Every time I look forward to it, our family's favorite Western cuisine restaurant. It opens a little before the start time, and you settle the bill at the waiting bar, receive a ticket (with seat number and date written on it), feeling like you're at a concert venue. There is a menu on the back, and you wait for the venue entrance while enjoying a welcome drink. Non-alcoholic pairing costs 25,000 yen (alcohol is the same price). When you enter the restaurant hall, you are greeted with loud music and nostalgic lighting, making you feel rejuvenated. It can be a bit difficult to have a conversation due to the music. The chef's greeting helps to relax everyone's mood and the fun moments begin. 1. Toast with a ginger tonic and start eating. - The secret heart is yellow (yellow from this time?) It is a classic dish, but this time it is yellow. A heart coated with cocoa butter (the juice inside changes with the season). Take a bite, crunch, and the juice (banana, pineapple, yogurt) overflows from inside. 2. Secret beer, dorayaki, foie gras, natsumeyashi (smoked case included) The smoke is made with Noto firewood, and when you open it, it smells fragrant. Dorayaki is sandwiched with foie gras and natsumeyashi. The skin of dorayaki is also very delicious. - Noto horse mackerel, Ariake Ebisu nori (finger food) In the center of the horse mackerel that looks like a flower petal, there is an egg yolk, which is placed on the nori, making it look beautiful. I've never had horse mackerel like this before... I'm surprised at how much the horse mackerel changes with the combination and presentation with the egg yolk. 3. Cold-brewed green tea, anago, suppon, smac, ancient rice (imagining anago bowl) Anago cooked in a Western style (wine?) and ancient rice cooked in turtle soup, and a sauce of grated yam. A delicious anago bowl with no sense of incongruity. (Smac is a Turkish spice) Until here, dishes are served one after another, and the appetizer section is completed. - Foie gras French toast is a specialty that the chef himself grates foie gras on toast and talks to the guests. Always looking forward to this. 4. Grape juice for wine 5. Guava, lemon, gazpacho, salpicon, water octopus, turban shell, salt ponzu, passion fruit Imagining gazpacho, a completely different dish is brought out. The gazpacho is served with shaved ice, and there is a combination of salpicon... a fusion of Spanish seafood salad? A refreshing dish that goes well with seafood inside and has a summer-like taste. - Supreme consomme, bisque, sweet alyssum Here comes the long-awaited soup! A consomme and bisque with a two-layer structure (Paris-Soule style). Enjoy each flavor without mixing them. The best! 6. Hinata summer, smoked drink with a unique show. Break the balloon-like smoke and pour the Hinata summer juice inside. - Noto sweet sea bream, shiitake mushrooms, turnips, green onions Sweet sea bream steamed with scales, flavored with sake, and a sauce made with vegetable scraps, Ishiru, and ginger, thickened with kuzu. It looks Western, but has a delicious Japanese taste. The turnips are also gently cooked and really delicious. 7. Noto kettle-roasted stick tea, secret (cut of meat), Joselito Iberico pork, charcoal-fired Saikyo miso, Incarouge, Manjuto chili pepper There is a part called Secret, which is a rare and high-quality cut of meat. Marinated in Saikyo miso and grilled over charcoal, it has a moist Japanese flavor. The colorful and flavorful vegetables served with it are also good. - French bread and truffle butter I love the bread from Pandefilozof and the truffle butter, which has a presence like a dish. - Donabe rice, Noto sawara, sakura shrimp, Karasenzu red dashi with SECRETO's kombu floating on top. The pickles are marinated, fitting for SECRETO. I also love the Japanese-style rice to finish the meal. - Caramel popcorn -196°C liquid nitrogen show begins, making the atmosphere even more surreal. There was a birthday celebration that day, and everyone celebrated together. In a lively atmosphere, the final dessert is served. The freshly made ice cream is smooth, with a perfect sweetness and the aroma of popcorn. - Fresh mint tea Verbena and mint from the Noto Kouno farm. I rarely drink this at other restaurants.
