I'm sorry. This is a story from March 2021. I think it was a time when it was okay to go out to eat. I tried to aim for a time when there weren't many people, so I went before the opening time, entered the restaurant, ordered, and until the food arrived, I was alone. Inside the restaurant, Okinawan music was playing all the time. I realized that even though I have been to Okinawa before, I haven't eaten "Okinawa soba." When I went, it might not have stood out as a local specialty, and it might not have been something to eat when traveling (just my guess). My personal data on "Okinawa soba" is that my son's impression after eating Okinawa soba on a school trip was "it was so terrible." I have had the experience of not finding rice delicious in Okinawa because the water is not delicious (personal experience), but I have also had the experience of eating delicious pork broth soup, so I had some expectations. I was alone, but I waited for about 15 minutes and the pork bone soba arrived. The smell was more of soy sauce than pork broth. I tasted it, and the first sip of the soup was simply delicious. It was a bit more subtle and elegant than the taste I expected, a bit sophisticated. But I liked the taste. The "pork bone" was simmered until the cartilage became tender, which was nice and Okinawan-like, but it was spicy! Salty! Is this also Okinawan? It feels like the salted meat wasn't rinsed enough. I don't think they use salted meat here. But if there is a next time, it might be good to divide the meat into small pieces, mix it with the noodles, and eat it. But in the end, you are eating a high salt content. The noodles were somewhat unfamiliar. I once bought frozen Okinawa soba noodles and made soup myself, but it reminded me a little of that, a distant memory. It felt like meeting someone for the first time and feeling awkward. I also thought that regular Chinese noodles might be easier to accept in this soup, but that's just my personal opinion. The customers who came in while I was eating were all families. At the register, they bought Shikuwasa juice and the jasmine tea (sanpin tea) served in the restaurant. Shikuwasa juice was given to me by an acquaintance from Okinawa before, it was very sour but delicious, so I bought it. However, the one here was disappointing because the sourness was toned down, or maybe it wouldn't sell if it wasn't like that, and the taste wasn't good. It said "JA Okinawa" on it, so I bought it. Well, it's a matter of personal taste.
