After a long time, I left work on time and the tailwind made my bike ride home a breeze. On days like this, it's definitely ramen time. The restaurant, usually full of cars in its private parking lot, had two bike parking spaces available. As I entered through the lantern-lit entrance, I was greeted warmly and smoothly guided to a table. A table for four was empty in the back, so I indulged and took it for myself. Despite being a popular spot, I was pleased to see that it wasn't a ticket system for ordering. It was my first visit, so I decided to go with the classic tonkotsu ramen. However, the beauty of the chicken white broth noodles caught my eye as it was listed as a separate menu item. Plus, you could even get a large serving. With a rumbling stomach, I also added some gyoza and fried rice to my order. The gyoza arrived first, followed by the fried rice, and then finally the ramen. The gyoza were small but perfectly browned with a crispy bottom and juicy meat inside. The fried rice was colorful and had a gentle flavor, making it very easy to eat. If refills were allowed, I could easily have eaten two servings. There was a jar of pickled ginger on the table, which I love, so I piled it on top of the fried rice. The ramen arrived shortly after in a large bowl, and it was a sight to behold. A white bowl with white soup, truly a beautiful creation. It was a robust tonkotsu ramen from a shop known for its hearty dishes, yet this one had a delicate and soft impression. The slightly runny egg mixed with the soup was incredibly delicious. The soup had a light yet deep umami flavor that I couldn't get enough of. The noodles were a translucent yellow color, smooth and slurpable. I couldn't believe it was a large serving because I just kept wanting more. The finely chopped white leeks and tender chicken pieces in the soup were also exquisitely tasty. I feel so lucky to have a delicious ramen shop nearby. The staff and atmosphere of the restaurant were also very pleasant. It feels like I'll have sweet dreams tonight. Bon appétit!

I visited this place for the first time thinking that being able to eat yakitori and ramen is the best! When I took a sip of the soup, it was rich in pork bone flavor and really delicious. I had dinner near Higashi-Hie Station in Hakata, and casually walked into a shop right outside the exit of the subway airport line. I ordered a ramen for 750 yen. It was a weekday past 7:30 PM, and there were several solo customers eating ramen while drinking. The noodles were firm. The ramen came out over the counter about 3 minutes after ordering. The rich tonkotsu soup stimulated my appetite. I enjoyed it with plenty of red pickled ginger on top. Even after leaving the shop, the smell of tonkotsu ramen stuck to my clothes, so be careful if you have plans afterward.

I visited craving for a rich pork bone ramen and ordered the simmered egg ramen. The soup was indeed rich, but surprisingly easy to eat. The noodles were thin and matched well with the soup. One station from the airport, right next to exit 4 of Higashi-Hie Station. A restaurant serving authentic Hakata-style tonkotsu ramen. However, it is a Hakata-style restaurant that can also be used as an izakaya, so I definitely want to try various dishes next time. This time at Keio Shinjuku. Limited edition Truffle-scented creamy white chicken broth ramen for 1,350 yen. As usual, payment is made in advance, and it's nice that you can serve yourself cold water. After a short wait, the ramen arrived - wow, there's more truffle than I expected! Let's dig in. First, the soup... It has a richness that you wouldn't expect from chicken broth. The aroma that gently passes through the nostrils is nice. And it says "foam style" so I thought it might be the trend of using a foam dispenser, but maybe it's a foam of pork bone broth. When boiling pork bones, this foam is created, and there are still few shops in Tokyo that show this craftsmanship, so I think many people may not know about it... Fish and pork bone broth have become popular, after all. Thanks to this foam, the soup is very smooth. The noodles are straight, flat noodles with a high water content. Custom-made by Keishi, a ramen shop in Kyushu. I think the default is very thin noodles, so maybe this is also custom-made. It's impressive that these thin noodles have this water content. It has a good firmness and lifts the soup well. The truffle slices are thicker and more abundant than I expected, with quite a presence. The flavored egg has a soft white and a runny yolk, allowing you to enjoy from fully cooked to half-cooked. The chicken chashu is tender and moist. The green onions were sliced, but I think white onions would go better. Next time, I would definitely like to try some skewers along with the tonkotsu ramen. Thank you for the meal!

