Tan-ka, a strong contender in the Fukuoka meat genre, has several branches in the city. I called them thinking I would need a reservation, but surprisingly, they had availability for the same day. We decided to have a meat feast at this restaurant on the eve of the holiday. It seems that the impact of the resurgence of COVID is quite evident. The restaurant was surprisingly empty, allowing for social distancing. We ordered recommended items, including:
- Tan-ka's raw tongue with seasoning. Great texture.
- Grilled beef tongue salad with a tangy dressing. The flavor was intense but not bad.
- Grilled beef tongue plate with just salt. This had a nice bounce to it.
- Beef tongue sashimi, a first for me. Served with wasabi soy sauce, it was surprisingly good with a rich texture.
- Tan-ka's grilled beef tail, my top recommendation. It combines the best of braised and pork trotters. The meat was tender, collagen-rich, and delicious.
- Tan-ka's half-and-half set of beef tongue and beef skirt skewers. The skewers were juicy and flavorful, served with mustard, wasabi, and spicy condiments.
- Stubborn old man fried rice, fragrant and delicious. The special fried rice sauce added a nice touch.
Although the course menu requires a minimum of two people, each dish has a half-size option, making it friendly for solo diners. While tongue and skirt meat are often considered supporting players in the meat industry, at this restaurant, they were the stars of the show. The service was attentive, and I highly recommend this place for those who love tongue and skirt meat.

On the second day of my trip to Fukuoka, I made a reservation over the phone for a restaurant called "Tankan," which specializes in dishes centered around beef tongue. Despite some language barriers with foreign trainees working at the restaurant, the owner promptly apologized for any inconvenience. It's important to support and encourage foreign workers who are valuable members of the workforce.

At Watanabe-dori Station in Fukuoka, "Tankakawa Honten" is a popular restaurant known for its beef tongue and beef skirt. As it was our second stop and we were already quite full, we ordered the famous beef tongue skewer for 1,980 yen, beef skirt skewer for 1,650 yen, and grilled beef tail. The tongue and skirt were delicious as expected. The grilled tail was a new experience for us and very flavorful. I thought it was quite unique. The only downside was that the seating was not in a sunken kotatsu style (my legs got tired, haha). I have been to the Hakata branch several times, but this was my first time at the Kiyokawa main branch. The atmosphere of the restaurant is nicer than the Hakata branch, and the menu is slightly different. The smoked tongue and tongue pate were delicious. The grilled tongue and sagari were cooked just right, with plenty of juicy flavor. The amount of wasabi as a condiment was a bit lacking. I recommend trying the seasonal limited watermelon shochu highball.

This restaurant is actually a branch of "Chahan O," a rare fried rice specialty restaurant in Tokyo's Shinbashi area. They have a wide selection of local sake from Fukuoka. While the main customers are locals, this restaurant is recommended for tongue lovers from outside the prefecture. Reservations are essential. They are open late, making it convenient for a second round of drinks.

The beef tongue tartare was tasty with the sauce and egg yolk, although the necessity of using beef tongue was not clear. The cutlet was also delicious, but again, the use of beef tongue was questionable. The fried rice was simply delicious, with a nice texture and perfect seasoning. It was a good way to end the meal. Overall, it was a nice izakaya experience. Thank you for the meal. I also had a glass of Sakurajima (440 yen) and a glass of Mita Nigori (605 yen).

On this day, I visited the Hakata beef tongue izakaya "Tankakawa Honten". It was a business dinner with my business partner during my business trip to Fukuoka and Saga in mid-November. The order for the day included:

For drinks, we had two draft beers and two lemon shochu highballs. The sashimi was served with sweet soy sauce and wasabi, very fresh and of high quality. I usually don't prefer raw meat, but the sashimi was delicious, especially the tongue sashimi with its texture and sweetness. The half portion of beef tongue and sagari grilled had a great texture and juiciness, perfectly cooked. The beef tongue shabu-shabu was amazing, with a smooth texture and a great taste when dipped in the sauce with plenty of green onions. It's addictive! The restaurant also offers the option to order the beef tongue shabu-shabu online.
The grilled rice was simple with egg, fish cake, and green onions, moist and slightly oily with a hint of vinegar soy sauce flavor. It had a nostalgic and delicious taste. Overall, all the dishes were delicious, but the beef tongue shabu-shabu stood out. The perfect thickness of the sliced beef tongue contributed to its addictive texture. I visited one of the famous beef tongue restaurants in Fukuoka, called "Tankaku." The restaurant is located in Kiyokawa, a 5-10 minute bus ride from Tenjin. I made a reservation as soon as they opened, so I was able to enter smoothly. However, there were many customers without reservations who couldn't enter, so it seems that reservations are necessary. The dishes I had were as follows:
- Appetizer: Boiled beef tongue, which seemed to be better when warmed.
- Beef tongue sashimi: A must-try dish. You can taste different parts of the tongue in small portions. Surprisingly delicious.
- Tankaku's half-grilled beef tongue and beef skirt: A signature dish served on skewers. Both the tongue and skirt had a slight chewiness. I didn't feel much aging in them, but the skirt had a savory drip-like taste.
[Drinks of the day]:
- Fresh lemon shochu highball: Frozen lemon with lemon-flavored shochu poured over it.
- Shochu: Unfortunately, it was slightly different from what I was expecting.

I returned from Haneda Airport and tried to visit the restaurant at 9 pm, but it was fully booked. I called the main branch immediately for a revenge and managed to make a reservation for 90 minutes at 6 pm the next day. When I arrived at 5:55 pm, there was already a crowd forming. It's truly a popular restaurant, you can't get in without a reservation. I got to use two seats at the counter. Tan Yukke for 1,188 yen, Tan Yaki for 1,848 yen, Caesar salad for 715 yen, Highball for 528 yen x 2, Otoshi for 330 yen, Coupon for free beer, total of 5,137 yen. The Tan Yukke had a good texture. The Tan Yaki was delicious but I thought it was expensive for just one skewer. The Caesar salad had a perfectly balanced dressing and was delicious. At 6:33 pm, the staff came and said it was the last order, even though I had only been there for 30 minutes. No matter how delicious the food is, this kind of service is unacceptable.
