Popular restaurant "Bishiya" in the fierce battleground of Ichijoji. I had ramen before and it was surprisingly delicious, but recently I saw a photo and thought "the tsukemen looks so good...". As a tsukemen lover, I couldn't resist and decided to revisit. Tsukemen (¥900) looks great! You can choose up to 300g of noodles, which is a great deal. First, the noodles. Delicious! Medium thick straight noodles with a chewy and strong elasticity. Rich aroma of wheat. It's just perfect... I think I also thought "the noodles are delicious" when I had ramen, but with tsukemen, the deliciousness of the noodles stands out even more. The dipping sauce is thick and rich with plenty of umami from pork bones and seafood. The sharpness of soy sauce is also well defined. It has a punch that doesn't lose to the strong noodles. The large chashu soaked in the dipping sauce. Finally, it comes with rice to finish. There is a hint of dashi in it, adding a roundness to the dipping sauce. Really, delicious tsukemen is even delicious when you make soup-wari. It was incredibly delicious! Among the many famous shops in Ichijoji, I think it can compete for the top spot in deliciousness alongside "Gokkei".

Ichijoji, second stop. Around 9 pm, choose a restaurant based on whether it's open or not. It's like heaven in an area full of ramen shops as rumored. Visited Bishiya. Many young people there, which made me nervous. I handed over my food ticket to the staff and asked if I could have half a portion of noodles, to which they confirmed with the kitchen and said it was possible if I wanted 100 grams. Thank you for your trouble! The ramen was like a house style, rich but not too heavy, and delicious! I wish it was even richer! The spinach and chashu toppings were also delicious! And please add the original garlic on the table! It was a new flavor for me, and I couldn't help but exclaim how tasty it was. I wanted to have rice as well... If only I were 10 years younger, I would have gone to another shop. The staff in Kyoto are all uniformly kind and it's amazing. I want to live here. I wanted to visit one more shop, but my stomach was about to burst, so sadly ended my food tour. Asked Google for the route to the hotel (Shijo Takakura) and it was a 40-minute bus ride and a 1-hour 30-minute walk... I decided to walk considering my stomach and body shape. Encountered a man sitting in the middle of the road with a wide open stance (like a tough guy) and was so scared that I almost screamed, but managed to return home safely. (You often encounter people with a strong presence in Kansai.) The impact of that man was so strong that even walking in the dark near the Kyoto Imperial Palace didn't scare me.

I arrived at the restaurant after noon. It was a Saturday, but there was no line, so I was able to enter right away. I think the balance of soup, noodles, chashu, and other toppings was excellent. It's a really high-level shop in a competitive ramen area.

I tried ramen, maze-soba, and special tsukemen. The tsukemen was the most delicious. The soup was smooth, mild yet rich, and really hit the spot. The noodles could have had a bit more fragrance and flavor, but overall it was great. The ramen was also delicious, a classic style. Adding garlic really changes the flavor. I'm not a fan of maze-soba personally. The brown part had a buttery aroma, which was a bit disappointing. If I go again, I'd like to try the spicy ramen next time. ☺️

Various famous ramen shops along the Ramen Street in Ichijoji, Kyoto. This time, I chose "Bishiya". Their "Tonkotsu Shoyu Ramen" is priced at ¥900 for a medium size (200g). The ramen arrived after a short wait, and the soup was a perfect blend of pork bone and chicken broth, a flavor that I couldn't help but slurp up. The soup had a lingering taste that I enjoyed. The broth had a slightly thick consistency, just right, and paired well with the medium-thick straight noodles. The thick slices of pork shoulder were tender and had a light flavor. Spinach, wood ear mushrooms, green onions, and seaweed rounded out the toppings. Is it called "house style" when these ingredients are included? Finally, I added a bit of special garlic to the soup. It added more richness to the soup and enhanced the savory taste. Be careful not to add too much. I look forward to trying their tsukemen next time.

