I visited a ramen shop that opened yesterday, May 10th, in Yotsuya Yonchome. The location is about a 7-minute walk from Shinjuku Gyoenmae Station on the Tokyo Metro Marunouchi Line, and about an 8-minute walk from Yotsuya Sanchome Station on the same line. The shop is open from 11:00 to 15:00 for now. I arrived around 14:15 and there were already 4-5 people lined up. The turnover seemed fast, and I waited for about 10 minutes. I entered the shop and there was a ticket vending machine near the entrance where you place your order. The menu currently only offers two types of shoyu ramen: Special Shoyu (1,400 yen) and Shoyu (1,000 yen). In the future, they may offer shio, niboshi, and limited edition ramen. They also have rice dishes such as Duck Breast Rice (500 yen), Pork Rice (450 yen), Menma Rice (400 yen), and just rice (200 yen). On the day I visited, the Duck Rice was sold out all day, and during my visit, the Special Shoyu did not come with duck chashu, instead, it had 3 slices of pork chashu. I ordered the Special Shoyu (1,400 yen) and was seated at the counter, which has 8 seats. I waited for about 5-6 minutes before my Special Shoyu arrived. The appearance of the shoyu soup was beautiful, with a good amount of oil giving it a nice sheen. The Special Shoyu came with 3 slices of pork chashu (normally duck) and 2 wontons, as well as a seasoned egg. The pork chashu looked delicious. The noodles were custom-made thin straight noodles. The taste was elegant, with a shoyu soup that had a chicken umami flavor and a slightly unique taste reminiscent of duck. There was also a hint of seafood, making it delicious and refined. The pork chashu was tender and the fat was moist and flavorful. The seasoned egg was soft and had a nice gooey texture. The wontons complemented the soup well and were tasty. The noodles were exceptional, with a great texture that matched the soup perfectly. It was delicious. I will definitely visit again and try the shio and niboshi ramen next time.

This is a new restaurant located between Shinjuku Sanchome and Gyoen. There was no wait at 12:30 on a weekday. There are reviews mentioning the chef's background at Shibazaki-tei, so I was expecting a strong dried fish flavor, but I ordered the special salt ramen. The noodles were thin and neatly arranged, topped with scallops and other trendy ingredients. I had imagined a salt ramen with a strong dried fish flavor like Shibazaki-tei, so I was a bit disappointed. The presentation was nice, but I didn't find anything particularly special about the wonton, chashu, egg, or soup. I regret not choosing the soy sauce or dried fish ramen route.

This time, I visited "RAMEN MATSUI" located between Shinjuku Gyoen and Yotsuya-Sanchome based on reviews from Mairevi and other websites. The shop has been open for only six months, but it is always crowded with lines. I arrived on a Sunday at 10:10, and by 11:00, the shop was full with a 50-minute wait. The shop has a clean and elegant atmosphere, and the owner, Mr. Matsui, even thanked us for waiting in line. The ramen I ordered was the special soy sauce ramen, which had a rich and flavorful broth made with various high-quality ingredients. The noodles were made of whole wheat flour, giving them a unique texture that complemented the soup well. The toppings, including duck breast, pork slices, and wontons, were all generously portioned and delicious. Overall, it was a great dining experience at RAMEN MATSUI.

2023/9 Ramen "RAMEN MATSUI"✨✨ The owner of this restaurant used to be the manager of Shibazaki Tei Ume Gaoka branch. Since its opening, it has always been full of customers. It's very popular, isn't it? The restaurant opened in May 2023 and is located a 5-minute walk from Tokyo Metro Shinjuku Gyoenmae Station. Unfortunately, I was the 9th in line and had to wait 20 minutes to get in. The interior of the restaurant has a stylish atmosphere, not like a typical ramen shop, and the chairs are comfortable to sit on (lol). Now, let's see how the food tastes (*´∇`)ノ ■ Ajitama Ramen 1,150 yen Since I'm not a fan of ramen with lots of toppings, I kept it simple and added an ajitama (flavored boiled egg). When the ramen was brought to me... it was a beautiful bowl of ramen. This looks promising. 【Noodles】 The straight, medium-thin noodles from Kyoto Menya Tae are a special order made with Hokkaido wheat flour. Now, let's taste it... "Crunchy" Oh, this texture is irresistible, isn't it? It goes perfectly well with the soup. 【Soup】 It's a clear soy sauce flavor. It combines Kyoto-produced Tanba black chicken broth, Rausu kombu, Lake Shinji clams, and pure rice wine. The soup, made with only carefully selected natural ingredients and taking time, is... "Delicious", "The depth of flavor is amazing." This is a taste that you'll get hooked on. 【Toppings】 Chashu pork, komatsuna (Japanese mustard spinach), white negi (leeks), shinachiku (bamboo shoots), ajitama. The chashu pork uses the shoulder loin of Hokkaido's Shigen pork. RAMEN MATSUI's special soy sauce ramen was everything I had hoped for. It was delicious. The noodles were flavorful, the soft and moist seasoned egg was perfect, and the balance of flavors in the duck and pork chashu and wontons was superb. I felt that the soup had a strong umami balance compared to the volume of flavors. They also had a light and refreshing shoyu ramen, which I think suits my taste better. Thank you for the wonderful meal. I will definitely be back.

