During a regular lunchtime, I visited the "Hakata Daruma Sohonten" located about a 5-minute walk from Nakasu-Kawabata Station on the Fukuoka City Subway. Established in 1968, this is an extremely popular and well-known restaurant in Fukuoka, frequented by celebrities and tourists alike. **Location** The restaurant is situated in a residential area just off a main street, housed in a slightly retro-looking building. When I arrived at 1:45 PM, there was a line of three people waiting. The interior of the restaurant has a lively atmosphere, with a concrete floor and a bright red counter with 5 seats, as well as wooden table seating for around 30 people. The energetic voices of the staff saying "Thank you very much!" could be heard echoing throughout the space. I was seated at the counter. **Menu** The restaurant operates on a food ticket system. In addition to ramen, they also offer a variety of izakaya-style dishes like vinegar motsu (offal) and seared chashu (roast pork). It seems like you could enjoy a drink and some snacks before finishing off with a bowl of ramen. This time, I ordered the Hakata Ramen for 780 yen, requesting the noodles to be cooked firm. It arrived in about 15 minutes (seems like they almost forgot about it!). The aroma of tonkotsu (pork bone) filled the air. I took a sip of the bubbly soup. Creamy! The rich tonkotsu flavor was condensed into a creamy soup, which was surprisingly creamy compared to its appearance. Delicious. The noodles were extremely thin and straight, with a firm texture. When you chew, you can taste a subtle wheat flavor. The noodles paired perfectly with the soup. I lifted them up skillfully. The chashu was made from pork belly, with a nice thickness to it. The more you chew, the more the meaty flavor oozes out. It also paired excellently with the soup. **Final Thoughts** I witnessed the essence of Hakata tonkotsu ramen. It was a well-balanced bowl of noodles. I believe this balance is the reason why it has been loved for so many years and is also used as a finishing touch after drinking. Thank you for the meal.

This is a ramen shop famous for its tonkotsu (pork bone broth) ramen. It is usually known as a place to visit after drinking, but today I stopped by for lunch. The chashu (sliced pork) portion is generous. I wish the tonkotsu had a bit more freshness, but it's still within an acceptable range. It might have been better if I had visited after drinking.

Second visit this week. I tend to stop by on days when I drink. It was still empty even after midnight. I added extra green onions for 100 yen to my ramen, and they really complemented the rich soup. The firm noodles were a good match. They are busy late into the night, but the turnover is quick so you can get in easily.

I finally visited the long-awaited Hakata Daruma main store. Despite the evening hour, the place was crowded with customers. The parking lot is located nearby. Inside the store, I ordered the Tsukimi ramen using the ticket machine. The smell of tonkotsu broth was strong inside the store. At that moment, I could feel the history and was looking forward to the ramen. The first sip of the soup was warm and had a rich tonkotsu flavor. At first, I thought it might be too strong, but by the end, I had almost finished the whole bowl of soup. It was a completely different experience from making ramen at home. The egg added a mild touch to the broth, and the pickled ginger gave a final touch to the flavor. It was so good that I might get addicted to it. I'm glad I came.

I always end up coming here seeking the consistency of the tonkotsu ramen. I don't visit other shops because of it. The ramen costs 800 yen, extra noodles are 150 yen, and a highball is 400 yen. I visited on a holiday after 10 pm, and the garlic and pickled ginger that are usually on the table were not there. When I asked for them, they generously served them in a small dish. The ramen has a unique richness with thin noodles in a tonkotsu soup. The rich soup pairs well with the green onions and chashu.

I used to be really into Daruma ramen about 20 years ago, but I haven't been going because I always lose my appetite when I see the long lines. However, when I went around 4 pm, I was able to get in without waiting. I had forgotten how delicious Daruma's ramen is! It was a long time since I had such an impressive tonkotsu ramen!

It had been a while since I last visited this famous restaurant, so I decided to stop by again. The Char Siu Wonton Ramen was priced at ¥1200 and the Fried Rice at ¥600, which reflected the quality of the dishes. The ramen was served in a traditional bowl and may have looked small, but it was actually quite filling with plenty of noodles, char siu, and wontons. The rich pork bone broth was traditional and satisfyingly heavy and salty. The fried rice also had the same delicious flavor as the ramen soup, making it a great choice to accompany the meal. Despite the long absence, the food was still delicious!

Highball for 400 yen, 5 gyoza for 300 yen, ramen for 800 yen, extra noodle for 150 yen. I ordered the noodles extra firm and they got it right. The place was really crowded, which can sometimes affect the taste, but today it was fine. The combination of rich tonkotsu ramen and highball was excellent.

I arrived at the restaurant at 11:30 on Sunday, taking a taxi near Akasaka Station. The driver also likes the ramen here and visits once a week. I had high expectations. I arrived around 11:25, before the opening, and there were about 10 people waiting. After the opening, the wait doubled, so it seems like there will be quite a wait, so it's better to come before opening if you're short on time. The ramen has extremely thin noodles! I've never had noodles this thin before, but they are delicious as they soak up the soup. The soup looks very thick like a cappuccino, but when you taste it, it's a clean and refreshing tonkotsu broth. This taste was worth coming all the way to Hakata for, as it's a unique flavor that is hard to find in the Kanto region. The fried rice is also delicious. A half portion of fried rice is just right. I ordered an extra serving of noodles for the ramen. The gyoza was smaller than I expected, but the skin is thin and tasty. I didn't like the light taste of the Nagahama-style gyoza, so I'm glad I came to this restaurant.

