The interior has only counter seats, and the menu consists of two types: Shoyu Back Fat Ramen and Shoyu Back Fat Special Ramen. I decided to try the special ramen. The bowl arrived in just a few minutes. The overall first impression was a refined visual with a soup that wasn't too rich in color, white back fat, chashu and menma arranged in the center, and chopped Kujo green onions sprinkled on top, with red chili pepper dancing on the white back fat. It was such an elegant presentation that it felt almost too beautiful to eat. The taste of the soup was very delicious and clear. I thought the back fat might be a bit heavy, but it was not overwhelming, just full of umami. The chopped green onions and scattered chili peppers on the back fat may have added an accent. The noodles were medium-thin straight noodles, and they paired well with the soup, making it a delicious combination. The chashu was also tasty. I visited without drinking alcohol and enjoyed the ramen, but I imagine if I had this ramen as a finishing dish after a bit of drinking, it would have tasted even better. The shop had only a counter with seating for 4 people, and the owner made the ramen right in front of us. On a regular day at 22:22, I managed to find the building and went downstairs, only to find a long line. I think I was around 13th in line, maybe during the first round of customers eating. After about 50 minutes, we were seated. They rotate groups of four, so each round lasts about 15 minutes. The menu is very simple, with just one option: pork fat soy sauce ramen. You can choose from limited, special, regular, large, or half size. I ordered the "Pork Fat Soy Sauce Ramen - Regular" for 800 yen. The ramen was served quickly, in about 3 minutes. It looked beautiful with plenty of green onions and a sprinkle of red pepper on top of thin curly noodles in a pork fat-based soy sauce broth. The soup was delicious, not too heavy despite the pork fat, and the soy sauce flavor was just right. The noodles were cooked perfectly, with a good firmness. The portion size was just right for me, not too much. I finished it all in no time. Besides the tasty ramen, the owner's personality really made the experience enjoyable. He was such a nice person! Is he Sadakazu-san? This place is sure to become popular in Gion, even though it's only open at night. They had stickers of past geishas all over the place. Laughed a lot.
