It's been a while since my last visit. The chef's atmosphere is as great as ever. Wearing a tiger T-shirt and a tiger apron...sounds a bit sketchy just by description, but it's actually cool. Usually, I always have the course menu for dinner, but this time I visited because they were offering à la carte dishes for the year-end. Normally, the chef's creative dishes often showcase Chinese flavors through spices and cooking methods, but this time they served authentic and easy-to-understand Chinese cuisine, which got me excited. Dishes like mapo tofu, shredded pork with green peppers, shrimp chili, saliva chicken, and char siu were on the menu. There were also some unique items like octopus with wasabi and oysters with sansho pepper flavor. The portion size of each dish was perfect for two people to enjoy, so those with a big appetite could conquer the entire menu. I love the mature dining experience of having the course menu at Torakutsu, but I also really enjoy the casual izakaya-style experience of trying various dishes quickly. The wine selection was still great, and I had a delicious rosé wine. I had another wonderful time this time. I'm looking forward to going back to Torakutsu for their usual dishes after the New Year. During a break from work, I had some free time and found a good-looking tantanmen place nearby! It was around 1 p.m. and I was seated right away. After that, the line started forming outside the restaurant again, so it seems like I got there at a good time. The staff at the restaurant were no-nonsense types. They efficiently handled the customers. It felt a bit rushed, like they were quick to clear the table once you finished eating, but it's understandable since they were busy. It seems like they are a proper Chinese restaurant at night, but they switch things up for lunch. It was my first time looking at the menu, so I was a bit indecisive, but I chose the soupless tantanmen. I waited for about 5 minutes while admiring the stylish and open interior. The dish had a complex and flavorful taste with a hint of acidity, thanks to the chunky minced meat and shrimp aroma. Despite tantanmen often being considered junk food, this one was really delicious as a Chinese dish. The tantanmen with soup that the person next to me was eating also looked delicious, so I plan to try that next time.

Dan Dan noodles lunch. They are open on Wednesdays. There was no one 15 minutes before opening, so I decided to go. However, 5 minutes later, there were 18 people waiting. According to Tabelog, there are 19 seats, so I decided to wait. But in reality, there are 17 seats and a 30-minute wait. They let me in, which was a relief. It was delicious with thick noodles and spicy flavor. Next time, I will challenge the soup-less spicy noodles. I was curious about the oolong tea that everyone was drinking. Thank you for the meal. The restaurant has a calm atmosphere with a black color scheme. The glass-walled kitchen creates a dynamic contrast, which is nice. It's no wonder this place is popular. I had to wait in line for a bit, but then I happened to run into a high school classmate! The taste was great, with elegant flavors and a punch in the soup and meat dishes. The noodles weren't to my liking, hence the rating. If I liked the noodles, I would have rated it even higher!

Night Tiger's Den after a long time. It was excellent again this time. The char siu and homemade sausage were perfect with the bubbles. The accompanying pickled ginger was also good. The shrimp spring roll with yuba was chewy and crispy. The roasted chicken had a delicious umami flavor from the mushrooms, with crispy skin and juicy meat inside. White wine paired well with it. The clam soup had a taste that you could keep drinking forever. The ayu fish spring roll and edamame dumplings were fluffy and had a nice bitterness from the ayu fish. The conger eel was also excellent. Mr. Jin's conger eel was truly outstanding. The handmade noodles were of course delicious with a spicy kick, but I forgot to take a photo. We also finished 4 bottles of wine. The evening course is definitely delicious.

This restaurant is famous for its long lines for lunchtime tantanmen noodles. I had visited for lunch before and remembered how delicious it was, but it was even better at night! The dishes are predominantly seafood-based, with a light and refreshing taste, yet each dish has a striking accent that is wonderful. You can enjoy every dish. As a finale, this time I had the soup-less tantanmen noodles, which of course were consistently delicious! It may not be suitable for those who prefer to chat leisurely or receive attentive service since it's a one-person operation, but I personally thought the efficiency of the one-person operation was good ☺︎ It's an area to watch out for in Higashi-Nihonbashi, isn't it!

It's within walking distance from home but far from the workplace, so I rarely come across tantan noodles for lunch. Finally got a weekday off and visited around 11:40. Managed to enter without waiting until the last minute. I ordered soupless, while my partner ordered with soup. It's tantan noodles with a strong numbing sensation and thick noodles. The ingredients are simple but delicious with a good balance.

