of richness. The thin straight noodles were cooked perfectly. The ramen came with two types of chashu, menma, tsukune, and a seasoned egg topping. The pork belly chashu was juicy and paired well with the light soup, creating a harmonious bowl of ramen. Overall, I think this is one of the best salt ramen I've ever had. The soup, noodles, and toppings were all delicious. Thank you for the meal!

I had the normal salt ramen at this restaurant. The soup was impressive - clear and refreshing in appearance, yet with a rich flavor and easy to drink. The lingering richness in the aftertaste was irresistible, and I ended up finishing the whole bowl. The noodles were noteworthy as well. They were soft and thin with a slight firmness resembling somen noodles. The noodles combined with the soup to create a very delicious combination. Additionally, the knowledge shared by the president, whom I happened to talk to, was a major attraction. Not only knowledgeable about ramen but also about rice dishes, their wide range of knowledge was evident in this ramen. I believe that's what led to the exceptional deliciousness of this dish.

【Overall】This is a renowned salt ramen shop that is a regular contender for the TRY Ramen Grand Prix. Indeed, the chicken clear broth has a smooth and gentle flavor. It is refreshing without any off-flavors, yet it has a rich umami and depth, making it a truly delicious salt soup. The soft, thin straight noodles are a perfect match here. With a soft texture, they slide down easily. And not to be outdone by the ramen, the side menu's roast pork bowl is exquisite! The char siu sauce pairs well, and the marriage of flavors when eaten with the salt ramen is just phenomenal. To put it modestly, it's outstanding.【Basic Information】Visit Date: 2023/07/30 (Sun) 11:43Line at Arrival: 0 people (3 people inside)Ticket Purchase Method: Purchased upon enteringOrder/Price: Salt ramen + Roast pork bowl ¥900 + ¥400【Soup】The chicken clear broth is very clear, yet the broth has a strong presence. It's well-balanced with chicken bones and seafood, rather than a strong umami flavor. If I had to say, the rich chicken flavor stood out to me.【Noodles】The soft, thin straight noodles are perfect. They intertwine with the soup nicely and taste very delicious. They have a gentle texture and a soft mouthfeel. They go perfectly with the soup.【Ingredients】Pork belly and roast char siu, bamboo shoots, fish balls, white negi. The white negi quietly does a great job with its crispness. Also, the ginger-infused fish balls, although small, had a great taste. The pork belly char siu was incredibly fatty.【Side Menu】The roast pork bowl is delicious!! The moist and tasty meat is packed in there. It's great when topped with char siu sauce. Oh, it's really delicious! However, it seems to take some time to prepare. I ordered it after the ramen, and they informed me, "It will take a while to serve." But it's worth ordering for the deliciousness.【Service】There were cold wet towels at the entrance. I'm happy to see fewer cloth towels! When I asked, I received a paper apron. Personal belongings are stored under the counter. I couldn't find any tissue boxes... They were placed at the end seats of the counter. They had yuzu salt and ichimi togarashi. The chili pepper went well with the ramen.【Atmosphere】The interior has about 6 counter seats. A TV is mounted in the back. It says the front 2 seats are for 2 people. It's not spacious, so seating for 3 or more might be tight. An announcement was made for groups of 3 or more who arrived later to sit together. There are plaques displaying the shop's award history inside, which I think is amazing.

Lunch was a bit delayed, so I decided to visit this popular restaurant. It was a weekday at 1:40 pm, so there was no line. I was able to enter the restaurant smoothly. I ordered the special soy sauce ramen that I was curious about for 1,150 yen and the char siu rice for 350 yen. Both dishes were served in less than 10 minutes. The visual presentation was satisfying, with the bowl filled with char siu and meatballs. The char siu was thinly sliced and flavorful, very delicious. The meatballs were made with care, with no unpleasant texture. Personally, I didn't find the noodles and soup particularly tasty, but overall, the quality of the meat dishes, including the char siu rice, was very high. Thank you for the meal!

From outside the door to inside, there are many caution signs. It still feels like there is a reminder of the pandemic. The atmosphere inside the restaurant is calm, with customers quietly waiting for their ramen. The salt ramen I had was light and easy to eat. Try adding the yuzu pepper on the table midway through to change the flavor instantly. It was a bit disappointing that there were some parts of the chashu that were hard to chew, but it adds to the charm. I didn't order it, but the roasted pork rice looked and smelled delicious, so if you have room, you should definitely try it out.笑

I visited on a weekday for lunch. It was crowded around 12:30, so I recommend coming at a different time. There was no line when I arrived before 12 o'clock. I regret not eating then. I purchased a ticket for salt ramen. There are various rules and manners written outside and inside the shop. I was worried if it was a strict place, but it didn't affect regular diners. The clear soup was better than expected, with various parts of chicken and fish inside. There was no fishy smell, and the chicken flavor wasn't overpowering. It was not too strong in taste but still delicious. I will come again.

I live in Itabashi, and there's probably no one who doesn't know "Raamen Gen." I always crave their salt ramen and roast pork! (◎_◎;) The consistent deliciousness and satisfying portion. The soup is so good that I drink it all up!! Thank you for the meal ===========

The light ramen was incredibly delicious! The chashu had a satisfying texture and was meaty and tasty! (Note: there is a chashu with a lot of oil, so be careful of stomach discomfort) Due to its location, it's not easy to visit often, but I would like to come again when I'm nearby.

