Today's Poteran-chi → [First] The rich and creamy ramen with the condensed umami of tonkotsu is perfect. When you add the "Staveji" (vegetable toppings), it transforms into a Jiro-style tonkotsu ramen, also perfect. The quality is too high, definitely worth a repeat visit. It's interesting that you can choose various vegetable flavors for free with your tonkotsu ramen. In addition to the default option, there are also Hakata-style and Wakayama-style ramen, but I ordered the default version. The free vegetable toppings are not just plain; you can choose from back fat, garlic, tomato, ethnic, and many other types. Based on the reviews on Tabelog (a Japanese restaurant review site), it seems that the Staveji is the most popular choice, so I went with that. I also ordered a seasoned egg topping. At first, the ramen and vegetables are served in separate bowls. I started by trying the soup in its default state, and it was incredibly rich and creamy with the condensed umami of tonkotsu, absolutely delicious. The noodles, for tonkotsu ramen, are on the thicker side with a satisfying chewiness. I was already very satisfied with the default version, but then I added the Staveji vegetables all at once. It transformed beautifully into a Jiro-style tonkotsu ramen, with the back fat and garlic flavors prominent, yet the gentle umami of tonkotsu enveloping everything in perfect balance. It's not at all greasy; I've also tried the Jiro ramen at the Mita Honten branch, but even those who like Jiro-style ramen should definitely try this dish. I ate it while mixing it like a Jiro ramen, alternating between the noodles, bean sprouts, and garlic chives, each providing a different texture accent, keeping it interesting. The chashu pork has a satisfying chewiness and is seasoned with Asian flavors. I tried adding pepper towards the end, which didn't add punch but rather made the flavors sharper and more defined. You can add more vegetables in addition to the free ones, seemingly increasing the quantity in a "chaser" style, but I thought it would be too much like Jiro if I added more. The free amount was just right. This Jiro-style tonkotsu ramen is seriously good.