Later moved to Watanabe Street and rebranded as "Hidetan," along with expanding chains in Tokyo and other locations, "Daruma" has become a prominent figure in the Hakata ramen scene with its rich and flavorful ramen that has garnered a strong following. Believed to have played a significant role in the Hakata ramen world, "Daruma" is related to the "Hatchan" in Yakuin and Dazaifu. The recent trend of "foamy-style" ramen in Hakata, where pork fat foam covers the soup, was originally a specialty of "Daruma." Enjoyed a delicious bowl with a rich history. Thank you for the meal.

Visited on a Sunday night after a year! No waiting in line!! Ordered the Tsukimi Ramen with fried rice!! The ramen had a strong pork bone flavor with a creamy taste, incredibly delicious!! Just as impressive as it was a year ago!! This rich pork bone ramen is still my favorite here!! It didn't disappoint, such deliciousness! Mixing the egg with the noodles is the best way to eat it! The power of the yolk is incredible! If you're going to eat here, I recommend the Tsukimi ramen! And the fried rice here is incredibly tasty too!! Light and flavorful seasoning, a deliciousness that makes you want to eat it regularly! Many celebrity autographs here, if you mention Fukuoka, just having their pork bone ramen is perfect! Arrived in Fukuoka and took a taxi directly from the airport. Ordered a simple ramen and highball. The soup was not completely white, but had a slightly brown color and a strong meaty aroma. However, the flavor was perfectly balanced. The noodles were very thin and coated well with the soup, creating another perfect balance. It seemed like both the noodles and the soup had been carefully refined.

I couldn't resist slurping up the full bowl of soup decorated with bubbles until I could see the sunken chashu. I was tempted to finish it all, but the thin noodles slid down my throat easily, and I savored the perfectly thick slices of chashu. The seared chashu and gyoza as standalone dishes are also enticing. I will definitely be back! I appreciate the lively atmosphere of the restaurant, where you can feel the staff's thoughtfulness.

I stopped by after a drinking party. Even though it was past midnight, it was crowded. The drunk customers were making a lot of noise, but I sat at the counter and ordered ramen and a highball. I ordered the noodles firm, but they were really stretchy and soft, which was disappointing.

Late night in Fukuoka city. My companion suggested getting ramen, so we decided to head over to a famous old shop near Watanabe Street. Despite the late hour, there was a line. We were seated shortly after though. We bought our tickets from the machine - my companion got the ramen with egg, while I opted for the one with wonton. My companion also bought some beer, which seemed to be from Maruef. The walls were covered with signatures of famous people, although I didn't recognize many of them. The ramen arrived - thin noodles in a creamy tonkotsu broth. My companion particularly enjoyed the wonton. I suggested swapping bowls, but they declined. I wasn't sure if I could finish my bowl as I was already quite full, but it surprisingly went down smoothly. Good things, like good food, find a way in. Overall, it was a satisfying end to our first day in Hakata.

Fourth stop on the Fukuoka expedition ✈️ Founded in 2000, the headquarters of the famous Hakata Daruma Group known nationwide! The mud-colored tonkotsu soup is covered with fine bubbles, with a sweet seasoning and a rich bone texture that asserts itself. The authentic scent enhances the deliciousness even more. The ultra-thin noodles have a crisp bite and excellent mouthfeel when combined with the soup. The chewy texture of the pork chashu, with its well-infused flavor, may be small but satisfaction is high.

Family trip. We chose a highly rated restaurant near the hotel where we could use the local revitalization vouchers. The original style is to buy food tickets, but we ordered and paid at the register because we used the vouchers. We ordered ramen, chashu ramen, and wonton ramen. The smell of the pork bone broth was so good, it really got us excited. The thin noodles were great - easy to eat. You can choose the firmness of the noodles, but we went with the standard. The soup was delicious, we almost finished it all. Rich and flavorful, it was the best. We also tried a bit of fried rice. We ordered a half portion for the kids, but it was surprisingly large - we couldn't believe it. We all laughed as we ate the kids' leftovers. The fried rice was moist and tasty. It was a fun memory from our trip. We traveled by ferry, and we were surprised to find that the restaurant's ramen kits were being sold at the shop. We are satisfied that we could enjoy the taste of a famous restaurant at the store.

The smell of tonkotsu ramen wafting outside the shop. When I tried it, it was rich and paired well with beer, without the strong smell I had imagined. The fresh raw egg on top was a nice touch. Breaking the raw egg halfway through and mixing it with the noodles allowed for a change in taste, which was delicious! After finishing the meal, I felt quite full. The walls were lined with autographs of celebrities, giving the impression that there were many regular customers. The shop was small and mostly had pairs of customers.

After having dinner in Nishi Nakasu on a regular night, I took a walk and my friend wanted to eat ramen because they were still hungry. I found a restaurant nearby that was open after 9 p.m., located down a narrow alley from Nakasu-Kawabata Station on the Nanakuma Line. Despite it being a weekday, there were about two groups of customers and the restaurant was about 70% full. Luckily, we were seated right away, but I imagine it would be quite crowded during lunchtime. This time, I had the chashu ramen without getting extra noodles. The rich and creamy tonkotsu soup with a unique aroma, paired with the thin noodles from Nagahama, was excellent. The thick chashu slices were flavorful and delicious when eaten with the soup. Since I didn't have plans afterwards, I indulged in adding one clove of garlic to my tonkotsu ramen at this late hour. Adding garlic to tonkotsu ramen at this time feels a bit sinful but it's amazing! Everyone, let's end the day by adding garlic to tonkotsu ramen and savoring that sense of indulgence!

After drinking quite a bit and getting pretty drunk, I felt like something was missing as I staggered home. I was drawn to a brightly lit place along the way and ended up going in. The thin noodles with rich soup were delicious. Of course, I also got an extra serving. My memory is fuzzy, but I remember that much. The next day, I regretted it, of course. What was I thinking? I want to live wisely, but I am foolish. I will probably do it again.
