This is a small bakery run by Lature. I visited for the first time on a cafe day, which is open irregularly. I love MONICA's bread, so I'm happy to see the cafe open.
- MONICA's Pizza Focaccia: Prosciutto from Livorno pork, mini tomatoes, water buffalo mozzarella. The texture is chewy and fluffy in the middle, even more so than the focaccia I usually buy at MONICA.
- Selebré Non-Alcohol Sparkling: Refreshing and slightly tea-like aftertaste.
- Fried Eggplant Soaked in Umeboshi and Katsuobushi: The texture of the fried eggplant is similar to melon, almost like a fruit. It was interesting to see it used in a dessert.
- Kochi Post-Fermented Tea: The aroma and flavor are similar to nori seaweed.
- Eel Roll: A new concept eel roll with a moist crepe, eel crumble, custard cream, and Yuzu sauce. The eel skin chips added a unique touch.
- Cold-Brewed Gyokuro: Brewed with cold water to preserve the umami.
- Choux Pastry with Peaches, Wood Strawberries, Jasmine Cream: A Saint-Honoré dessert with a perfect balance of flavors and textures.
- Miyazaki Stem-Roasted Tea: Fruity aroma similar to peaches.
- Tea Sweets: Terrine made with Yame tea, and Danish pastry with Shine Muscat grapes and almond cream.
- Herbal Tea: Refreshing with a lemongrass-like aroma.
Overall, the dessert course at LATURE during their first cafe day was a 200% satisfaction! The unique creations are exclusive to MONICA. They will have another cafe day before the end of the year, and I can't wait to go back. Their regular bread offerings are also delicious, so I recommend visiting on their open days.