This is the ultimate salt ramen. I used to live nearby 5-6 years ago and it was so delicious that I would go almost every week. After moving due to work, I couldn't go as often because of the distance. I couldn't find a salt ramen that surpasses "Raamen Gen", so this time, I revisited after a 2-hour journey. It's a light and mellow salt ramen with a rich broth, and even coming from afar, it didn't disappoint in taste. I would like to find time to visit again.

Ordered the salt ramen. Delicious. The soup is clean and free of any off-flavors, with a strong saltiness that leaves an impression. Even though I didn't order the special version, it came with three types of meat, all of which were tasty and satisfying. However, while the soup is clean, it feels a bit weak, not like a regular salt ramen where the saltiness stands out. The saltiness is there, but it left me feeling a bit unsatisfied.

I went there for the first time, recommended for the salt flavor, just a 1-minute walk from Hasunone Station ☺️ There were 3 people ahead of me in line, and you get seated after someone finishes eating and then you buy a food ticket. I purchased a food ticket for the Thick-sliced Roast Pork Bowl with extra rice because I was hungry and they didn't have extra noodles. The shining salt soup was refreshing yet rich, very drinkable soup, and the thin, chewy noodles were delicious. The Thick-sliced Roast Pork Bowl arrived late, and when the owner prepared it in the kitchen, I was surprised by the massive portion - a 3cm thick, 12cm diameter slice of roast pork on top of the bowl, it was amazing! I wondered if I could finish it all, but I did! The person next to me had ramen and roast pork bowl, which might be just the right amount for an adult man. I'd like to try the limited miso flavor and roast pork bowl next time!

I visited "Hajime" located near Renkon Station on the Toei Mita Line after a long time. At 12:30, there was no line outside, so when I entered, I was immediately told loudly from the kitchen, "We are full, please wait outside." It was strange because I saw two empty seats at a nearby table for three. Once I was finally seated, I noticed that the kitchen was being run by one person, not the owner who appears on TV or magazines. The assistant was a woman, and the whole kitchen operation seemed quite hectic and rushed, with constant shouting and instructions. The close proximity of the kitchen to the counter made the chaos feel unsettling. The owner's presence would have made a big difference in this situation. The broth was clear and flavorful, but when I tried the chashu, its saltiness overshadowed the delicate broth. The noodles were thin, initially smooth but became somewhat stretchy after a few bites, making me wonder if they were slightly undercooked. I ordered the special salt ramen, which came with chashu slices that were tasty but too salty, masking the goodness of the broth. The meatballs were flavorful but too overpowering. Overall, the salt broth was delicious, but the softness of the noodles and the high salt content of the toppings were a bit off. Considering the chaotic atmosphere in the kitchen, I don't feel inclined to revisit. Thank you for the meal. ★3.5

I ordered the salt ramen (900 yen). It was light and tasted like a classic salt ramen. I visited at 11:50 on Saturday and was able to enter without waiting. However, it quickly became popular with a wait for 1-2 people. They have a ticket machine, and they also accept PayPay payments.

It was Golden Week, so I wondered if it would be crowded. I arrived 15 minutes before opening. Lucky for me, there was only one customer ahead of me. By the time the ramen was served, the restaurant was full with about 7 people. I couldn't decide between their recommended salt ramen or the limited miso flavor since it was my first time there, so I chose the salt ramen. The clear soup was delicious without any off-flavors. The two types of chashu were also tasty without any unpleasant smell. I would like to try the miso flavor next time.

I got off at Hasu-ne Station for the first time. As soon as I exited the east exit, I saw a sign for a restaurant. I passed by it and went to Kinokuni-yu first. After enjoying the sauna, I visited the restaurant around 8 p.m. It seemed to be a popular place, but it was surprisingly empty at this time on a weekday. I ordered the salt ramen that I had been aiming for. I paid with PayPay, so I scanned the QR code at the back table. The ramen that came out shortly after was served in original and cute bowls and ladles. The soup had a gentle flavor that made it easy to drink it all up. The balance with the noodles was also very nice. Thank you for the meal.

Shoyu Ramen with Char Siu Pork - 1250 yen. I arrived around 5 minutes before the Sunday evening opening time of 6 pm. Three people were already waiting for the store to open. The door and interior of the shop were covered with lively notices. Although I usually prefer soy sauce flavor, this shop recommended the salt flavor, so I decided to try it. I also added extra Char Siu pork, which was so large that you couldn't see the noodles in the menu photo. The shop only had counter seats, and there was no wall separating the cooking area, allowing a clear view of the cooking process. It seemed like the shop was run by two people, with one mainly handling the cooking. Despite being quite busy, they managed to efficiently prepare the ramen, with the Char Siu pork being sliced fresh for each order and lightly heated to match the noodle cooking time. The ramen arrived in about 15 minutes. The Shoyu Ramen with Char Siu Pork included 4 slices of belly and 4 slices of thigh Char Siu pork, a chicken meatball, menma bamboo shoots, green onions, and thin noodles in a clear, light soup. The Char Siu pork had a satisfying volume and texture, offering two different cuts to enjoy. It provided a meaty bite while being tender. The soup and noodles were delicious in a traditional salt ramen style, with a well-balanced taste and presentation. If you seek a stable, traditional flavor, this salt ramen is recommended.
