The spiciness and sweetness of the soup, the quality of the vegetables and the oil, were on a different level. Due to aging stomach, I can't visit as often as before, but couldn't resist the withdrawal symptoms and visited after a long time. The final stretch was quite tough... but it was a worthwhile bowl.

I finally made it to the original Ramen Sou that I've always wanted to visit. I took a bus ride to Kyoto and went there. I checked the business days and hours in advance before going, but when I arrived around 2pm and saw no line, I momentarily panicked thinking they might be closed. Thankfully, it was open and I went in. I purchased a meal ticket from the vending machine and sat at the counter. The water cup was made of stainless steel, which was great. I ordered the large ramen and after a while, a tough-looking staff member with a piercing asked if I wanted garlic. I asked for garlic, extra vegetables, extra fat, and spicy. The pork was incredibly delicious. Among all the Jiro-style ramen I've had, this was the best! It had a soy sauce spiciness but overall it was extremely delicious. The noodles were firm and chewy, making it a bowl that made me want to go back again.

First in line at 11:45 on Saturday. Ordered the Kosio-ae noodles for ¥1050 and added garlic mayo for ¥50. After 15 minutes, the first rotation. Asked for less garlic and extra vegetables. When the bowl arrived, it had a smell similar to canned tuna. The garlic mayo seemed to be a mix of garlic, mayo, and tuna. Although it's a mixed noodle dish, there was about 80% noodles and 20% soup. The flavor was quite strong but also had a creamy texture, making it less salty. Personally, I prefer this level of saltiness over the soy sauce-based ones. The noodles were firm and chewy, which I think is the best part of this place. The vegetables were crunchy with no unpleasant smell, especially the bean sprouts. The strong flavor may make it hard to eat it multiple times in a row. I tried the 200g portion for the first time, and it was just the right amount to feel satisfied. I finished it before getting tired of it, and I found myself wanting to eat it again. It might be a good option for those who enjoy changing the taste like in Jiro-style ramen.

In the temple town of Ichijoji, there is a ramen shop called Yume. I visited on a Thursday night because the nearby Ikedaya was closed, but luckily there was only one person ahead of me in line. I bought a ticket from the machine outside, which was made of plastic instead of paper. Since it was my first visit, I ordered a small ramen (200g) for 900 yen with garlic as a topping. The default ramen was already quite oily, with a rich and flavorful soup that was easy to enjoy. I waited in line for about 40 minutes from start to finish. Overall, it was a delicious meal.

Delicious, it's really delicious. The sweet and spicy soup base is exquisite, perfectly complementing the noodles and vegetables. The flavor of the pork is also excellent. Even though I'm starting to struggle with the regular size due to my age, I still managed to finish it in one go. The stability and quality are outstanding, don't you think? The nearby Ikedaya restaurant has reopened with strong competition, but I hope both places continue to thrive for a long time.

Couples may find it difficult to share as there are no partitions. The interior of the restaurant is clean for a Jiro-style ramen place, and the staff are friendly. The flavor started with a question, "Would you like garlic?" I asked for garlic, regular vegetables, and lots of fat. The ramen arrived with a generous amount of what seemed like fat, but turned out to be sea chicken. The extra fat was in a separate container, which was a nice touch. The thick noodles, rich fat, and hint of pepper aroma combined with the punchy flavor of the noodles made for a satisfying Jiro-style ramen experience. Other amenities include a restroom and self-service water.

I waited for about an hour in the cold, snowy weather to get a seat at the restaurant. I ordered the pork ramen with extra pork, raw egg, garlic, extra vegetables, fat, and spicy seasoning. The portion was good, but I found the amount of bean sprouts overwhelming. The pork was delicious and the noodles were easy to eat. However, I felt like the portion was a bit small. The soup had a good flavor, but it was lukewarm. Overall, it was worth waiting in the snow for this tasty meal.

The store opened 5 minutes ago. There are 5 people waiting outside and 8 people behind them. The store has 10 seats. I ordered a small ramen for 850 yen. The cup made of stainless steel is nice. I asked for no garlic and extra oil. The customer service is 10 times better than Ryunosakura. The noodles at Nen are a bit tough compared to Ryunosakura, making me doubt if they were cooked enough. However, when I tried them after a long time, they were still delicious. The soy sauce-based soup is outstanding, much better than before. The key seems to be the saltiness of the broth. I recommend adding extra caramel when going to other blue signboard shops. The pork in the ramen consists of pork belly and shoulder loin, which is a nice combination. However, the pork belly is too thin and the shoulder loin is tough and chewy with some blood vessels, making it hard to chew. The vegetables have no flavor. So, it's better to leave the vegetables until the end to let them soak up the soup and enhance the flavor. I discovered that it's recommended to add extra caramel at other shops, extra oil is not necessary, it's still delicious without garlic, and save the vegetables for last. Thin pork belly is not great.

At one point, I was worried that the store might be closing, but they reopened with a new manager! It's a joy to be able to talk about dreams again... The quality of the meat, fat, and soup has further improved since before. Lately, the line is so long that it's really tough to go if you can't make it right when they open. Even on rainy days, everyone waits in line for a long time (I totally understand the feeling!)

I ordered the salt mixed noodles, regular size (300g), with extra pork, two raw eggs, cheddar cheese, a little garlic, extra vegetables, extra broth, extra sauce, and extra spice. I waited for 10 people in line at 18:40. Unfortunately, the limited garlic mayonnaise topping was not available.

Located in a corner of Ichijoji Ramen Street, this shop is one of the top Jiro-style ramen shops in Ichijoji, alongside "Ramen Jiro" and "Ikedaya". Established in 2006, it is a pioneering presence in Kyoto's Jiro-style ramen inspired scene. It is also the first shop of the "Ramen Sho Group", known for slogans like "Carve history" and "Think globally". I visited around 6 pm on a weekday and was able to enter without waiting in line. I ordered the Ramen (¥800) with extra vegetables and garlic. The soup is not emulsified and is rich in animal-based umami. It's not too soy sauce-heavy and has a relatively mild saltiness. There is no unpleasant odor, so the taste is quite good compared to other Jiro-style ramens. The noodles are thick and chewy, typical of Jiro-style ramen. They have a strong bite and a solid wheat flavor. The chashu had lean meat with a good texture and juicy fatty parts. The lean meat had a satisfying chew and was delicious, but the fatty parts were a bit tough to chew through. Overall, it was quite delicious! Thank you for the meal!
