Top Quality Noodles (Nihonbashi) [Rich Dipping Noodles] ¥850 ★★★★★☆☆☆☆☆ "Asa*****kote" Soup: Pork bone, seafood / Noodles: Whole wheat thick straight noodles This is a new restaurant that opened on August 21st, and I visited on the opening day! The location is where Nagasaki Champon Okeidon used to be. Other noodle menu options include Special Rich Seafood Dipping Noodles Top Quality Noodles (¥980), Super Rich Tonkotsu (¥750), Special Super Rich Tonkotsu (¥980), White Tonkotsu (¥700), White Special Tonkotsu (¥950), Black Tonkotsu (¥790), Black Special Tonkotsu (¥1050), Tantanmen (¥850), Top Quality Noodles (Special Chicken Salt Ramen) (¥860), Sea Bream Salt Ramen (¥750), Hamaguri Dashi Salt Ramen (¥750), Light Salt Ramen (¥690). I ordered the default option, which seems to be this one. [Noodles] The noodles are whole wheat with a thick straight cut. You can choose from regular 350g, large 550g, or extra-large 700g (all at the same price), and I opted for the large portion this time. The noodles have a firm texture with a chewy bite and a strong elasticity. They have a rich wheat flavor with a hint of sweetness, making them delicious. [Dipping Sauce] The dipping sauce is based on pork bone with seafood broth and a moderate amount of oil, flavored with soy sauce. It has a thick and heavy texture with a strong acidity that doesn't taste very good. Additionally, the container is like a small dish for side dishes, making it difficult to hold, dip the noodles, and it cools quickly, making it inappropriate. I personally eat the noodles first, so it was okay for me, but for those who prefer to dip the noodles generously from the start, the amount of sauce may be insufficient. [Chashu] The chashu consists of two small slices of pork belly. They are cut to about 1cm thickness, with a tender and fatty texture. The seasoning is light, allowing the sweetness of the fat to come through, making it delicious. [Egg] The flavored egg was complimentary on the opening day but costs ¥100 thereafter. It was medium-boiled with a medium seasoning. The yolk had a dry and crumbly texture, which was not pleasant. [Other Ingredients] Other toppings include green onions, bamboo shoots, and fish powder. You can also customize the flavor with condiments like spicy pickled mustard greens, sesame seeds, pepper, shichimi, vinegar, and chili oil. [Interior] The restaurant has 6 counter seats, 4 tables for 4, and 1 table for 2, totaling 16 seats. The price of ¥850 for a bowl may feel a bit high, even though the noodles come in a free large portion. The owner seemed to have previously worked at Sanyomen Uehommachi High-Town store and has now opened this place. They seemed a bit unfamiliar with Japanese and communication was a bit difficult, but they gave a kind and gentle impression, so I hope they improve and become a good restaurant!
