This time, the restaurant is 【Ramen MAIKAGURA】. Located in Chitose Funabashi, it is a popular ramen shop with the concept of "wanting to create a bowl that can only be made in Japan." The location is to the right when walking straight west from Chitose Funabashi Station on Chitose Street. It's just before 7:00 pm. It seems like there is quite a line during the day, but it's more moderate at night. I was lucky to be able to enter without waiting, but there were a few people lining up afterwards. I ordered the "Chicken White Broth Ramen". MAIKAGURA offers a wide variety of ramen, and I have tried the Duck Chashu Shoyu, the default Shoyu, and the Truffle Chicken White Broth before. There are also other options such as Salt, Yuzu Salt, Yuzu Spicy, and Tsukemen. They even have seasonal limited-time menus, so it seems like I'll have to visit often. I sat down and soon enough, the Chicken White Broth Ramen arrived. It was a beautiful creamy color. It looked delicious. Let's dig in. The noodles are homemade thin straight noodles. They are slightly soft with a slippery texture that blends perfectly with the soup. I really liked the toppings. The chashu pork is well-seasoned and salty, complementing the soup nicely. The flavored egg has a hint of yuzu fragrance. Overall, it's a bowl that really showcases the quality of the ingredients, especially the aroma and umami were outstanding. Thank you for the meal. epilogue ~~~ Personally, I have a lot of fond memories of this place. I remember being so impressed by the ramen I had at MAIKAGURA, which I tried after a long day of moving house and feeling exhausted. The master created a "Chicken and Seafood Salt Ramen (not for sale)" as a fun experiment. The aroma of seafood combined with a chicken base, simmered with dried bonito, mackerel, and kelp, creates a well-balanced and incredibly delicious soup. I waited for about 30 minutes before entering the restaurant. It was tough to wait in the middle of summer for that long. But it's a popular place, so I couldn't help it. The yuzu salt ramen was light and delicious at first, but towards the end, it felt a bit too salty. Probably because the negi-tama rice was also on the salty side, so having double the saltiness might have affected it.

After two weeks, I visited "Maikagura" again. I arrived at 19:35 and there was no wait, lucky me! It's the last weekend of the season, so I had the salt tsukemen for the last time. They were almost sold out of noodles and rice, but luckily I made it in time. I started with the noodles soaked in chicken broth, which were so delicious that I ate too much too quickly. Then I tried dipping the noodles in the chicken broth, which was incredibly tasty. After eating more than half of the noodles, I asked for a flavor change and they transformed the salt dipping sauce into a creamy foam chicken broth. They even added truffle oil, which was also delicious. The roast pork rice was seasoned perfectly with salt, and since it was the last one, they gave me extra rice and a soft-boiled egg, which was a lucky bonus. I'm completely satisfied after having the delicious salt tsukemen three times this season. I hope to visit again someday.

It's about a 7-minute walk from Chitose Funabashi Station! When I arrived around 2 o'clock on a weekday, there were 6 people waiting in line. I waited for about 20 minutes before entering the restaurant. I ordered the Tamago Shoyu Ramen and Negi Tamago Meshi. My companion ordered the Chicken Paitan Ramen with White Truffle Oil, which had a rich and heavy soup. The Shoyu Ramen was light and delicious. I took a bite of the Chicken Paitan Ramen and it was completely different in taste! Thank you for the meal.

I don't necessarily prefer chicken broth, but the chicken broth I had here was incredibly delicious so I came back for more. It had been a while since I last had it, but it was still delicious. You can feel the care put into making the soup. However, it didn't have the same impact as the first time. I might try the soy sauce next time.

