This is my favorite motsunabe (tripe hot pot) restaurant. The atmosphere is calm and the food is quite delicious. I always make a reservation for a private room. On this day, I visited with my parents and wife, a total of 4 people. Personally, I prefer soy sauce-based motsunabe, but this restaurant is popular for its miso flavor, so we ordered both types.
- Miso motsunabe: The grated garlic packs a punch, it's bold and delicious. It's easy to understand and incredibly tasty. The richness of the tripe, the mellow miso, and the punch of garlic all harmonize well. Wonderful!
- Soy sauce motsunabe: The richness of the broth, the umami of soy sauce, and the sweetness make it very gentle and easy to eat. You can directly taste the deliciousness of the vegetables and tripe. The sliced garlic here is a nice touch, allowing you to enjoy the different flavors by occasionally biting into it.
- Vinegar motsu: One Fujita's vinegar motsu is undoubtedly No. 1. The thinly sliced tripe has a great texture. It goes well with shochu. You can eat as much as you want!
For the finale, we had the classic champon. Anything other than champon is sacrilege. We enjoyed the softened noodles soaked in the broth in one go. Ahhh, it was delicious. I really love this restaurant.

I ordered a course meal for around 6,000 yen. First, the atmosphere inside the restaurant is nice. It's pleasantly cool and has the unique smell of Japanese cuisine. The appetizers were delicious - mentaiko, beef tendon, and thick fried tofu. The horse sashimi in the course was also tasty. And of course, the motsunabe (tripe hot pot) was incredibly delicious.

I went on a business trip to Fukuoka and after traveling between Kitakyushu City and Fukuoka City, I wanted to have a meal that was Fukuoka-like. I called a restaurant and they had one seat available, so I went in. I had vinegar motsu and sesame miso kanpachi motsu nabe, both quite rich. The motsu was satisfyingly filling. I even had champon noodles at the end. I was so full that even on the plane, I could still smell the motsu nabe. Thank you for the delicious meal.

I came to Hakata for a friend's wedding and wanted to have dinner in Hakata before heading back home. My friend recommended this place for motsunabe, so we arrived at 5 pm. The restaurant was already bustling with customers. My best friend and I enjoyed the sesame marinated amberjack, mentaiko, horse meat sashimi, and miso-flavored motsunabe. Everything was delicious. This is my first visit. I visited this restaurant because I wanted to try the local specialties of motsunabe and basashi during my trip to Fukuoka. I had not eaten motsunabe since a previous trip to Fukuoka where the motsu was too strong, but I wanted to overcome that this time. I ordered miso motsunabe and the quality of the motsu was good, so I was able to enjoy it. I also ordered some mochi as a finishing touch, but I could only eat 2 out of the 3 pieces that came (lol). Eating the motsu with yuzu pepper made it a bit lighter and easier to eat, even for someone like me who is not a fan of oiliness.

I visited the motsunabe restaurant Ittou Honten in the Tenjin area of Fukuoka, with the nearest station being Tenjin Minami Station! It is a very popular restaurant, so reservations are essential. I visited a long-established motsunabe restaurant on Tenjin Nishi-dori. It's located about a 5-minute walk from Nishitetsu Fukuoka Station. The interior of the restaurant is spacious and bright, with many young staff members creating a lively atmosphere. We were served vinegar motsu and grilled spicy edamame as appetizers. They were easy to eat and refreshing, living up to their reputation as the number one appetizer. The motsunabe had a rich appearance but was surprisingly light and easy to eat, and the soup was delicious. We finished our meal with champon and enjoyed it until the very end. I definitely want to visit this popular long-standing restaurant again.

During my trip to Fukuoka, I always visit Maedaya, but since it was the end of the year, I couldn't make a reservation even a month in advance... Many other restaurants were also closed for the year-end, so I decided to try Ichifu for the first time since it had high ratings. Although I was a little late for my reservation, the phone service was good, and they were very welcoming when I arrived. First, I had a cold beer which was delicious even though it was cold outside!!! The appetizer included two types of vinegar miso-like dishes which we shared between two people. We also ordered horse sashimi, chicken skin with ponzu sauce, and the main dish, motsunabe. We were torn between soy sauce and miso, but we followed the restaurant's recommendation and chose miso. The taste was good, but the miso was too strong and we got tired of it quickly... Next time, I want to try the soy sauce!!! But the motsu in its hometown is just amazing, with large pieces that are soft and chewy! It was over in no time since there was a two-hour time limit.

I walked to Itosan One-Pot at the BuLaLa Building in Imazumi, led by my son. I thought Imazumi would have elegant buildings because it's next to a daimyo area. Next to love hotels on both sides. Amazing location. Inside the Itosan store on the 6th floor, it was a different world. We were led to a separate room with a warm wooden interior. I wanted to try it out, made a reservation, and headed to the restaurant "Itto." The sign outside had artificial wisteria flowers, which I understand the concept but personally found it a bit outdated. I couldn't help but think that it would be better to have no decorations at all or something more sophisticated. The staff at the restaurant were efficient and friendly, but I noticed some small details that bothered me, like the dirty filter in the room's ventilation fan. The motsu nabe (tripe hot pot) was delicious! However, the appetizer was a bit dry, and I felt there was a difference in quality compared to other motsu nabe restaurants. The highlight of the GW Fukuoka expedition was Sayamaru's (HKT48 draft 3rd generation member Ayaka Baba) birthday celebration. It was Wednesday, but since it was a holiday, it ended at 7:30 pm and we went for dinner! I heard on the radio that the motsunabe at Itto-san's, recommended by former HKT48 graduate (Anzai) Kyoka, was delicious when she returned to Fukuoka. I called the restaurant and they said it was okay to come at 10 pm! The location is a bit hard to find - it's on the 6th floor of a building around the corner from a Family Mart. When it comes to motsunabe, many places require a minimum order for two people, but here you can order just for one person. I ordered the miso motsunabe for 1518 yen, which was recommended by Kyoka. It was quite a lot of motsu for one person, and I also added a champon for 385 yen. The rich miso flavor of the motsunabe seeped into the champon, making it delicious, but it made me thirsty so the refreshing sherbet after the meal was really tasty. By the time we left, the restaurant was not crowded, but it seems to be a popular spot.

This time, I had a year-end party with friends in one of the private rooms. We ordered a course meal consisting of two appetizers, simmered horse tendon, horse sashimi, motsunabe (offal hot pot), champon noodles as the finishing dish, and dessert. I had heard that the miso soup was rich and flavorful, but I wondered if it would be to my taste. When the soup started to run low before adding the noodles, I immediately separated some to prevent it from burning once the noodles were added. I have been going there for 10 years now. At that time, it wasn't as famous as it is now... The rooms are always like a loft or a two-person room next to the corridor. Although I am not a local, I always stop by when I go to Fukuoka. I have visited about 30 times (including the Tenjin and Ekimae stores). Most of the stores recommend miso flavor, but I prefer eating here with ponzu sauce, which is why I keep coming back. Of course, there are other delicious restaurants as well, but the relaxing atmosphere and the unscripted customer service of the staff suit me well. Due to the coronavirus pandemic, my favorite dishes like nagaimo wasabi pickles and ito salad were removed from the menu. I also work in the food industry, so I can feel the hardships of restaurant owners. Hang in there and keep up the good work despite the pandemic. I will visit again.
