北のもみたろう
On a certain weekday, I went to a ramen shop in Kita-no, Kiyota-ku, which is inspired by Jiro-style ramen with lots of vegetables. When I arrived, everyone seemed surprisingly calm, as if they were all caught up in the baseball game. But soon after, more and more customers started coming in. That day, I decided to try the "Fumoto Shoyu Ramen (800 yen)" with extra vegetables and back fat, and less garlic. It was finally ready after a while. Oh, I completely forgot, but were there always this many vegetables in their ramen? Anyway, I took a bite... The noodles were thick and white, with a crunchy texture that softened nicely towards the end. I heard they also have thin noodles, which piqued my interest. The soup was a pork bone-based broth with a strong umami flavor from the pork, and at first, the soy sauce was quite prominent, making it slightly salty. But as the noodles absorbed the moisture from the bean sprouts, it mellowed out. I couldn't really taste the typical back fat on the surface, which was both good and disappointing. The garlic was also barely noticeable, which was a bit of a letdown. The generous amount of bean sprouts I had after a long time surprisingly didn't affect my stomach later on, and the meat, whether it was loin or pork belly, had a nice chewy texture and wasn't overly salty. Interestingly, most of the customers who came in later ordered pork belly. I was worried if I could finish the ramen with extra vegetables, but I managed to eat it all without any problems, which was a relief. Also, I found that this ramen tasted just right when eaten slowly. Thank you for the meal.
