We visited Kawamori, a restaurant we had been wanting to go to for a long time, with a friend the other day. Due to the prefectural request for self-restraint, the restaurant opened at 5 pm, so we arrived at 5 pm. We were seated at the counter right in the middle. We started by ordering drinks, tongue sashimi, and harami yukhoe. The tongue sashimi had so much fat on it that it looked pink like I had never seen before. You can enjoy both lean meat and fatty meat, so you can fully appreciate the differences in texture, flavor, and mouthfeel. After it was served, we waited a bit and the flavor changed even more, so we were able to enjoy the sashimi slowly. The harami yukhoe had a lot of thick Japanese-style sauce on the dark red harami. Usually, yukhoe is served cold, making it difficult to bring out the umami of the meat, but at Kawamori, the yukhoe is served cold and despite the thick sauce, the sweetness that lingers in the mouth at the end is completely the refreshing fat of the harami. Very satisfying. Next, we ordered regular tongue with salt, harami with salt (not on the menu), and liver. Kawamori's regular tongue is at the same level as or even higher than other restaurants' special cuts. Despite being thinly sliced, it has a firm texture and is a high-quality meat that melts in your mouth. The liver was fresh and firm with a sharp edge. When lightly grilled, you can directly feel the difference in aroma and texture between the outside and inside. We also ordered chili pepper sauce, tendon yukhoe, and garlic pilaf. In many simple yakiniku restaurants where the meat tastes good if it's fatty, I thought Kawamori's chili pepper sauce had a unique meat quality. You can clearly feel the acidity and sweetness of the lean meat, giving you a satisfying and meaty taste. We placed the tendon yukhoe on the famous garlic pilaf, and it was so delicious that it made us smile and speechless. The garlic pilaf, which is lightly seasoned but packed with umami, goes well with any kind of meat. It's frustrating that we couldn't have more because of our limited stomach capacity. Finally, we ordered premium kalbi and white rice to finish. It was my first time eating raw kalbi, but despite its pure white appearance, it's not greasy. The low melting point of the fat makes it melt in your mouth, allowing you to fully enjoy the umami. The white rice was very tasty. You can eat it raw or grilled, so it's a meat restaurant that you can use no matter what mood you're in. Next time, I want to enjoy it with more grilling. In addition to the meat mentioned above, we also ordered additional items, so the price is unclear, but we drank and ate to our hearts' content and the bill was around 25,000 yen.