Today, I went on a ramen tour to Ichijoji in Kyoto and decided to try the highly recommended "Bishiya" that I had heard about before. I was in the mood for something rich and unusual. The location is right on Higashioji Street, which is like a ramen lover's paradise. In the middle of this ramen street, I found "Bishiya". Upon opening the door, the strong smell of pork bone broth hit me. I visited at a time when it wasn't too crowded, so I was able to enter without waiting. I quickly purchased the "Tonkotsu Shoyu Ramen" from the ticket machine and received my bowl 8 minutes later. Soup: The soup is made from a blend of chicken and pork bones. It had a "home-style" look with seaweed and spinach. The soup was carefully simmered for a whole day using a large amount of carefully selected domestic pork bones and chicken carcasses. It was finished with a sharp soy sauce flavor that wasn't overpowering. Upon taking a sip, I could taste the soy sauce flavor quite well, but it didn't dominate. Contrary to the strong smell of the shop, the soup had a rich pork bone umami without any unpleasant odor. It had a slightly thick and rich texture, but surprisingly, it was easy to drink and I found myself wanting to gulp it down. It was smooth, gentle, and mild. The recommended garlic added towards the end definitely enhanced the umami by 2-3 times! It transformed the soup into something even more irresistible. Noodles: The noodles were homemade medium-thick straight noodles made from 100% domestic wheat. They were chewy and had a smooth texture that went well with the soup. Slurping them up was a delight, and they complemented the soup perfectly. Chashu: The chashu was pork shoulder loin chashu, thickly sliced and well-seasoned. It covered the bowl generously, offering a satisfying chewiness and overflowing with flavor. It was juicy and packed with flavor. Overall: Despite its rich appearance, this ramen was mild and easy to eat. It was full of umami and delicious until the last bite. The kitchen was visible, and even during business hours, the pork bones were being boiled in large pots with the chefs vigorously stirring. It was really impressive. Once again, visiting Ichijoji, a fierce ramen battleground for the second time, I was amazed by the high level of the restaurants there. It's truly an exciting place, and I definitely want to come back for more.

After a long time, I went on an expedition to Ichijoji! This time, the second stop was at Bishiya. I ordered the Tonkotsu Shoyu Ramen. The soup had a strong richness of pork bone with medium-thick noodles. It kind of resembles a house ramen, but it's not topped with a lot of chicken oil, so it might be a different type. The thick and large chashu topping provided a satisfying chew. It goes really well with rice. The crunchy kikurage mushrooms served on the side complemented the pork bone soy sauce well. Isshinji in Sakyo-ku, Kyoto City. When it comes to family-style ramen in this area, this is the first shop that comes to mind. It faces Higashioji Street, so it's easy to find. Nearby, there are many ramen shops such as Akihide, Kyokutei, Arajin, Takayasu, Tentei, and Ikedaya. Right in the middle of Isshinji. Actually, it's been 10 years since I last visited Bishiya, this is my second time. I've almost forgotten... When you enter, there's a ticket machine first. I ordered the Ramen Regular for 850 yen and a boiled egg for 100 yen. There are many counter seats inside. There are also table seats. Water is self-service. The ramen is served. It's a rich-looking family-style ramen with a strong color and visible oil. When I tried the soup, it had a good balance of saltiness and oiliness, giving a strong and rich taste. But it's just right, not too overpowering, balancing on the edge. It's delicious. I remember a family-style ramen shop where the service spirit was so strong that it became extremely rich. For those who like it rich, it might be a delight, but I might prefer the lower limit of Bishiya. The noodles are straight noodles with a firm texture. If they are too well-coated with soup, it can become too rich, so maybe they are aiming for just the right amount. It reminded me once again of the charm of family-style ramen. I'm happy to have found a delicious shop.

I had tonkotsu shoyu ramen. The noodles were medium thickness and had a chewy texture. The soup was a bit thick. I didn't find it very delicious and didn't drink much of the soup. I didn't feel like going back again, but my friend next to me said it was delicious.

On the second day of the Kyoto expedition, I visited Bishiya in Ichijoji. While it may not fit the typical definition of a "house-style ramen" since it only had one sheet of nori, the visual aspect aside, it was a popular spot with a line forming just 10 minutes after opening at 11:30 am. The broth lacked a strong presence, but the tonkotsu soup had decent richness and depth, making for a well-balanced and tasty bowl overall. Thank you for the meal!

In Kyoto, my favorite ramen shop! I arrived around 6:30 pm and there were about 2 empty seats so I easily got in. I ordered the "Tonkotsu Shoyu Chashu Ramen" in regular size from the ticket machine and it arrived in about 5 minutes! The ramen had a generous serving of rare chashu with a nice pink color. The slightly thick tonkotsu shoyu soup was mild and easy to drink, rich in tonkotsu flavor but not too strong. The thick straight noodles had a chewy texture and a strong wheat flavor, as always, delicious! The chashu with a lot of lean meat was full of pork flavor. The house toppings of wood ear mushrooms, spinach, and nori were also plentiful. Adding grated garlic halfway through significantly increased the flavor! I recommend adding garlic. Whenever I eat here, I'm always completely satisfied with the quality! Thank you for the delicious ramen. Tonkotsu Shoyu Chashu Ramen regular size 1050 yen.

