I might be criticized by ramen enthusiasts for saying this, but in my opinion, ramen is "chuka soba" (Chinese-style noodles). When I was in elementary school, I used to follow my father to a ramen stall at night, where he would buy ramen in a bowl and I would watch the ramen being made by the vendor. Those were the days. The ramen from that time (often referred to as night-crying soba) is my starting point. That's why, for me, ramen is all about chicken broth soy sauce soup with thin noodles, chashu, menma, naruto, moyashi, negi... all made with great care and attention to detail.
Today's lunch was at a sushi restaurant. The restaurant is called "Naruto Sushi," located about a 2-minute walk from the Minami landmark Takashimaya along National Route 26. Despite being a sushi restaurant, their specialty is chuka soba. I ordered the "Chuka Soba Set." The chef prepared sushi right in front of me - the nigiri included snapper, tuna, and yellowtail, and there were two pieces each of thick roll and tekka maki.
After a while, the chuka soba arrived! The clear chicken broth soy sauce soup with chashu, menma, kamaboko, moyashi, and negi was delicious. It's definitely more like chuka soba than ramen. I was sitting at the counter, and behind me, an elegant older lady was trying to remember the name of her favorite actor, engaging the staff and even me in a lively discussion. It was not just a delicious meal, but also a heartwarming experience at this restaurant. Thank you very much. Itadakimasu!
