"Ono's Separate House" in Fukuoka City, Maizuru, run by Takashi Ono, one of the "Four Heavenly Kings of Hakata," is where you can enjoy a meal prepared by him. Tonight, Ikki Kubo, who runs a food and beverage study support business, is visiting Fukuoka. Let's study at the restaurant of his student, Takashi Ono, called "Ono's Separate House." When making a reservation with Ono, it is recommended to go for the "Ito 9-course meal" priced at 7,800 yen (excluding tax). Starting with Fukuoka's local sake, such as Izu Honten's Kame-no-O Jyugenn, a pure rice ginjo sake, which has a good acidity. The theme for this month's appetizer "Ichiyo Raifuku" features a handmade shimenawa by the landlady of a ryokan in Itoshima. The meal includes dishes like shirako, Itoshima's Amaou strawberries and winter persimmons, tea-brewed red sea cucumber with yam and rapeseed flower jelly. Next is sashimi, featuring horse mackerel, kue, abalone shabu-shabu from Iki, golden conger eel from Tsushima, and simmered kawahagi skin. The meal continues with deep-fried dishes like sweetfish scale tempura from Suzaki, flat mushrooms, Itoshima butterbur sprouts, and taro sprout tempura. The sake paired with this course is Saga's Hanakoka Junmai Daiginjo. The meal also includes whitebait tempura, red clam, shallots, butter-sautéed celery, Fukuoka bamboo shoots, and young shoots and scallop shinjo. The main course features a turnip-steamed amberjack from the Genkainada Sea with burnt butter soy sauce, chopped turnip greens, and simmered kombu. The sake served with this course is Kyushu Kiku Zanshin Fukuroshibori Muroka Namagenshu. The dessert is made with olive oil and Amaou strawberries, frozen with liquid nitrogen. Overall, the meal at Ono's Separate House is a great value for around 10,000 yen, especially for those who love carabineros shrimp. It is a hidden gem in Fukuoka, and those who know about it in Tokyo would surely be impressed by the quality of the food served here.
