I visited the restaurant on a regular night and had the miso-flavored motsu nabe. At first, it was just right in terms of flavor, but it kept getting stronger. I'm not familiar with motsu nabe, so I'm not sure if you're supposed to add more broth along the way. The taste was delicious, but the service was lacking as there was no explanation of the dish. The drinks were also mixed up a few times, so I gave up on correcting them in the end. The service itself was fine, so it was a shame. What was even more disappointing was that the food was served in just 2 hours. There were empty seats in the restaurant, so I would have appreciated a more flexible approach. However, the taste was really delicious.

I had dinner at a restaurant during my trip. I made a reservation for 6 pm on a weekday, and there were still plenty of seats available when we arrived. By 7 pm, the restaurant was packed, showing how popular it is. I ordered the miso-flavored motsunabe, which was their specialty, and also tried the vinegar motsu. The vinegar motsu was refreshing and delicious, highly recommended. The motsunabe was also very flavorful, with the vegetables absorbing the taste as well. The champon noodles as a finishing touch were also excellent.

The third floor was filled with young people and the noise level was high. We were directed to the third floor, so it felt like the receptionist was triaging based on age. I made a reservation for Friday at 8:30 PM, but there was no line, and I was immediately escorted to the 3rd floor. The entrance had a luxurious atmosphere. The clientele on the 2nd floor seemed to be in their 30s and 40s, with a calm atmosphere, but the 3rd floor was mostly in their 20s and very lively. The voices of male groups were particularly loud, which was disappointing. Some of the staff didn't initiate contact and seemed lacking in training. When I came to Hakata, I visited Ichifujisan. I arrived around 5 pm on a weekday, and the restaurant was a bit crowded. I had reserved the Fujisan course and ordered it. The appetizer platter included curry-flavored potato salad, vinegar motsu (offal), and mentaiko (spicy cod roe) (the contents may vary). The mentaiko had no fishy smell and was delicious without any lingering aftertaste. For the motsu nabe (offal hot pot), I could choose from miso, soy sauce, or ponzu flavors. I asked the staff for a recommendation and tried the most popular miso flavor. The soup had no offal smell, and even the champon noodles at the end were delicious. For an additional 100 yen, you can also have zosui (rice soup), but since there was plenty of soup left after eating the champon, I would consider ordering plain rice (tax included 275 yen) or zosui (tax included 528 yen) separately next time. I also ordered the Hakata specialty sesame kanpachi (amberjack) as a single item, which was also delicious without any fishy smell. The dessert was yuzu sherbet, which I enjoyed until the end.

I visited this restaurant in Fukuoka by making a reservation in advance. It was a good decision because they only accept reservations after 10 pm on the day. The private rooms are small but have a sunken kotatsu table. I couldn't decide on a course menu, so I ordered a la carte dishes:
- Vinegared motsu (759 yen): Made from the intestines that can only be taken from one pig. It had a texture similar to pork belly.
- Hakata specialty sesame kanpachi (1,078 yen): I wanted to try sesame mackerel, but they didn't have it, so I opted for this dish. The amberjack was delicious with its fatty texture.
- Premium marbled horse sashimi (2,145 yen): A platter of horse sashimi made from pure domestic fresh meat with no odor. It was incredibly delicious and a must-order!
- Motsu nabe: I added vegetables, motsu, and champon noodles to the miso-based hot pot. The miso had a slightly sweet flavor, but it was rich and satisfying. The veggies were fresh and the motsu was plump and chewy. The champon noodles were a perfect way to finish the meal as they soaked up the broth well.
I also had beer and shochu for drinks. Despite being busy, the service was polite and left a good impression. I was able to eat and drink to my heart's content in just an hour. Fukuoka has many motsu nabe restaurants, so I'd like to try another place next time, but I highly recommend this one as well.

It seems like a well-known motsunabe restaurant, but it was my first time visiting. The recommended miso-flavored motsunabe was delicious, I even added extra cabbage and motsu. The fatty motsu wasn't overpowering, thanks to the special preparation by the restaurant. I had the image of a soy sauce base, but the recommended white miso flavor paired well with the cabbage.
