At a certain restaurant, I planned to take out and enjoy my meal at home, but I ended up waiting for almost 20 minutes. The orders of the dine-in customers and UBER drivers who arrived later were served before mine, which irritated me. During an online meeting, I was summoned without knowing the purpose, and when unrelated people started interacting, I couldn't help but wonder, "What is the point of this meeting?" I don't know if it's because I grew up in a downtown area, but I get annoyed when I don't know why I'm being kept waiting or how long I'll have to wait. So, instead of aiming for a rebuild in 2023 as planned, the newly opened METZ Mala Tang in the #NewShinbashiBuilding caught my attention. Originally opened on December 12, 2022, after a soba restaurant called Sagano closed down. I opted for the basic Mala Tang, choosing the Mushroom Mala Tang (900 yen) with the recommended level of spiciness (3rd level) for free, and added coriander (100 yen). The dish arrived in less than 5 minutes, looking visibly spicy. The noodles were slightly wide, translucent, and had a chewy texture, reminiscent of either glass noodles or vermicelli. The spicy and delicious soup provided a perfect mix of numbness and heat. As I continued eating, my heart raced, my pores opened, and I enjoyed a splendid sweating experience. The deliciousness of the mushrooms was delightful, with the aroma of shiitake and the crunchy texture and flavor of enoki mushrooms. The distinctive taste of coriander added a unique touch to the dish, allowing me to quickly enjoy a culinary experience that I wouldn't typically encounter as a Japanese person. While I'm unsure which will end first, the life of the New Shinbashi Building or my life as a salaryman, one thing is certain - a new delicious Mala Tang restaurant has been added to Shinbashi.