First visit. Under the cloudy sky that seems about to rain, a cheerful middle-aged person is happily walking along. Coming from the Shinjuku area and following the navigation, I arrived at a residential building where the restaurant was not visible. Suddenly, a long line appeared in front of me on the Omotesando Nishi-dori street! It seems like a very popular shop, with about 10 people in line at 11:40, probably entering the third rotation? Surprisingly, the turnover rate seems good, and after about 30 minutes of waiting, guided by a female employee, I entered the shop. The line behind me grew to about 15 people (surprise). I bought a ticket for the "niboshi" ramen at the ticket machine, waited for about 5 minutes inside the shop, and then sat at the counter. As indicated by the sign outside, the kitchen had only two people, the husband and wife owners, with a female employee handling the front of the house. The stylish interior played Western pop music from YouTube, creating a calm and clean atmosphere. The counter was high, making it difficult to see the kitchen clearly... After about 5 minutes of absentmindedly gazing around, the ramen arrived. I couldn't help but be amazed at the beautiful presentation and the aroma of niboshi. The flavor, skillfully extracting the umami of the niboshi, was hard to describe as clear, but it was delicious. The low-water thin noodles were well coated with the soup, which had almost no strong taste, and had a firm texture and a distinct wheat aroma. I then drank the soup directly from the bowl, and the balance between the animal-based and dried ingredients was excellent, creating a wonderful flavor dominated by the niboshi. Thank you for the meal. With the evidence of the long line at this renowned shop in the Ueno area in less than half a year, I continued my walk!

First‼️ This May, a ramen restaurant opened that is part of the Shibazaki Tei lineage. The special ramen dish includes soy sauce ramen + rice, with default toppings of divine pork shoulder chashu, fully fermented menma, komatsuna, white negi, and a special addition of duck chashu (2 slices), 2 wontons, and seasoned egg. The visual presentation is reminiscent of Shibazaki Tei. Let's start by tasting the soup...❗️ It's delicious, with a comforting flavor typical of Shibazaki Tei. The ingredients are undeniably tasty. Overall, it's very delicious and satisfying, but... when compared to the Shibuya Nanachome Shokudo (part of the Shibazaki Tei lineage, a Michelin-acclaimed restaurant) that I usually eat at, it inevitably falls short in terms of value for money. At Shibuya Nanachome Shokudo, the special soy sauce ramen costs 950 yen. Honestly, when comparing the two, there's hardly a significant difference... The taste of the soup, noodles, and toppings are quite similar. This restaurant probably uses high-quality ingredients due to its brand, but the difference is not overwhelming. I have also visited Shibazaki Tei Tsutsujigaoka Honten, and even compared to that, it falls short in terms of value for money. Additionally, the height of the tables or the low chairs are a bit bothersome. It might be quite difficult for petite women to eat comfortably here.

Ramen Dangan Tokyo ① First Visit to a Popular New Restaurant This was my first visit to this new restaurant, and I was intrigued by their limited edition ramen. The noodles were thin and firm, with a smooth texture, and had a nice wheat flavor. The soup had a strong umami taste from the dried horse mackerel, with a hint of bitterness that was quite pleasant. The right amount of oiliness in the soup, combined with the perfect saltiness, made it easy to drink up every last drop. The two types of chashu were delicious, with the duck breast being tender and juicy, and the pork chashu bursting with flavor. The bamboo shoots had a nice crunch and a gentle flavor that complemented the broth well. The refreshing early red and kujo negi added a nice touch to the dish. The quality of the toppings and soup was exceptional, especially for a new restaurant. I am definitely interested in trying their soy sauce and salt ramen next time. First visit! I arrived just after the lunch peak on a weekday, so I was able to get in without waiting. The soy sauce ramen with seasoned egg was excellent. The appearance of the ramen was beautiful, and the noodles were like those from Chitose, with the soup clinging to them. Although a bit far from Shinjuku Gyoen Station, this area seems to be getting more ramen shops, making it a great place for ramen lovers.

In September 2023, I visited a ramen shop that originated from Shibasaki Tei, which used to be located near Shibasaki Station. The shop has expanded and gained many disciples in just 10 years, which was beyond my imagination back then. The young couple and female staff members provided excellent service. The chairs were comfortable, and they also offered a variety of drinks such as beer, wine, and sake. I ordered the signature dish "Special Ramen" which had a contemporary and well-presented appearance. The broth had a subtle amber color with a gentle shellfish flavor, and the noodles were perfectly cooked. The thick scallop add-on was a luxurious touch, and the chashu was tender and flavorful. The broth was made with shellfish stock and had a rich taste similar to a traditional Japanese broth. The noodles had a slight sweetness at first, which gradually melded with the broth's umami flavor. The chashu was made from slow-cooked pork shoulder slices, with a perfect balance of lean meat and marbled fat. The pink hue of the lean meat was visually appealing, and the fat melted in the mouth, releasing a delicious combination of flavors.