I had some business in Chitose Funabashi and it was getting late, so I decided to have dinner somewhere before heading back. I looked up nearby restaurants on Tabelog and found that "Ramen MAIKAGURA" had high ratings, so I decided to go there. When I arrived at 18:32, there was a line with a wait for 2 people. I waited in line and at 18:35, I was asked to buy a meal ticket first. I entered the restaurant, bought a ticket for "Soy Sauce Ramen 970 yen, Special Toppings on Separate Plate 600 yen," handed it to the staff, and waited outside again. At 18:38, it was my turn and I entered the restaurant, sat at the designated counter seat, and waited. At 18:46, the Soy Sauce Ramen arrived. The toppings included low-temperature cooked pork shoulder chashu, rare cut of thigh meat, bamboo shoots, green onions, and more. Then, the Special Toppings on Separate Plate arrived, including charcoal-grilled pork, duck breast, roast pork, roast beef, and pickles. I started by tasting the soup, which had a rich chicken flavor with a light soy sauce taste, it was delicious. The noodles were medium-thin straight noodles with a high water content, which paired well with the soup. The low-temperature cooked pork shoulder chashu was moist and flavorful, the thigh meat was packed with umami, and the bamboo shoots were a nice touch. The Special Toppings were all full of flavor, making me crave a beer. I finished the soup quickly and enjoyed the meal. Thank you for the feast tonight.

This restaurant had high ratings, so I was curious. I'm not a fan of creamy chicken broth, but the reviews were good so I decided to give it a try. I went to the popular ramen restaurant "Ramen MAIKAGURA", which has been selected as one of the top 100 ramen shops, located a 7-minute walk from Chitose Funabashi Station. I arrived at 14:30 just in time for lunch, and luckily I was able to enter without waiting in line. The restaurant has 7 counter seats, and there were 5 people dining. First, you purchase a meal ticket. I ordered the ⭐️ White Truffle Oil Scented Chicken Broth Ramen for 1,260 yen. The dish arrived in a few minutes. The scent of truffle was delightful. The soup was creamy like potage. The noodles were thin straight noodles made from 4 types of Hokkaido wheat: in-house blend, Super Haruyutaka, Kitanokaori, and Kitahonami. The texture, strength, aroma, elasticity, and bounce of the noodles are constantly adjusted and evolving to achieve the ideal noodle. The toppings included pork loin, egg, and Kujo negi. The ramen felt more like French cuisine, and it was delicious. The soup, in particular, was incredibly tasty.

I usually order the basic soy sauce or salt ramen on my first visit, but this time I decided to try the seasonal limited menu to test their skills. The prices are on the higher side for a ramen shop, but considering it's in Ginza and could pass for a Chinese restaurant menu, it seems fair. The presentation is similar to what you would expect from such a place. As for the taste, personally I would have preferred a bit more saltiness. The chili oil wasn't very spicy. The dish was well-prepared and satisfying. The meat rice bowl was like a bowl of thick-cut chashu cubes. It seems they also pay attention to the rice, but I didn't notice any distinctiveness. The meat was average, and considering the price and portion, I could have done without it. The restaurant is clean, with a well-organized kitchen, showing the chef's dedication. With 3 staff members for 7 seats besides the owner, it may seem excessive, but if it's to allow the owner to focus on cooking, then it's great. They take their cooking seriously, and despite the long wait, I felt like I would want to visit again.

With a hundred shops to choose from, Chitose Funabashi is a place of interest. While the chicken white broth and limited menu items are tempting, I opted for a simple ramen. Even the default ramen comes with plenty of chashu! The soy sauce soup is not heated, allowing you to taste the flavor of raw soy sauce. The salt ramen is incredibly delicious! Personally, I really enjoyed the salt ramen. The richness of the chicken flavor is very pronounced and extremely tasty. Next time, I want to try the salt ramen with a seasoned egg added! Since the salt option is more expensive than the soy sauce, the salt ramen might be a better deal!

I had the Tamago Shoyu Ramen for 1150 yen at Nishikawa, where there wasn't much of a line and I was able to eat just before 3 PM. Even though my memory of the last time is vague, I feel like this time I could taste the rich umami of the soy sauce more strongly and it was delicious (maybe it's because of my condition).

