You can choose the grilling style for the shellfish, such as with black pork bacon and seasonal vegetables, on kelp in a Matsushima style, in a matsutake mushroom soup base, in a tomato and mushroom gratin, with seasonal vegetables in a gratin style, grilled with live sea urchin and green seaweed, in a tomato sauce for Vongole Rosso, with gorgonzola and white wine, simply grilled with dashi soy sauce, or with white wine and anchovy butter.
