Having lunch at Tamachi Shibaura-guchi. I decided to try a new place instead of sticking to my usual routine, so I headed to a Hiroshima-style okonomiyaki restaurant near Hanamasa. I arrived around 12:25 on a weekday. The restaurant was about half full. I was planning to have yakisoba, but when I looked at the menu... Oh? The meat okonomiyaki is actually cheaper than the yakisoba. So I decided to go with the okonomiyaki for now. The lunch options for yakiniku and okonomiyaki tend to leave a strong smell on your clothes and hair, which you might want to avoid before an important meeting. But since I didn't have any plans to meet anyone today, I thought, why not go for it? The seating is mostly tables, but there is also an L-shaped counter around the griddle, which seems more suitable for solo diners. However, the narrow depth and the placement of chairs even in the corner of the L-shape counter make it a bit uncomfortable. If they guide me to sit in the corner, I would definitely say, "Oh... I'll pass" and leave the restaurant haha. They serve water in a jug, which is nice. Despite my complaints about the narrow and uncomfortable seating, sitting in front of the griddle at an okonomiyaki restaurant is always a great spot! The noodles are not steamed noodles but fresh noodles. They boil the noodles as you order, so it takes a bit of time. They start by grilling the vegetables and meat while also cooking the crepe-like batter on the griddle. After crisping up the boiled noodles on the griddle and topping it with squid tempura, they crack an egg on top, add vegetable pieces, flip it over, and combine the top and bottom parts. It's entertaining to watch them work so efficiently. In about 7 minutes, they serve it to you on the griddle. Okonomiyaki is one of those dishes that never tastes bad no matter where you eat it, so it's hard to pinpoint the evaluation criteria (In Osaka-style okonomiyaki, there are criteria such as the texture of the batter and the richness of the broth, but since my experience with Hiroshima-style okonomiyaki is limited, I don't have any comparison points installed in my brain haha). But for now, it tastes good. What stands out is the crispy texture of the noodles that have been crisped up, the strong flavor of the fresh noodles, the sweetness of the vegetables and the aroma of fish powder, and the harmony of the sweet and salty Okonomiyaki sauce. In addition to cabbage, they also include a few black moyashi (bean sprouts), which adds a nice crunchy texture. When black moyashi is included, it gives off a vibe of Western Japan. The chewy texture created by the moisture from the cabbage is delicious. So, I enjoyed it quickly, paid with PayPay, and said thank you. The portion size wasn't huge, but I was satisfied with trying Hiroshima-style okonomiyaki after a long time. Since they use fresh noodles, I might expect the yakisoba to be good too?