About 30 minutes before opening, one person started lining up, so we followed suit. By the time they opened, there were about 15 people in line. I chose the chicken white broth noodles with white truffle oil. When it arrived, you could really smell the truffle. The soup was delicious. The truffle aroma was strong, but it didn't overpower the taste of the soup itself. The noodles were thin and coated well with the soup. The portion size was good. Visited on August 3, 2023, at 11:45 AM. "Ramen MAIKAGURA" is a regular at the Ramen Hyakumeiten in Setagaya, Tokyo, and has been selected as one of the top 100 ramen shops. I visited for the first time as I usually don't have the chance to. I arrived a bit early, but there was already a line forming outside the shop. I parked at a nearby coin parking lot, which was more expensive than the ramen itself, as the lot was full. Ten minutes before opening, there were already seven people waiting in line, but since there were only seven counter seats, I couldn't get in on the first round. I looked at the menu posted outside and decided what to order by comparing it with photos and reviews. The highlight of "MAIKAGURA" is their chicken white broth ramen. I really wanted to try it, but the soy sauce ramen also looked delicious in the photos. They also use premium rice from Aomori called "Aotenno Hekireki," so I wanted to try their rice dishes as well. Looking at the ticket machine, I noticed that the miso ramen was temporarily unavailable, and there was a seasonal limited edition menu item called "Cold Cream Soy Milk Spicy Noodles." I decided on that! I bought tickets at the machine before entering. I ordered the seasonal limited edition "Cold Cream Soy Milk Spicy Noodles ¥1,450" and the classic "Flavored Egg Soy Sauce Ramen ¥1,150." I entered the shop 15 minutes after opening. I had asked the staff to serve the hot dish first, so my ramen was ready in about 5 minutes after entering. The "Flavored Egg Soy Sauce Ramen" looked just as beautiful as in the photos. The soup was a slightly rich and light chicken broth soy sauce. The noodles were made from a blend of Hokkaido wheat with a high water content. They were thin but had a chewy and stretchy texture when lifted with chopsticks. The portion was quite generous. There is no option for extra noodles, probably because the amount was already sufficient. The appearance and texture were like fine somen noodles. The chashu consisted of two types: roasted pork and shikinbo (outer thigh), both of which were delicious. The flavored egg was a bit pricey, but it was worth it. Ten minutes later, the limited edition noodles were ready. The "Cold Cream Soy Milk Spicy Noodles" had the same noodles as the ramen. The sauce was a rich soy milk base that reminded me of the chicken white broth ramen. The spicy oil wasn't too hot, but the heat gradually built up. The chashu included roasted pork and a slice of pork wrapped in soy milk cheese. The overall creamy balance was delicious. It was a good choice. I finished by consuming all the soup. I visited the restaurant at MyRebi in Setagaya-ku, Tokyo, which is located at 1-38-4 Funabashi, with Odakyu Chitose Funabashi Station being the nearest station. I arrived at 10:56 am on a Saturday, even though the restaurant opens at 11:30 am. There was already a line forming with a man at the front, and I was second in line. As more people arrived, including individuals, couples, and groups of two women, the line continued to grow. At 11:30 am, the restaurant opened, and the staff guided each customer to purchase their meal ticket. I bought a ticket for the Chicken White Truffle Ramen priced at 1260 yen and handed it to the staff before taking a seat at the counter. There were three male staff members, two in the kitchen and one in the front. The background music playing was Western music. Many customers were ordering the limited edition cold soy milk soup ramen for the summer. The ramen was prepared with a Western cooking style rather than traditional ramen preparation. Each dish was made with care, so by the time my ramen was ready, the customers before me were almost finished with their meals. At 11:44 am, my Chicken White Truffle Ramen arrived. The noodles were thin and slightly soft, with a smooth texture. The soup was delicious, more reminiscent of a Western soup rather than traditional ramen broth, and the chicken oil and truffle flavors matched perfectly. The low-temperature cooked pork was tender and paired well with the soup. The seasoned soft-boiled egg added a nice touch, and I enjoyed savoring the soup with each spoonful. "Ramen MAIKAGURA" *Yesterday's post I had the salt ramen at this famous shop in Chitose Funabashi, which has been ranked as a top 100 shop for 3 consecutive years! The soup made with chicken from Iwate and water only is exquisite. The homemade noodles made from 4 types of Hokkaido wheat are smooth and have a great texture. The unique draining technique called "Tenku Otoshi" is very cool! There are two types of chashu, loin and kishinbo. Kishinbo is a rare cut of thigh meat, very juicy and delicious. The green onions add a nice touch as well!
