Ramen Spinach Nori Extra Rice Medium [Murakura] @ Hirano Miyakitamachi, Kita-ku, Kyoto City. Murakura was established in 2007. Until March 2011, it operated in Sakyo-ku in the same prefecture. However, due to the constant long lines caused by its popularity, as well as frequent issues with cars parking illegally and lack of manners, the shop had to close. In October of the same year, it reopened in Kita-ku, and even now, it remains extremely popular with lines forming just like before, establishing itself as a renowned shop that introduced Yokohama-style ramen to Kyoto, and even the Kansai region.
The owner of "Kuramae-ya" is from Hamamatsu and has inherited the roots of a prestigious ramen family, but has made improvements to suit the taste of Kansai people, with a particular emphasis on not discussing the family background. I visited the shop for the first time in 6 years since its relocation, out of curiosity about the changes after it was listed as a group shop on the Oudouya website. The soup is based on pork bone, with a solid soy sauce flavor combined with chicken oil. It has a mild taste without saltiness, and a rich umami from animal-derived broth, making it a smooth and easy-to-drink pork bone soy sauce soup. This tasted just as delicious as before. The noodles, carefully picked up with a V-shaped strainer by the owner, are hand-kneaded, slightly wavy, flat, medium-thick noodles. The wheat aroma is faint, with a smooth noodle surface, chewy elasticity, and a short noodle line, which is a characteristic of the family style.
The popular dish is the Chashu Ramen. They provide it in a separate container to ensure the soup doesn't cool down. The Chashu is quite thick and large, with a light seasoning, and three slices provide a satisfying meal. Another characteristic is the increased amount of spinach, which comes in tennis ball-sized pieces, and the toppings have unique features. They also offer barley rice, which is very delicious, especially when soaked in the soup with seaweed and Chashu, making you want to have multiple servings. Just like before the relocation, they are paying close attention to not causing inconvenience to the local residents, so customers lining up should listen carefully to the instructions from the shop and cooperate to prevent similar issues from happening again.