It's like an artistic masterpiece. RAMENMATSUI, which opened just this year. The casual interior looks like something out of a grand Tokyo mansion, with the owner dressed like a French chef creating artistic ramen. The taste was undeniably delicious. I've been disappointed by ramen that looks good but tastes bad lately, so I think I found a really good restaurant. However, it's already popular and there were quite a few people waiting in line when I went at a different time for lunch, with 8 people ahead of me. Waiting in line might be necessary.

Around 11:45, I went to the restaurant with my colleagues. There were about 7-8 people in line, so we decided that if the wait was too long, we would go to the curry restaurant next door. The counter had 8 seats, so I was a bit unsure if we would get in. But as one or two customers left, the turnover seemed good, so we decided to wait. After about 15 minutes, we were able to enter. During the wait, we chatted about the summer drama and time passed quickly. I wonder what will happen in the final episode of VIVANT! I'm already feeling withdrawal from VIVANT...what should I do... Simple soy sauce ramen was my choice. It cost 1000 yen. The atmosphere of the restaurant had a stylish Japanese feel, and it wouldn't be strange to see Japanese cuisine served there. It was very quiet with Western music playing. The owner and his wife had stylish and lovely manners. How about this visual! It's so beautiful. The clear soup was incredibly delicious. It had a good layer of oil, and the noodles were piping hot. There were some komatsuna greens and white negi as a nice touch. I'm very happy to have eaten such delicious ramen. One day, I went for a stroll in Shinjuku Gyoen. Despite it being after lunchtime, there were five groups waiting. I entered 15 minutes later and ordered the special soy sauce ramen. Mr. and Mrs. Matsui calmly prepared the ramen for me. It's not common to find a ramen shop that also sells sake and wine during lunchtime. The ramen was very delicious, but one small downside was that it would have been appreciated if the air conditioning was a bit stronger.

I visited around 12 o'clock on a Sunday afternoon. There were about 10 people in line, and I waited for about 40 minutes to enter. There were also times when there was no line, so I recommend going after 1 pm on Sundays. It's a lovely ramen shop run by a wonderful couple, and both the interior and the ramen were elegant! I had the Special Soy Sauce Ramen for 1,400 yen, which was very delicious and satisfying. The chashu was very tender, and the flavored egg was also to my liking. I will definitely visit again if I'm in the area.

Be careful that the ticket vending machine only accepts 1000 yen bills and coins in the early afternoon on Sundays. I ordered the special soy sauce ramen, which had a light yet rich soup and delicious duck chashu with a nice aroma. The interior of the restaurant was clean and I would love to visit again.

I bought the Summer Horse Mackerel Cold Shoyu Ramen (1,400 yen) at the ticket machine. The interior of the shop has a stylish and fashionable feel. Since it was the first round, it took a bit of time, but I received my bowl after about 20 minutes of entering the shop. The noodle texture was very beautiful. The soup had a light taste of dried sardines and soy sauce, making it very easy to drink. The noodles and soup matched perfectly, and the chashu was delicious. I was surprised by the large amount of bamboo shoots that came with it (they were delicious). Next time, I want to try ordering the salt ramen!

I went around 1 pm and there was a wait of about 10 people. The small counter-only shop had a relaxed atmosphere with plenty of seating. I don't usually eat salt ramen, but the soup was really delicious. It had dumplings with shiso leaves in it, so overall it was light and refreshing.

RAMEN MATUI Special Salt 1450 Shibazaki Tei's Flow Delicious Revisit Decision Located about a 6-minute walk from Shinjuku Gyoen Park, I visited around 3 p.m. and was able to enter without waiting as it was almost full. I was torn between salt or soy sauce but chose salt. The soup was light but delicious, and I almost finished it all. The interior of the restaurant was clean and the staff were lovely. It was just past 1 o'clock, and luckily there was no line so we were able to sit right away. I had been curious about this place after seeing famous chefs like the owner of a Japanese restaurant in Akasaka with a rating of 4.27 on Tabelog, and a Michelin-starred chef in Yoyogi praising the food on social media. I bought my meal ticket, sat on a soft chair, and within 5 minutes my food arrived. The presentation was beautiful and got me excited. I expected the soup to be light and Japanese-style based on the appearance, but it turned out to be a rich and flavorful broth with a deep chicken flavor at first, followed by the subtle taste of clams. It was truly delicious! The noodles were smooth and had a satisfying texture, different from what I had tried at Teigaku in Kyoto. The wonton was scooped up with a large ladle and when I tasted it with the soup, the silky skin and juicy filling made it incredibly tasty. I usually don't like rare pork, but the two types of pork in the soup were tender and delicious even after being heated in the broth. I want to eat it again already just thinking about it... The good places always get crowded quickly, so I want to eat as much as I can before I get tired of it! There were quite a few people eating rice dishes, so next time I want to try the combination of rice and soup. Thank you for the delicious meal!
