I made a reservation via DM on Instagram and received a quick reply even though I sent the message late at night. The next day, I was informed that my seat was secured. I arrived at 5:00, and initially there were a few empty seats, so I wondered if I could have come without a reservation. However, by 6:00, the restaurant was full. Customers who did not have a reservation were turned away. I ordered a drink and grilled skewers, with the waitress asking for the number of skewers in advance as they take time to cook. The cabbage appetizer was served, and the waitress generously gave refills. The skewers mostly had onions in between and were delicious for only 120 yen each. The grilled skewers were served one by one. The chicken skin skewer is a must-try with its crispy texture. The chicken meat skewer is tender and appealing to everyone. The pork belly and beef tongue skewers were also popular choices. The grilled chicken heart, cartilage, and gizzard were all tasty options. The grilled beef tongue skewer was a standout. The crispy bell pepper and seared cod roe with mayonnaise were excellent. The three egg-filled shishamo skewers were delicious. The grilled chicken tenderloin with wasabi soy sauce was a favorite. When I asked for the bill, I was served a warm soup that was flavorful yet not too salty. I couldn't forget the taste of that soup. As I left, I received a complimentary fried chicken skin snack. Despite the busy atmosphere, the service was very attentive. I would love to visit again.

The skin was incredibly delicious!! We ordered 50 skewers for 5 people but it wasn't enough because we couldn't stop eating. The other yakitori was also so delicious that we were impressed. The restaurant was constantly busy with customers, so it's better to make a reservation before going.

I had been lectured by my partner, who is from Hakata, about the differences between "Tokyo yakitori" and "Kyushu yakitori," so I decided to see if my perspective on chicken skin would change. Although I don't usually enjoy chicken skin, I made a reservation at Kawaya, a popular restaurant my partner frequented, to try their yakitori. We arrived at 8:30 pm on a Sunday night, and the restaurant was packed, confirming that reservations are essential. The lively atmosphere of the casual izakaya was enjoyable. Following my partner's advice, we ordered 30 pieces of chicken skin and pork belly yakitori. In addition, we also ordered vinegar tripe and refreshing cold tomatoes. The prices were reasonable overall. Surprisingly, I had no trouble finishing the 30 pieces of chicken skin. The crispy chicken skin was delicious, and each piece disappeared quickly. I usually don't like the slightly chewy texture of yakitori chicken skin, but I found the Hakata chicken skin to be quite enjoyable, even delicious. As my partner had mentioned, people from Kyushu tend to only eat chicken skin and pork belly when they go for yakitori, and this was indeed the case. I could have easily eaten 10 pieces on my own. It was a delightful meal. I recommend making a reservation if you plan to visit on a weekend, as the restaurant gets very busy.

It's been 20 years since I last visited Kawayasan. The quality of their leather is still unmatched, just as I remembered. The taste is something you have to experience for yourself. Thank you for maintaining the same level of excellence for 20 years. The way the staff skillfully prepare the food is truly impressive craftsmanship!

Visited with local friends. It's a shop specializing in grilled chicken skin. When asked "how many?" along with our drinks, it felt like a true specialty shop! The chicken skin had a dark color, but surprisingly had a light and refreshing taste, not too sweet or salty. It was crispy and delicious, perfect even after eating ramen. The crunchiness and aroma from being grilled made it very enjoyable. Thank you for the meal.

Introduced by an acquaintance, I made a reservation. It was the middle day of a 3-day weekend and around 7:30 pm it was fully booked. Around 9:00 pm, a few seats became available. The restaurant is small with a few counter seats and tables. The specialty grilled skewers are a must-order, with at least 5 skewers per person. You can eat as many as you want! The grilled chicken was also delicious. The rice ball was a salted musubi, so it would have been even better with some spicy cod roe... (from a tourist's perspective)

I had heard that the "kawa" (crispy chicken skin) loved in Hakata was different from what I imagined, but after actually trying it, I was completely convinced. This restaurant is impressive with a counter piled high with kawa. You first order a bunch of kawa, and the staff, with their perfect banter, supported me, an inexperienced traveler. Of course, the other dishes and skewers were delicious too. And the prices were great! It was a joy to drink and eat this well. I definitely want to go back when I visit Hakata again!