I casually dropped into a ramen shop and heard that their tantanmen is delicious. First, I tasted the soup and the rich aroma of sesame gently spread. The spiciness is just right and the noodles are firm straight cut. The minced meat is also well seasoned, providing a good flavor. The jasmine rice has a nice fragrance. Lastly, when you dip the soup, the combination of jasmine and coconut aroma with the tantanmen is delicious. On a Tuesday afternoon, after a meeting, I happened to pass by the Ningyocho area around 1:00 PM and was curious about this place. There were two groups waiting, but I bought the Tantanmen for 1,000 yen, Jasmine rice for 100 yen, and a spicy side dish for 50 yen from the ticket machine. I didn't have to wait long and was seated within 5 minutes. I was happy to see paper aprons on the tables since I was wearing a white shirt! After a short wait, the food arrived! The spicy dish was really hot haha. The smell was amazing. Mixing it first and then eating it with rice was so delicious! I couldn't stop eating it! Lastly, I added the Jasmine rice to the remaining broth, and it was incredibly tasty! It was amazing. I want to go back again! Thank you for the meal!

Visited on a weekday at 1 pm. There was a wait of 1 person outside and 2 people inside, but we were seated promptly. Ordered the Soupless Tan Tan Men for 900 yen and a Hot Spring Egg for 100 yen. It took about 10 minutes for the dishes to arrive. The noodles were spicy but not overwhelmingly so, with a fragrant dried shrimp flavor and a hint of sweetness from the meat miso. Mixing in the hot spring egg made it even creamier and more delicious. There was some meat miso and sauce left at the end, so adding jasmine rice would have been a good idea. The table was equipped with paper aprons, wet towels, and water. The service was a bit cold, but efficient and smooth. By the time we left, the line had grown, but the turnover seemed quick, so you might not have to wait too long depending on timing.

Appetizers: Octopus (with real sansho pepper and cucumber), stuffed lamb intestines, pork belly wrapped in yuba with shrimp, clam rice bowl. Main dish: Red snapper with free-range chicken (from Iwate) and shiitake mushrooms. Finished with hand-made noodles. Enjoyed with a red wine blend of Grenache and Syrah from southern France. I have visited this restaurant for lunch about three times. It tends to get very crowded, so it's best to go at a less busy time or when you have some extra time. You wait outside for a bit, then the staff calls you inside to buy a meal ticket. You wait inside as well. I ordered the large serving of tantanmen for 1100 yen. They also provide a paper apron. The toppings are very simple. However, the simplicity enhances the irresistible flavor of the soup. It had been a while since my last visit, but the spicy aroma in the restaurant brought back nostalgic feelings. I sat at the counter, but there was always someone standing behind me, which made me quite uncomfortable. By the way, the large serving was actually more generous than I had imagined. When the dish was brought out, people around me whispered, "Can a woman handle that amount?" Seeing it, I understood. Indeed, the portion was quite substantial. The normal serving left me slightly unsatisfied, so next time I'll go back to ordering the regular size.

Tan Tan Men without broth @ 900 yen First, purchase a meal ticket at the ticket vending machine inside the restaurant. Hand the meal ticket to the staff and your order will be ready in 10 minutes. Luckily, this time there were only 2 groups waiting inside, so we didn't have to line up outside. It was a hot day, so we ordered it without broth. It has a fish powder-like aroma, and you can enjoy the fragrance more than the spiciness and numbness. The noodles are thick and have a moderate firmness. Even though I usually avoid strong flavors while working, this Tan Tan Men is truly elegant and delicious. It's a popular restaurant, so lining up can be a downside, but it's definitely a must-try famous restaurant in Ningyocho.

