Temporary return to Japan - Fukuoka edition part 10. On this day, I visited "Tonkatsu Yoshida," which I had been eyeing for a while. There were reports of long lines, but since it was a weekday and I arrived about 10 minutes before opening, I thought it would be fine to wait. I walked about 3 minutes from Ropponmatsu Station and arrived at the restaurant. There was already a line of over 10 people. Ah, this is the critical point between the first and second rounds of seating. It's a low-temperature cooking restaurant, so if it's the second round, the wait will be quite long. I waited for the opening while observing the situation. The customers were mostly individuals and couples, regardless of gender. Little by little, we were guided inside, and I managed to just make it in for the first round of seating about 10 minutes after the opening. There are 5 counter seats and tables in the back. I sat at the front counter seat. The interior was clean, but the chairs were a bit high. I'm not a fan of counter chairs. Even now, there are acrylic partitions between the seats. The BGM was quiet, so I couldn't really make it out. There were three staff members - the owner, his wife, and maybe his mother? The service was polite and calm. Orders were taken one by one in order. Although they had TOKYO X and Matsuzaka pork, I chose the Hirekatsu lunch (medium, three pieces) from the regular menu since they didn't have Hire. You can choose between white rice and mixed grain rice, but for tonkatsu, I prefer white rice. I also ordered a large shrimp fry (one piece). Since it was hot, I also asked for a Premium Malt's draft beer (medium). The Premium Malt's draft beer (medium) arrived promptly. It was creamy with a nice bitterness. After waiting for about 30 minutes, the Hirekatsu lunch finally arrived. As expected, it takes time due to the low-temperature cooking. But as soon as it arrived, I was convinced it was a hit. Firstly, the white coating unique to low-temperature cooking. And look at this cross-section! If you're someone who appreciates food, you'll immediately understand the beauty of this. The color is perfectly pink without any unevenness. I've been to numerous famous tonkatsu restaurants in Minami-Asagaya, Takadanobaba, Nishi-Ogikubo, Yotsuya-Sanchome, Kagurazaka, Akihabara, Kamata, Ueno, Ginza, Yamanashi, Kumamoto, but I have never seen such a uniform pink color. While white tonkatsu restaurants have increased, many other places still have a liquid-like feel to them. It's the best level of doneness. First, I tried it without anything added. It's so tender! You don't even need your teeth. Just sandwich it with your lips, and your lower and upper lips stick together. The meat is fine-grained and moist. It's delicious even without anything added, and you can taste the meat's umami. Salt or wasabi is also delicious, but it's wonderful as it is. If you get tired, sauce is also an option, but the presence of the meat's umami disappears. The large shrimp fry is exactly as its name suggests - a big size with a diameter of 3cm and a length of 20cm. Under the crispy coating is a sweet shrimp that's bouncy. The combination of the coating and tartar sauce is also excellent. The meal comes with rice, grated yam, and pickles, a solid lineup. The miso soup has yuzu peel in it, making it refreshing. The dressing is also delicious. After the meal, pineapple juice is served, which is very satisfying. It's nice to have something cold and refreshing. A very fulfilling lunch for about an hour. So, it's time to pay. It's 3,100 yen in total. I paid in cash. An hour later, when I left the restaurant, the person who lined up right behind me still hadn't been able to enter. Indeed, if the timing is off, you might end up waiting for quite a while. Thank you for the meal. Maybe this will be my best tonkatsu now. If the turnover rate is good, it's the best, but is it a trade-off for that doneness? I will definitely visit again when I come back to Fukuoka!