After eating motsunabe, we decided to spontaneously visit a second restaurant without a reservation. Luckily, we only had to wait for about 10 minutes before being seated. We ordered the famous grilled cow's tripe, three pieces each, and chicken tataki. The flavor was so delicious that we couldn't believe it was just skin. We were already full, but we finished everything in no time!

Roll the skin of chicken necks around a skewer and grill them slowly with a sweet and savory sauce. This is the unique "kawa-kushi" dish in Fukuoka. At Kawaya, after a meticulous process that includes marinating for six days and grilling 7-8 times, the skewers are displayed at the front of the grill area. The display is impressive, and even if you decide not to order kawa, the attentive staff in Hakata will ask you how many kawa skewers you want without giving you a chance to refuse. The kawa is quite chewy, but it has three cuts for easy tearing into bite-sized pieces. The sauce is just sweet enough, with a rich umami flavor from long aging, making it easy to eat as many skewers as you want. I ordered 10 skewers, but I felt full afterwards. It's recommended to start with 3-5 skewers, enjoy other skewers, and then add more later.

I made a reservation well in advance but ended up with a small table near the entrance. I had agreed to this when I made the reservation! There seemed to be some larger tables available later on, but I decided to stay at my small table in case a group came in and needed it. I had imagined the specialty dish to be sweet and savory, but it turned out to be on the salty side. The atmosphere in the restaurant was lively. The service was quick!

It was my first time at this restaurant! The skin was delicious! However, the customer service from the staff was nonsensical. The skin has a salty flavor, so after eating a few pieces, I felt like I wanted some sauce. When I asked the staff if they had any sauce that would go well with it, they replied saying that the skin already has sauce on it and that the sauce from Kyushu is not that sweet. I didn't get the answer I was looking for, so I asked again if they had sauce for the skin. The staff then responded with an intimidating attitude, saying, "Did you even listen to what I said?" It instantly created an uncomfortable atmosphere. I will definitely not be going back to this restaurant again. It's not about the taste, there are more important things to consider first.

Two weeks ago, I made a reservation to visit the restaurant on Saturday. The sign outside the store is a bit hard to read, but I managed to enter at 6:30 PM. The seats were fully booked due to reservations, with 7 counter seats and around 5 tables for 4 people each. It seems that you can't enter without a reservation. The restaurant is always busy, with staff constantly answering the phone. The manager was a bit cold, and tried to push the "chicken skin" menu item to customers who didn't order it, saying "Our chicken skin is famous here." The prices were quite cheap, with chicken skin priced at 120 yen per piece, chicken fat priced at 120 yen per piece, pork belly priced at 120 yen per piece, and chicken thigh meat priced at 120 yen per piece. The dishes were well-prepared, with crispy skin and just the right amount of fat. The meal ended with chicken soup, which was delicious. In total, we had 4 alcoholic drinks and the bill came to 4,930 yen. It was quite affordable.

I made a reservation in advance for a restaurant I had wanted to visit for a while. We arrived at 5:00 pm with a reservation for 2 people. We were seated at the counter right in front of the grilling area. The restaurant quickly filled up and they were turning away customers without reservations. It's definitely a must to make a reservation. We started with a toast with draft beer. For our second round, we tried the ginger shochu with soda, which was delicious and I recommend it. We ordered chicken skin, chicken meat, chicken belly, chicken gizzard, and chicken tail for 120 yen each. We also ordered skirt for 200 yen, Wiener sausages (2 pieces per plate) for 300 yen, and minced chicken (2 pieces per plate) for 300 yen. We also had cold tomatoes for 200 yen. We each had two drinks, and we ended up eating a total of 12 chicken skins and ordering more chicken meat, which came to a total of 6420 yen including tax. It was a great value for the quality and quantity of food we got. The chicken skin was crispy and not greasy, so we ended up eating a lot of it. The chicken meat was tender and juicy, with the onion in between adding a nice touch. It's no wonder this place is popular with its good value and delicious food. I would love to go back again. Thank you for the meal.

