I had originally planned to visit the ramen shop "Kamo Chuka Soba Kaede" in Hachioji, where I had mistakenly shed tears last time, but by the time I finished my first stop at "Medika Soba Ginyu" in Hino, it was already past 2 PM, so I had to give up on my second stop once again. I suddenly remembered a famous shop that is open continuously only on weekends, so I drove to Fuchu. About 10 minutes later, I arrived at the shop only to find a line of over 20 people. Despite this, I made up my mind and joined the line.
Unfortunately, the famous "dipping soba" here was already sold out by 3 PM, which was a disappointment. Nevertheless, I ordered the "Chinese soba," which turned out to be unexpectedly a "pork bone soy sauce" flavor.
[Soup] The extremely rich tonkotsu soup with a soy sauce base. The surface of the soup is cloudy.
[Noodles] Homemade noodles, a medium-thin straight style typical of Chinese noodles.
[Ingredients] 3 slices of pork chashu, seaweed, green onions, and bamboo shoots.
[Impression] I had imagined a more orthodox style for Chinese soba, but what I got was a wild and bold pork bone soy sauce flavor. It was surprising, but as I tasted it, I was once again taken aback. Personally, when it comes to soy sauce tonkotsu, I reflexively associate it with the flavor of a home-style ramen, but this taste was more reminiscent of a Kansai-style tonkotsu soy sauce. In any case, it was incredibly rich. By the time I finished eating, any initial discomfort I felt had completely disappeared. As I muttered to myself, "Younger generations would definitely love this," I placed my empty bowl on the counter.
