I learned that alternating between eating at convenience stores and ramen shops will make you fat. So, I walked from Kyoto Station saying "oink oink" the whole way. It was far. Like, really far. My bags were heavy, it was hot, it was raining, and I was covered in sweat. I felt like giving up multiple times, but the rhythmic sound of the high heels and the swaying hips of the woman walking in front of me gave me the motivation to keep going. When I finally reached the shop, the automatic door opened at the perfect timing and a lovely smiling lady welcomed me. Truly, Kyoto is a city of hospitality. There didn't seem to be any hidden options. I ordered the tsukemen from the regular menu and it arrived quickly, probably because they were about to close. It looked like ground buckwheat noodles. The texture was like ground buckwheat noodles. The taste was a gentle Kyoto style, I think? Not bad. Actually, it was more than good. It was outstanding. If Rokurinsha is like Satomi's perfect body, then this place is like Takigawa Kristel's cool gaze. It's a tsukemen that would appeal to adults, not just tired old men. The only disappointment was that the soup was around 45°C. Despite being a pig with a sensitive tongue and sweating like crazy, it didn't bother me much, but it felt a bit off that the perfect body was so indifferent. Maybe it's fine because it's Kristel. Encouraged by the tsukemen Kristel, I decided to visit the shop in Kitashinchi the next day. The appearance was the same, but the soup was around 75°C. This temperature really brings out the dynamism in the noodles. When you grab them, they spin around and slide smoothly down your throat. Yes, this is the tsukemen Hotaru. Visited the popular "Men-sho Takamatsu Honten" in Kyoto, Shijo Karasuma. The restaurant is known for its whole grain noodles ground with a stone mill. The traditional Kyoto-style exterior gives a calm and relaxed atmosphere. Upon entering, there was a pleasant aroma of broth in the air. I ordered the dipping noodles (chicken and seafood) regular size for 890 yen. First, I tried the noodles alone. Wow, these are delicious! The thin noodles have a good firmness to them. The flavor gives the sensation of eating soba noodles. Then, the dipping broth. This was also very tasty! The umami of the seafood and chicken was well pronounced, and the broth had just the right level of richness. I also enjoyed adding sudachi and black pepper for extra flavor. When I arrived just 5 minutes before the 11 am opening on a Sunday, there was no line and I was able to get a seat, but soon after, the restaurant quickly filled up with customers.

It was around 1:00 pm on a regular day, but I was able to get in without waiting in line. I ordered it with a seasoned egg topping. The thin noodles, which had a whole wheat texture, were very delicious as they were coated in the soup! After a long time, I visited Kyoto for some errands and decided to try a nearby ramen shop. I arrived right at opening time and was lucky to be seated on the first round. I ordered the tsukemen (dipping noodles) with chicken and fish broth, topped with everything. I usually think of tsukemen as having thick noodles, but the thin whole wheat noodles here were easy to eat and matched well with the soup - delicious! I enjoyed changing the flavors by adding sudachi (citrus fruit) and black shichimi pepper one by one. I regret not trying the duck rice bowl to avoid overeating. I will definitely visit again.

One of my go-to ramen shops, which I have visited the most for tsukemen. I usually have their standard tsukemen, but this time I decided to try their seasonal limited edition "Duck Dashi Ramen" on a whim. The soup is cold because it's summer, and at first glance, it looks like a clear soy sauce base, so I expected it to be light. However, when I tasted the soup, I was surprised by the rich flavor of duck spreading in my mouth. The duck meat topping was cooked perfectly, with a moist texture and a delicious aroma and flavor with each bite. The noodles were the same as their standard tsukemen, made with whole grain flour from Nagano prefecture, providing a unique texture similar to soba. I visited a ramen shop in Kyoto, near Karasuma, for the first time! I went on a Sunday at noon and there were 3 people waiting outside! The shop had a ramen shop atmosphere with an L-shaped counter. I went on a hiking workshop to Kyoto's Nakagyo Ward. This time, I visited Shisei Garden Hyuric Kyoto, where the site of Shisei Elementary School has been reconstructed into a hotel, library, community center, etc. Since it is located in the city, everyone was asked to visit the facilities and write their opinions on a feedback sheet. I visited this restaurant on the day of the Gion Festival. I had to wait for about 5 groups ahead of me. The system is to buy a ticket from the machine first and then wait. This is my third visit in three weeks. I plan to try a different menu next time, but I always end up ordering the whole wheat tsukemen each time. Today, the firm stone-ground noodles paired perfectly with the comforting dipping sauce, just as expected. I enjoyed adding minced onions, sudachi, and shichimi pepper gradually for a change in flavor. The extra rice was from Yagame Gihachi, and when I tried a piece of the char siu that sank into the soup, the sweetness of the rice slowly spread in my mouth. Ramen shops that serve delicious rice are the best. I might end up coming back here for dinner after overtime again.

The dish arrived quickly, and the taste did not disappoint. With more noodles this time, I delayed adding the sudachi (citrus fruit) and black shichimi pepper to enjoy the plain noodles and soup combination for longer. Just like last time, the sudachi was fresh and added a nice touch to the soup. I imagine they must take great care in selecting their ingredients, even with something as small as a piece of sudachi.