Thank you for viewing. Fukuoka food tour, second stop! We made a reservation and visited "Kawaya" at 5:00 PM when they opened. It was almost full as soon as they opened. The skewers, like the one in the photo, were 120 yen each. There were many skewers in the 120 yen series, and the two of us ate about twenty skewers. The "skin skewer" had a crispy texture and was really delicious! I heard that it takes about 6 days to prepare. Other customers also ordered around five skewers each. The onion between the "chicken skewers" was a nice accent and tasted delicious. Thank you for the meal. I will definitely visit again.

My first experience at Kawaya was at the shop in Kego, but after 10 years, I visited the one in Yakuin in Hakata. Seeing the mountain of ingredients at the counter, I felt the greatness of their preparation while enjoying the crispy and juicy flavors with an old friend. Many seniors say they want to be transferred to Hakata at least once in their life. Some even say they want to settle down there.

I wanted to eat yakitori, so I finally made it to Kawaya because I wanted to eat chicken skin! It's a popular restaurant that has been full since it opened! There were even people waiting outside. I'm glad I made a reservation. I was seated at the counter. First, I ordered a draft beer and 10 chicken skins. At first, I thought 10 might be too many, but I ended up eating them all (laughs). The chicken skin was so delicious! I was impressed by how tasty it was. The yakitori was also delicious. Thank you for the meal.

Gourmet Feasting Journey Part 12 Fukuoka Trip 2023 night visit. The location is about a 5-minute walk from Yakuin Station, along Shirogane-dori Line. If you go right after the 5 pm opening, it's already packed. They were turning away people without reservations, so definitely a popular spot. If you want to visit this place, I think an early reservation is a must. Inside the restaurant, it's quite narrow. And on the counter, there is a huge amount of "kawa" (chicken skin), which is the specialty of this place. It's impressive! Here are my impressions of what I ate: 1. Chicken Skin (132 yen per piece): A must-try at this place. When you bite into it, you get a crispy and juicy texture, and you can really taste the richness of the fat. You can definitely keep eating these endlessly! It's like a sophisticated adult snack! I had 4 pieces initially, then added 2 more, so a total of 6 pieces! 2. Vinegar Offal (330 yen): Fresh with no strange flavors. The ginger gives it a refreshing taste. 3. Chicken Tenderloin (385 yen): It's actually chicken tenderloin, but it's nicely shaped to look like a fish sausage. When you eat it with the wasabi soy sauce on top, the meat is surprisingly juicy! The cooking method is wonderful. The sharp saltiness of the wasabi soy sauce pairs well with the refreshing meat and tastes delicious! 4. Gizzard (132 yen per piece, minimum order of 5 pieces): This one really tastes like offal! The flavor, including the distinctive taste, is solid, so it might be good for those who like the taste of offal. If you don't like offal, you definitely won't be able to eat this. 5. Skirt (220 yen): Another offal dish, so it has a similar smell to the gizzard, but the meatiness is solid and delicious. If you're not a fan of meat with a strong taste, you might want to avoid it, but if you're okay with that, it's recommended. 6. Minced Meat (330 yen): It's essentially a meatball, but when you eat it, it's fluffy and juicy! Amazing. Perfectly cooked! Delicious. This is a must-order item! Overall, I would say it's a restaurant that gives you good value for your money, like a yakitori place. They also have an outlet in Oimachi, Tokyo, but the prices there are about 1.5 times higher, so you can really feel the Hakata prices here! The specialty chicken skin is absolutely amazing! The other dishes were good too, like the chicken tenderloin and minced meat, but what really elevates this restaurant to a top spot is definitely the "kawa"! It's like a school where the former professional baseball player "Tadano Kazuto" was from, leading them to the Koshien tournament with an ERA of 0 in all games except one, or leading the traditionally weak Rikkyo University to victory in the Big Six University Baseball League after the University of Tokyo... He's just a manga protagonist, isn't he? Well, if there were no scandals... Anyway, if you're a person who goes to a yakitori place to eat "kawa", this place is definitely a hit!

I wanted to try all of the famous specialties in Hakata during my Kyushu trip, and the gyoza here is extremely well-known so I was determined to go no matter what. It was difficult to get a reservation on a Friday night as everywhere was crowded, so I made a reservation while having a drink at the first place. It wasn't incredibly delicious, but the taste was addictive.