I'm planning to visit ramen shops along the Ramen Street in Ichijoji while I'm in Kyoto! Today, after work, I went with my colleague. Without listening to my colleague's recommendation that the tsukemen is the best here, I ordered the tonkotsu shoyu ramen set with fried chicken and rice because I wanted warm ramen. The noodles were medium-thick straight wheat noodles with a chewy texture that was new to me. The balance with the rich soup was also good! It's recommended to add plenty of garlic from the table. The garlic-infused ramen is incredibly delicious! Yes, delicious!

Bishiya Set with Small Ramen and Karaage - 950 yen Today I had some time, so I went on an expedition to Ichijoji! I came to Bishiya, which caught my attention last time when I went to Kyokutei! It was around 12:30 on a weekday, no waiting outside, and there were about 4 customers inside the restaurant. I passed by Kyokutei, where there were 3 people waiting outside. I wonder if Fridays are not too busy for lunchtime here! It's a ticket system. The ramen is Tonkotsu Shoyu Ramen for 750 yen, but I wanted to have Karaage or rice, so I ordered the set. The ramen arrived in about 5-6 minutes, followed by the Karaage. They didn't ask for any preferences specifically. The restaurant doesn't really advertise itself as a "home-style ramen" place, but the default ramen was pretty close to home-style ramen, so I was looking forward to it. The Tonkotsu Shoyu soup was delicious with a slightly thick texture! The toppings included a sheet of seaweed, a large slice of chashu, green onions, and spinach. The noodles were slightly thick straight noodles. I wished they had a bit more chewiness, but they were still tasty. About halfway through eating the ramen, I added the special garlic from the table, and it definitely increased the deliciousness by about 20% - no, 50%! It's a mix of minced garlic and various spices, which really enhances the flavor of the ramen! It feels like this dish is complete with this garlic! Lastly, I enjoyed the juicy Karaage and the cabbage with refreshing dressing. Despite ordering a small ramen set, the portion was more than I expected, and I was very satisfied! I forgot to take a photo last time, so I revisited the restaurant. I ordered the pork bone soy sauce ramen with fried chicken set for 1350 yen. It's still not really to my liking. The price is also set on the higher side. There are always customers coming in, so I think it's just a matter of personal preference. It's not bad.

13th review. Tonkotsu shoyu ramen for 850 yen. A popular house style ramen place in Ichijoji with always a long line for some reason. I told my friend that the tsukemen was delicious. It's a matter of personal preference around here. Mostly young people lining up. The taste is as I've mentioned before. Once you get used to it, it might be quite tasty. The turnover rate seems slow with mainly university students chatting until they leave. If that's the policy of the shop, then there's nothing we can do about it. If you specifically come to Ichijoji for house style ramen, then it might be worth it. Eating before the noodles get soggy is considered good manners towards the chef, but that rule doesn't apply here. No rules for lining up, and it might not be recommended for those who can't stand people talking throughout. This place is limited to those who personally love house style ramen. If you really want to try it, then go ahead. By the way, someone who shares gourmet information about Kyoto clearly states that it's not house style, but I can't tell the difference. Probably for people from Kanto, it might be different from house style? They are so particular and only talk from a Tokyo perspective.

I visited Bishiya around 8pm on a regular weekday. Although I have been to Ichijoji many times, this was my first visit to Bishiya. I debated between the tsukemen and the tonkotsu shoyu ramen (¥850), but since it was my first time, I ordered the tonkotsu shoyu ramen with firm noodles. There is an acrylic board like a curtain between the counter and the kitchen, and alcohol disinfectant is provided at each seat. There is also an acrylic board between the counter seats, which is reassuring. The ramen arrived in about 5 minutes. I didn't do any research beforehand, but I could tell it was a house blend from the toppings of spinach and seaweed. The soup was slightly thick and very mellow. It is a blend of fish and pork bone shoyu, but there is no fishy smell at all, and it is creamy! At first, I thought it was a bit strong, but when mixed with the thick noodles, it was just right and very delicious. The chashu was thick pork shoulder. The flavor of the meat was solid, and there was a moderate amount of fat, making it exquisite. I always hesitate about when to eat the seaweed, I wonder how everyone else does it... This time, I was served the seaweed along with the garlic on the table in the middle of the meal. This garlic was seriously delicious! It had a greenish hue, so I wonder if it was mixed with green onions... I highly recommend adding it! The soup is perfect for rice, but either because it's thick or strong, I was so full! My friend's set with 3 pieces of fried chicken was delicious with a sauce reminiscent of oil-drizzled chicken. Next time, I will try the tsukemen. Thank you for the meal.

I had the Tonkotsu Shoyu Ramen, which features a delicious broth made from pork bones and soy sauce, paired with soft wavy noodles. The rare chashu pork adds a satisfying touch. My companion had the Tsukemen, a hefty 300-gram serving. The noodles have a great texture, and the soup is thick and addictively tasty. Truly a must-visit spot on the ramen scene!
