トモサク
I had been curious about the sushi restaurant "Sushi Dokoro Zuzu" in Tameike-Sanno, and recently I finally got the chance to try their lunch course, which was a good deal with just nigiri sushi. Starting off with a beer to wet my throat, the first dish was Hoshigarei. The fish was deliciously thick, but the seasoning was a bit strong. The lean tuna was a simple and delicious dish. The striped jack had a slightly strong seasoning, maybe a punchy soy sauce for white-fleshed fish. Just when I was thinking that, the Biwamasu from Lake Biwa was incredibly delicious. Oh, what a fragrant fish this is! The skipjack tuna, not intentionally seared, showcased the deliciousness of the ingredient, and the firefly squid was a mysteriously delicious dish with a perfect balance of texture and tenderness. The golden eye snapper was simply superb. I love dishes where you can feel the quality of the ingredients and craftsmanship. The giant clam had a good taste rich in minerals. The purple sea urchin came from Yoichi. Sea urchin from Yoichi during this season is undoubtedly delicious. And then the medium fatty tuna. Again, a simple yet top-notch dish. The Japanese horse mackerel was firm and delicious, followed by the Bafun sea urchin from Rishiri. Hmm, the taste is completely different from the purple sea urchin earlier from Yoichi. It melts in your mouth. After enjoying the soup, I savored the delicious horse mackerel before moving on to the exquisite conger eel. Perhaps because it's in season, it had a fluffy finish that melted on the tongue. Excellent. The course ended with a tekka maki. I felt it even during the nigiri sushi, but the tuna is truly delicious and satisfying. The seaweed also had a strong flavor, making it a good roll. When I asked for a refill and was told they didn't have more of what I had, they offered me "engawa" with flounder. It's slightly different from the flounder, but it's delicious in its own right, and as a fan of engawa, I enjoyed the richness. Lastly, I had a kanpyo maki with plenty of wasabi. The meticulous preparation of the kanpyo and the flavor of the seaweed made it delicious. That day, after the beer, I intentionally switched to a glass of white wine, which turned out to be a crisp and sharp Spanish wine that didn't have any fishiness even with lean tuna, a perfect match for sushi. Especially with the skipjack tuna and firefly squid, and the giant clam, it enhanced the mineral notes. Overall, the sushi rice was slightly warm with vinegar, with a delicate balance that crumbled softly, fitting my preference. The ingredients were all of good quality and prepared with care, simply delicious. Occasionally, the strong seasoning of the soy sauce may be felt, but it's within my liking. Oh, this taste, this variety, at this price, it's a steal. I definitely want to come back. Satisfied and full.