It might have been over 10 years since the last time I came to "Fusue" for lunch. Sometimes I would come to the front of the restaurant, but it would be closed for lunch on certain days or there would be a long line, so I would give up. This day, I decided to go a bit later during the lunch peak time, and there was no line outside the restaurant! So I decided to go in. There were 4 people waiting to be seated inside, so it seemed like I could be seated soon. I bought my meal ticket at the ticket machine, waited, and was seated in less than 10 minutes. I placed the meal tickets for "Soupless Dan Dan Noodles" (900 yen) and "Jasmine Rice (small serving)" (50 yen) on the counter, and all I had to do was wait for the food. On the counter, there were various spices and seasonings along with paper aprons, which was thoughtful. After a while, the "Soupless Dan Dan Noodles" and "Jasmine Rice" arrived at the same time. First, I tried the "Soupless Dan Dan Noodles" ... Oh, before eating, make sure to mix it well. The noodles were slightly thick and straight, with a smooth and firm texture on the surface that resembled pasta. The noodles had a normal firmness with a slight chewiness. The sauce had a rich sesame flavor with a strong sweetness, but within that sweetness, the spiciness from chili peppers and the tingling sensation of Sichuan pepper gradually started to emerge. As I continued eating, my mouth gradually started to tingle. However, the spiciness was at a normal level, so even those who are not fond of strong spiciness need not worry, and it's also fine for those who don't like the tingling sensation of Sichuan pepper. I would rate the spiciness at around 3 and the tingling at 2 on my 5-level spiciness scale. The toppings included seasoned ground pork and leeks. The light brown topping might be fried green onions. The Jasmine Rice was fragrant with long-grain rice cooked to a normal consistency. Many people mix the leftover sauce and ground pork from the Soupless Dan Dan Noodles with the Jasmine Rice, but today I decided to eat the ground pork as a side dish with the Jasmine Rice as it is. Because the fragrance of the Jasmine Rice is really nice, and it tastes delicious on its own. Thank you for the meal. It was my first time at "Fusue" in a while, and it was still delicious as always. But in the past 10 years, there have been many restaurants offering Dan Dan Noodles at this level of quality, right? I visited the restaurant around 12:40 on a weekday for the first time in five years. The interior had a calm atmosphere centered around the counter. I was able to be seated immediately as there was one empty seat at the counter. Last time I visited, I had the tantanmen with soup. For lunch, they only serve on Tuesdays, Thursdays, and Fridays. There is a ticket machine right at the entrance. Today, I had the soup-less tantanmen for 900 yen. I added toppings of cilantro and a half-cooked egg for 100 yen each. The soup-less option has less noodles, but it was served promptly in about 8 minutes. The amount of vegetables was a bit less, so I was glad I ordered cilantro. The sesame flavor was good, and it was quite delicious, especially with the mildness from the half-cooked egg. There were two staff members in the hall and the owner. It was a high-level chilled tantanmen. Thank you for the meal.

The restaurant has a clean atmosphere with wine glasses available, so it seems suitable for drinking at night. The dish arrived in about 5 minutes. The slightly tangy sauce complements the chives and minced meat well, paired with chewy medium-thick noodles. Mix it well and enjoy. The spiciness is just right, making you break a sweat. Delicious. Next time, I want to try the soup-based tantanmen and jasmine rice.

Located a 5.6-minute walk from Higashi-Nihonbashi. Less than 10 minutes from Ningyocho. The restaurant has an L-shaped counter and two 4-person table seats. I've been there for dinner several times, but this time I had the opportunity to try their tantanmen for lunch for the first time! Usually, there's a line, but this time, being in the middle of a long weekend, it wasn't too bad. However, there were still people waiting afterwards. They offer tantanmen with soup or without, as well as mala noodles. Since it was my first time, I chose the tantanmen with soup. I added a soft-boiled egg just in case it was too spicy. It was hot but not overwhelmingly so, and the soft-boiled egg added a nice touch. The noodles were thick and delicious. It seems like adding rice to the leftover soup would be a good idea, but I passed this time due to my stomach's capacity. By the way, they offer course meals in the evening. Recently, they also have à la carte options. Their wine is mainly by the bottle, but they also offer it by the glass. They have beer and Shaoxing wine as well, but I recommend the wine. The evening menu is also delicious, with dishes like shirako and spring rolls. The owner seems like a genius! Although he looks intimidating, he's actually just shy, so no need to worry.

I visited Fushue in Higashi-Nihonbashi for lunch. Fushue is a restaurant that only offers course meals for dinner, but they also open for lunch three days a week. With dishes like tantanmen priced around 1,000 yen, it's very popular and there has been a constant line since its opening. The evening course meals cost over 10,000 yen, so the atmosphere inside the restaurant is nice and the seating is comfortable. It's understandable why it's so popular to enjoy a delicious lunch in this atmosphere. The flavors were delicious, made from quality ingredients. However, the only disappointing aspect was the queue system where people waiting in line stand behind those who are eating, known as "sekko rei" in places like Ramen Jiro. Even Ramen Jiro, which is considered disrespectful to compare to this restaurant, avoids this system of having people waiting behind those eating, known as "sekko rei." Especially in recent years, due to COVID-19 measures limiting the number of people inside, the practice of having waiting customers outside has become common, making this system even more uncomfortable. No matter how good the atmosphere is, it's a common feeling of unease when people are waiting behind you, and this was the only thing that I couldn't accept.
