This buffet is not only known for its high quality cuisine, but also for its seasonal fairs, making it a popular name when it comes to "Tokyo hotel buffets." It is frequently featured on TV and magazines, often being compared to The Terrace/Westin Hotel Tokyo as one of the top hotel buffets in Tokyo. The buffet emphasizes a sense of "live cooking" with chefs cutting roast dishes, cooking grilled dishes in front of you, and baking stone oven pizzas right before your eyes. Additionally, they hold limited edition fairs with seasonal concepts, offering regional dishes from Japan and around the world. With over 100 dishes available, it is known for being a challenging buffet to conquer. The restaurant has a luxurious and open atmosphere with a large atrium and one glass wall, providing a warm and elegant ambiance that showcases the cuisine. The lighting is in warm tones that complement the dishes, and the decor of the chairs and tables is of high quality, allowing for a relaxed dining experience. With 185 seats and an ample number of floor staff and chefs, the buffet stations are well distributed throughout the spacious restaurant, making it less prone to common buffet issues like food shortages and long lines. Even on a Saturday night when I visited, the "Ikura all-you-can-eat" corner was slightly crowded right after the buffet started, but it quickly settled down. Moreover, the meat dishes and pizza corner were set up in different locations, so there was almost no waiting time for dishes. Every winter to early spring, the Cascade Cafe hosts the "Hokkaido Dinner Buffet," which I visited for the 5 pm session. The seating begins about 10 minutes before the buffet starts. The line forms on the side of the passageway at the entrance of the Cascade Cafe, opposite the water object, along the partition from the concierge counter where a notebook PC is placed.
