I think the main store here was probably established around 2007, and the taste at that time was not "shocking" to me personally, but more like "I want to come back here" - a stable essence that gathered the good parts of Hakata to Nagahama style ramen. In fact, for a few years after that, whenever I returned to Fukuoka, I would only visit this main store, or occasionally check out new affiliated stores or just out of curiosity. However, after a while, I felt that all the stores, including this main store, had inevitably changed to a chain store taste or a somewhat superficial flavor. Despite that, I made sure to visit when they opened in Tokyo (Ikebukuro store, Marunouchi store) to confirm the taste, and I also visited the Hakata Station store when I went back home. As other reviewers have pointed out, the period when Fukuoka City was heated up by inbound tourism seemed to be the most drastic in terms of change. Personally, I don't think the taste is "bad" as it suits my preference, but it clearly changed. This time, the company-related event was a lot of fun, but we ended up at a rare "completely private room" type of bad izakaya party in Hakata, barely eating anything and on the way back, I suddenly thought of coming here. The interior of the restaurant has become quite clean. They mentioned that they renovated it in 2018, so I probably visited once before, but the night impression may be different. There is a sense of cleanliness, and it's a modern store like a ramen chain in Tokyo. The BGM is like Jonkara-bushi, so I guess it has a big influence on the store production. One thing that impressed me was the spacing between the seats at the counter we were guided to. It is exquisitely neither too wide nor too narrow. Maybe not many people are concerned about it anymore due to COVID, but personally, it's a big plus point. The ordered items are served in the order they were ordered. It may be just a coincidence, but the open kitchen staff seemed very dignified, or rather, very pompous (my apologies: it's just a figure of speech) as they were lifting the noodles, making me want to say, "Truly the main store!" My bowl was dramatically served, so I began to taste it dramatically. The soup, with a foamy appearance, turned out to be a very rich tonkotsu type with a strong bone marrow flavor! The seasoning was also quite strong with a hard-edged taste. Wow, this is completely different from before, and it's really delicious. If they continue with this taste, I think customers like me will come back for a different reason... What do the locals think?