Every Wednesday is an early leave day, so I left the office in Hakata at 5:30 pm. For dinner tonight, I decided to visit Kawaya, a renowned yakitori restaurant that has been named one of the top 100 yakitori restaurants three times in the past! I arrived after 6 pm, but the counter was already full! There was a constant stream of walk-in customers, mainly tourists from overseas, but they were all being turned away as the reservations were full. The phone was ringing non-stop with inquiries. It's incredibly popular! I ordered a total of 15 skewers in 6 different varieties: 8 chicken skin, 2 chicken meat, 2 chicken belly, 1 chicken liver, 1 garlic, and 1 chicken thigh. First up was the famous chicken skin! It was neatly stacked, prepped for grilling, with a large amount of chicken skin. It's a visual feast that makes you want to eat as many as you can! The chicken skin here is prepared by wrapping a long piece of meat around the skewer, focusing on the "part of the throat with less fat." It was my first time experiencing this type of chicken skin. It was crispy on the outside, chewy on the inside, and had a great texture. Once it cools down, it becomes chewy. The soy sauce-based sauce was well-infused and delicious! It's addictive and you could eat as many as you want! Next was the chicken belly! Each skewer had a large amount of fatty meat, with a rich flavor and sweetness. They generously sprinkled salt before grilling, and the salt was delicious! It paired well with the fatty meat. This is another skewer that you could eat as many as you want! Then came the garlic! It was grilled whole, and you peel the skin off while eating, which is a unique style. The garlic aroma was subtle, and the texture was fluffy, reminiscent of potatoes! The chicken meat used had a moderate amount of fat, similar to the chicken belly! Just like the belly, the collaboration with salt was delicious! The skin was chewy, and the chicken meat was surprisingly tender. It was quite rich for chicken meat! This was my first time trying such a rich chicken meat. Lastly, the chicken thigh! It had less fat and mainly lean meat! It had a texture similar to liver, light and easy to eat. I enjoyed three glasses of draft beer in about an hour and left the restaurant feeling slightly tipsy! I have three consecutive days of going to the office starting tomorrow, but I feel motivated to work hard again! Finally, I would like to share my thoughts from the counter. 13 years ago, when I was working at the number one pachinko chain in Kyushu, the store manager used to tell me a phrase often. "Don't neglect customer service even when it's busy." No matter how busy it gets, it's just temporary, and once the busy period passes, you can always catch up on the work you couldn't do at that time. For customers, every moment they spend at the store is important. While I'm not criticizing the restaurant, I couldn't help but feel "what a waste" when I saw a specific individual. It may have deviated from the essence of this review, but it made me realize the importance of being conscious of this in my future life. Thank you for the meal!

Over the course of 6 days, the chicken skin is carefully prepared to condense its umami flavor, making it a famous specialty in Fukuoka. Established in 1999 as "Kawaya Shirogane-ten" by the late founder, Mitsuyuki Kyoya, the shop has been loved in Hakata. With the belief that "although it may be inferior to Grade A, it is a first-class item among Grade B items," the founder aimed to spread "Kawaya's chicken skin" as a representative gourmet food in Fukuoka. Currently, the business is run by the second generation, Iyuu Kyoya, operating 4 directly managed stores (Kawaya Shirogane-ten, Kawaya Hakata Gion-ten, Kawaya Kego-ten, Kawaya Otemon-ten). Additionally, there are franchise stores (14 stores) nationwide, including Tokyo (3 stores), Aichi (6 stores), Osaka (1 store), Kyoto (1 store), Shizuoka (1 store), Hokkaido (2 stores). The ordered menu includes the signature chicken skin, as well as liver, gizzard, cartilage, neck meat, skirt meat, and pig trotters. The famous chicken skin is aged for 6 days to achieve a crispy exterior and a juicy, tender texture inside, with a fragrant aroma. The two secret sauces that have been continuously replenished since the establishment are used, enhancing the umami flavor as you chew. While the yakitori is delicious, it is highly recommended to indulge in the chicken skin when visiting this place! [Order] - Chicken skin 5 pieces 120 yen each × 5 → Specialty, a lean part at the base of the throat. - Liver 120 yen - Gizzard 120 yen - Cartilage 120 yen - Neck meat 120 yen - Skirt meat 200 yen - Pig trotters 350 yen
