First of all, when it comes to game meat, deer is often mentioned, but in fact, all wild animals targeted for hunting are defined as game meat. This includes deer, wild boar, wild rabbit, bears, as well as mountain doves, mallards, teal, pintails, wigeons, mandarin ducks, pheasants, coots, and even recently popular crows. In France, rare birds like godwits, as well as unusual animals like nutrias and muskrats, are also included. Completely wild game meat is called "sauvage", while semi-wild game meat is called "demi-sauvage". Today, I ordered the lunch special which includes a variety of game meats (this is the only menu available). I had wild boar and apple with sansho curry, ginger honey chicken curry, and oyster curry. The owner was not present, but I was seated 15 minutes earlier than my reservation time. The curry was served in about 6 minutes with no specific explanation. I started with the oyster curry, which was full of umami from the oysters and very delicious. It had a good level of spiciness and a strong umami taste. Next, I tried the wild boar and apple with sansho curry, which I was most curious about. Surprisingly, there was no gamey smell, and the meat had a minced texture similar to pork but with a sweet taste. Lastly, I had the ginger honey chicken curry, which had tender meat and was also very tasty. It was a good choice to start with the game meat curry. The curries were all delicious.
