Ordered the Vegetable-packed Hot Noodles: 650 yen
I visited before work in search of Tanmen. I entered the restaurant and took a seat at a vacant table for two. I confirmed the "Vegetable-packed Hot Noodles" on the menu and placed my order verbally. A glass of water was brought to the table promptly. The table was equipped with soy sauce, vinegar, chili oil, and ground pepper for seasoning. After waiting for about 5 minutes, the dish was served. The noodles were thin, curly, and slightly yellow in color (presumably produced in-house). They were cooked just right, with a good texture and firmness. However, the eco-friendly metal chopsticks made it difficult to grip the noodles as they were slippery.
Ingredients: Pork, cabbage, bean sprouts, carrots, onions, komatsuna (Japanese mustard spinach), wood ear mushrooms
The pork and vegetables were stir-fried before being simmered in the soup. The pork was thinly sliced shoulder loin, with a slightly firm texture and no hint of unpleasant odor. The vegetables, such as cabbage, had a crisp texture, and the cabbage had very few core parts, making it easy to eat. The komatsuna had a slight hint of bitterness, adding to the overall flavor profile and vibrant green color. The wood ear mushrooms were pleasantly firm and chewy. The amount of vegetables, around 250g, seemed sufficient.
The soup was cloudy with a salty flavor, served at a fairly hot temperature. The broth was primarily made from chicken bones and aromatic vegetables, with added seasonings that didn't overpower the umami taste. The oil and salt levels were just right. I added some ground pepper from the table, which added a sharp spiciness and enhanced the overall flavor. I finished the dish, enjoying both the ingredients and noodles.
Overall, this chain restaurant's Tanmen was well-prepared and flavorful. The price for a single dish felt reasonable. There were more vegetables in this dish compared to the Hot Noodles I had at the Roppongi branch before. The restaurant had a clean atmosphere, and the service was average (mostly Japanese staff). I will definitely visit again. Thank you for the meal.
