When you see delicious noodles, you just can't resist eating them!! So, I felt the urge and decided to visit Kotosoba Hakata for the first time! The interior of the restaurant has a nice soba izakaya atmosphere, and there is even a standing drinking corner which I definitely plan to visit next time! Looking at the menu, I wanted to try other dishes as well, but I decided to order the "Bukkake Neba-Toro Special (extra large)" ( ;´Д`). The daily speciality menu caught my attention as well, but then the soba arrived! The presentation was so refreshing! The salad seemed to have sunny lettuce and watercress. There were also wood ear mushrooms included. The natto portion seemed to be equivalent to about two packs. The egg yolk was big! Personally, I wish there were a bit more grated yam and chopped seaweed added. The soba noodles were barely visible among the toppings. Being 100% soba, the noodles had a light reddish-brown color. The soba broth in the small jug was ice-cold and the soy sauce aroma wasn't overpowering. It had a refreshing scent. Now, let's dig in! First, I slurped up the soba broth. It had a hint of sweetness and was more on the refreshing side. Despite the presence of grated yam, natto, wood ear mushrooms, and the thick texture, the flavors weren't too strong. The broth seemed to have a strong dashi flavor, possibly from bonito flakes or kelp. Next, I poured the broth over the noodles! The noodles had a good chewiness and elasticity. They were a bit sticky but not overpowering, creating a harmonious blend in the mouth. The broth wasn't too strong, which made the overall taste mellow. The presence of watercress and sunny lettuce added different textures, keeping the dish interesting. While I'm not certain, the soba noodles seemed to have varying thickness, creating a unique eating rhythm. I realized that I needed to eat the noodles separately! I ordered the extra-large portion, and despite that, the cold noodles were easy to eat quickly or slurp up! Even without wasabi, it tasted great. This summer has been unbearably hot, but this soba dish provided a refreshing and satisfying meal. It's still scorching hot, so if you're feeling low on appetite, I recommend heading to Kotosoba for the "Bukkake Neba-Toro Special" and replenishing your energy with a cool and delicious meal! The summer heat doesn't seem to be letting up, so before any strenuous work or important meetings, both men and women should eat a large portion, replenish their energy, and then tackle the tasks at hand!