The pork bone ramen, on the other hand, surprisingly had a light taste despite the pork aroma. However, today's broth was a bit too salty for my liking, so I couldn't finish it all. I arrived around 10:30 pm, so they were out of fried rice and gyoza, and I ended up ordering the flavored egg and char siu ramen! The soup was a foamy tonkotsu broth and it was delicious! The char siu was tender and juicy, maybe it was pork belly! The noodles were a bit thinner than typical tonkotsu ramen, but I liked them too! The pickled mustard greens were delicious. I visited around 12:30 on a Sunday and there were no other customers. I called ahead to let them know I had a baby stroller, and they started preparing a table for me when I arrived. I ordered ramen and when it arrived, I noticed that the foam on the soup was quite thick, even more than at my favorite ramen shop. At first, the soup had a strong smell, almost like a wild animal, and I regretted my choice. But as I continued to eat, the smell didn't bother me anymore and I couldn't stop slurping the soup. At the bottom of the bowl, there was a significant amount of bone powder, the most I've ever seen in a pork bone ramen. The spicy pickled mustard greens were a must-try for any pickled mustard greens lover. Spiciness: ★★★★☆, Flavor: ★★★★☆, Texture: ★★★★☆, Compatibility with soup: ★★★★★. This is a ramen restaurant near Higashi-Hie Subway Station that I was curious about. I was lured in by the smell of tonkotsu when getting on the subway. Perhaps it's for COVID-19 measures, but the entrance is wide open. Inside, there are lively voices typical of a ramen shop. It feels like daily life is gradually returning. I sat at the counter and ordered ramen with firm noodles and rice. After about 5 minutes of waiting, my bowl arrived. The smell of tonkotsu is irresistible. The bowl is filled with tonkotsu broth, chashu, wood ear mushrooms, and green onions as toppings. I took a sip of the soup. It's a creamy and rich tonkotsu flavor. Delicious! The thin noodles complement the soup well. I tried to resist, but ended up ordering an extra serving of noodles. Enjoy the rice with the spicy pickled vegetables on the table. Visited Ichisei Ichidai in Hakata, which I had been wanting to visit the most. Sat at the counter seat and ordered some drinks. Actually, a regular customer had contacted in advance and they had kept a bottle of Kuro Kirishima for me. So, I started with a Kuro Kirishima highball cheers. The appetizers here are great, so I ordered the "Chicken Skin in Sauce" and "Melt-in-your-mouth Pork Cartilage." The pork cartilage was especially amazing, as it was simmered to perfection and served with a sauce similar to gyoza sauce. It was rich in flavor and absolutely delicious. And it's priced in the 400 yen range. The drinks kept flowing. The owner came by at one point, and we had a fun ramen chat. The owner is friendly, easy to talk to, and a fun person. I then added the Beef Sagari Yaki, and ordered another round of pork cartilage with a laugh. After leisurely eating and drinking, I ordered the finishing ramen with firm noodles. The soup was a rich tonkotsu soup full of pork bone aroma. The well-cooked, foamy soup was the richest I've had in Hakata, and I was convinced that the pork bone scent drifting to the subway station was coming from here (laughs). It's full of umami but not too oily or salty, so you can enjoy the simple, rich tonkotsu soup. It's like the martial artist of the ramen world. The noodles were thin straight noodles, firm as I ordered, and they paired perfectly with the rich soup. The toppings were chashu, wood ear mushrooms, and green onions. The chashu was tender and juicy, and the wood ear mushrooms and green onions were a perfect match. Towards the end, I alternated between sipping on sweet potato shochu highball and the soup, almost finishing the soup completely. Then it was time to pay. Satisfied with the incredibly rich tonkotsu soup and amazing appetizers. Honestly, I think it's worth visiting this ramen shop just for the pork cartilage alone. It's no wonder that ramen enthusiasts come here. I even received a souvenir from the owner and I am truly grateful. Thank you very much for the meal.

There were two tables with one person sitting at a 4-person table, and there were 3 empty seats at the counter. The ramen was tonkotsu ramen, but it had a bitter taste at the end. There are a few parking spaces in front of the store, as well as a nearby trust parking lot, but... when trying to use a discount coupon received after payment, it was not accepted and had to be paid in full. I tried their new "Chicken White Broth Ramen." Let's start with the soup - delicious! The rich flavor of the chicken is well pronounced in the soup. According to information, it is made with chicken bones and pork bones, but there is no strong pork bone flavor, and it complements the chicken nicely. It is presumed that pork knuckles are used for the pork bones. To achieve such a rich flavor, a large amount of chicken bones must be used, showing the dedication of the owner. The noodles are slightly higher in water content, medium-thick noodles that go well with the soup and are delicious. The toppings included chicken ham, white negi (Japanese leeks), and a boiled egg, keeping it simple.
