While waiting in line, the staff came to take our order. This time, we ordered the following: "Most popular dish in the shop - Special Salt Ramen ¥1,000," "Salt Wonton Noodles ¥950," "3 pieces of pan-fried dumplings ¥270," "Draft beer ¥600." It's great to be able to eat ramen from a super popular shop in Hakodate! It's fun to see popular shops from Hokkaido gathered together like this. Cheers with a Sapporo Classic draft beer!! (lol) Finally, the ramen and dumplings arrived! Oh!! The Hakodate-style salt ramen looks delicious! The wontons are generously topped, filling the bowl! The size of the dumplings is also large and looks delicious! First, I took a sip of the soup! "This is delicious!!" The clear soup is light yet has a rich flavor, making it extremely delicious! The straight noodles, specially ordered, go perfectly with the soup and are incredibly tasty! The wheat aroma and flavor are also distinct in the delicious noodles! The wontons, each filled with plenty of filling, have a smooth and delicious skin! The char siu and bamboo shoots are also flavorful and delicious! The memorable fried tofu has absorbed the flavorful soup and is incredibly tasty! The seasoned egg adds a different dimension to the taste and is enjoyable! The dumplings are delicious when eaten with vinegar and pepper, and they go perfectly with beer, making them incredibly tasty! When you lift up the seaweed and noodles together and slurp them, the taste of the sea is irresistibly delicious! I finished the soup in the bowl without leaving any, enjoying it to the last drop! At New Chitose Airport's Hokkaido Ramen Dojo, there is Ajisai. Their Ajisai Shio Ramen consists of medium-thick curly noodles in a clear soup. Ramen preferences can vary depending on the region or personal taste, but if I were told that I wouldn't be able to eat ramen for a while, I would choose this kind of ramen. It's light yet flavorful with a good balance of richness. It has a traditional ramen feel to it. It's been a few years since I last visited Ajisai, and it seems like the taste has changed slightly. I felt like the saltiness has become a bit more pronounced compared to before. Maybe there are slight variations in taste between different branches. Nevertheless, it's one of my favorite ramen shops.

(Probably) During my first visit, I planned to try Hokkaido Dashi Miso Ramen at a shop in Hokkaido Ramen Dojo at New Chitose Airport, but all the places were crowded during lunchtime. So, I decided to go to a Hakodate salt ramen shop that seemed relatively easy to get into. They had miso and shoyu ramen as well, but I went for their most popular dish, the Special Salt Ramen for 1,000 yen. At first, I thought the soup was a bit too salty, but it really warmed up my tired body. The Special Salt Ramen came with two large, tender slices of chashu, and although my expectations weren't too high, I was quite satisfied. I had tried Hakodate salt ramen in Ebisu not too long ago, but I prefer this one.

The popular shrimp ramen restaurant, Ichigen, had a long line, so I decided to go to a nearby Ajisai restaurant instead. The tables seemed quite empty, with a lot of space between them and even single diners were seated at two-person tables. It felt a bit inefficient compared to Ichigen's packed seating style. I ordered a draft beer and the number one dish, salt ramen, but the beer took a while to arrive. Despite there being 4.5 staff members, the service felt lackluster. However, the salt ramen was delicious! It had a light flavor and the chashu and egg were just right. It's a shame, but people eating at the airport probably want to eat quickly. I would recommend this restaurant for those who have time to spare and want to enjoy their meal at a leisurely pace.

I decided to eat something at New Chitose Airport on my way back, and since I hadn't tried salt ramen before, I chose this place. I had the special salt ramen and zangi. The zangi goes well with the special Sansho salt. The salt ramen was okay, but I remember there are more delicious salt ramen in Hakodate. Also, I didn't need the fried tofu sticks made to look like naruto. I wanted to have half salt ramen and half fried rice, but they were sold out. Just before heading back to New Chitose Airport, I finished shopping for souvenirs and headed to a ramen street inside the terminal. I decided to try a different flavor this time, so I went to a renowned shop known for their "salt" ramen. The soup had a clear broth made with scallops and kelp, seasoned with a salty sauce that was surprisingly rich in flavor. The thin curly noodles had a smooth texture and were cooked slightly soft, which complemented the soup well. The toppings included wheat gluten, pork chashu, half a boiled egg, narutomaki, bamboo shoots, chopped green onions, and daikon radish. I particularly enjoyed soaking the wheat gluten in the soup. I also added a shrimp oil pepper blend from the table, which added a subtle shrimp flavor and allowed me to enjoy a different taste halfway through. Hakodate Ramen, a famous restaurant that has a branch at New Chitose Airport's Ramen Dojo, had relatively few customers waiting in line compared to other competing ramen shops. This was not because the restaurant was unpopular, but rather because many tourists visiting the airport were seeking Sapporo-style miso ramen, which tends to attract larger crowds. The main branch of this restaurant in front of Goryokaku Park always has long lines. I was lucky to have a short wait and was able to enjoy their salt ramen and zangi (fried chicken), a Hokkaido specialty. It was my last meal where I could fully enjoy Hokkaido's famous dishes, and the mild flavor of the salt ramen with its light umami taste was excellent. I rarely have the opportunity to eat salt ramen, so I was very satisfied!

I have been to Hakodate and Sapporo many times, but surprisingly I had never tried any famous ramen shops there. So, on this trip, I decided to try "Ajisai" as soon as I arrived. When I got there, I thought "Wow, it's small!" but the bowl was deep so maybe the amount of noodles was normal? When I took a bite, the taste of the salty noodles hit me. Is it Nishiyama noodles? The taste was very simple... really just salty (laughs). It lacked richness. Maybe this is the taste that has been around for many years since the Showa era? It was different from the salty taste I remember from my childhood. I think it's a matter of personal preference, but I didn't feel like I wanted to eat it again. The ramen was deep, indeed.

After eating so much during my 3-night, 4-day trip, the gentle salt flavor was perfect for my tired stomach and was the best way to end my personal journey. Hokkaido was truly amazing.
