Today in Osaka again, this time in Toyosaki, Kita-ku. I visited Ramen Yashichi. It was a long-awaited visit as I rarely get the chance to go there. They operate on a ticket system, which allows you to control your waiting time rather than standing in line. It's a thoughtful system for those who really want to eat there. I appreciate the humility of not making customers wait in long lines. However, it can be a bit tricky as you have to get a ticket before you're too hungry. After getting the ticket, you have to kill time, and sometimes you might end up eating somewhere else by mistake. Maybe that's why there's always a line there. Anyway, today I ordered the Shoyu Chashu Ramen for 1,090 yen and the Heta Meshi for 390 yen. The beautifully presented Chashu, fragrant soup, and firm noodles with a good texture that blends well with the soup. The standout is definitely the soup, made from boiling chicken, known as chicken white broth, it's rich and refreshing, making you want to slurp it all up. The Chashu is delicious and well-prepared, not too salty, with a refined fat content. The Heta Meshi, rice topped with chopped Chashu, has a sweet and savory sauce that complements it well. It was recommended and indeed a fantastic meal. A truly renowned shop with incredibly delicious food. As for the post-COVID era, as we transition back to normalcy, there may be a mix of excitement and stress for both employees and companies trying to figure out their next steps. The risk of a severe "May blues" for workers and the financial burden for companies in the aftermath of the pandemic pose additional challenges. In times like these, let's eat ramen to boost our spirits and get through it. That's all for today's meal.

I visited this shop on a weekday Monday when I was able to take a day off! This was my second visit. They operate on a ticket system, with tickets being distributed from 10:15. I arrived before 10:00 and was able to get the second ticket, entering the shop at the opening time of 10:45! More customers arrived later to get tickets, showing how popular this shop is! I ordered the salt ramen with regular noodles!! The toppings included boiled egg, chashu pork, green onions, white onions, chopped perilla leaves, white sesame seeds, and perilla flowers. The soup is based on chicken broth with French Guerande sea salt, not too thick but with a light taste. The perilla flavor is subtly present, and the white sesame and pepper add a nice touch! It's a unique taste that I haven't experienced before, but it's delicious!! The homemade medium-thick straight noodles have a smooth and springy texture, which is enjoyable. Dried shrimp and scallops come out from the bottom of the soup, allowing you to enjoy it until the last drop! I finished the rich soup in one go! It was a delicious meal, thank you!

While I was eating, more customers arrived and it seemed like the wait time was around 1.5 to 2 hours. I ordered soy sauce ramen. The noodles were thick and had a chewy texture, similar to tsukemen noodles. Overall, it was a hearty ramen. Despite prices over 1,000 yen becoming common, this place offers good value for the money. The staff were also friendly and welcoming.

This is Ramen Yashichi. It's lunch on a day off, and it's currently 10:20 am. I came to get a ticket, but they started distributing them 5 minutes ago. My number is 21, scheduled for 11:44 am. I killed time wandering around Umeda and arrived at the shop 4 minutes early. I was seated right away when called. Today's menu is Shio Chashu Ramen. It features Yashichi's chicken white broth with French Guerande sea salt, topped with scallops and small shrimp in a salt sauce, and garnished with sesame and perilla leaves. The rich chicken white broth with a hint of perilla flavor is delicious. The homemade medium-thick noodles pair well with the broth. The texture of the white leeks is good and the perilla flowers are pretty. The flavored egg is seasoned just right. The sautéed chashu fat is crispy and tasty. The three slices of tender chashu are so soft they can be torn with chopsticks. The scallops and small shrimp in the salt sauce add a unique touch to this delicious bowl of chicken white broth ramen.

Visited at 11:00 on a regular day. Received a ticket with a 50-minute wait. Usually I go for soy sauce, but this time I tried the dipping noodles which I hadn't had before! The dipping sauce was light with a hint of acidity. I usually prefer a richer dipping sauce for my noodles, but this was delicious! Mixing in the soup made it taste like soy sauce, which was comforting. Even with a medium serving, I slurped it all up. I'm torn between getting ramen or dipping noodles next time... It's been a while since I visited Ramen Yashichi in Nakatsu. September 5, 2023, Tuesday. It had been a year and a half since my last visit. I finally made it back to Ramen Yashichi in Nakatsu after struggling to find the right timing. Excited for this visit.
10:48 - Arrived. Got a waiting ticket and left temporarily.
11:23 - Returned. Waited a bit and got called in. Entered the restaurant. Purchased a meal ticket.
11:28 - Seated.
11:32 - Ramen arrived. Soy sauce chashu ramen for 1200 yen, extra noodles for 400 yen. Total 1600 yen.

I took the afternoon off on this day. Around 2:30 in the afternoon, on my way home from work in Naka, I stumbled upon Yashichi, which was open. And there was no line! I usually pass by the store at night, but since they only open during the day, I had been wanting to try it. I also checked out the popular nearby restaurant Men to Bakusuke, but there was still a line there so I decided to go to Yashichi. The ramen that came out was a soy-based chicken white broth ramen. There are many chicken white broth ramen shops in Osaka, but this one has a unique, one-of-a-kind deliciousness. It's like... even though it's chicken white broth, it's solid? That's my personal impression... I want to eat it again. There were quite a few foreigners in the store as well. Is this what they call ramen tourism? I'm sure they were impressed by the taste. I want to visit again.

At 1 pm, I entered! Inside, I ordered the "Shio Ramen" and the unforgettable "Heta Meshi" from my previous visit. The shop was playing the intense sounds of Koshien baseball games. The ramen was served, and the broth, with a white and murky appearance, had a refreshing aroma of shiso leaves floating on top. The soup was delicious, with a rich chicken and seafood flavor. The homemade medium-thick noodles had a chewy texture and great firmness. The chashu was easy to chew and had a perfect balance of broth and fat. The marinated egg had a sweet and savory taste. The green onions added a crunchy texture and aroma. The "Heta Meshi" was unexpectedly delicious, with the charred chashu and savory sauce complementing the white rice perfectly. I visited the restaurant the day after Summer Sonic Osaka, and it was very popular as I had to wait over 2 hours with a ticket to enter. The soup is Yashichi's proud chicken white broth, a cloudy soy sauce-based sauce with bonito flakes, and homemade medium-thick noodles that have been aged. On top of the noodles are white onions, seasoned egg, and diced cha-shu. Dipping the noodles into the chicken white broth soup, the soup blends well with the homemade medium-thick noodles and tastes delicious. The texture of the white onions and green onions is good, and the diced onions are sweet and tasty. The seasoned egg, half-boiled, has a creamy and delicious taste. The sautéed cha-shu in the soup is fragrant, crispy, and delicious. The diced cha-shu has a meaty texture, a good bite, and is delicious. After finishing the noodles, of course, I added some soup to the remaining soup, which was heated up, had a moderate thickness, and a touch of black pepper to enhance the sweetness of the chicken white broth, making it even more delicious. I was number 6 at 10:57 am, so it looks like I can sit down as soon as they open. I passed the time until opening and was able to enter right away when they opened. This time's menu is the Chashu Tsukemen. On hot days, tsukemen is the best choice. The homemade medium-thick noodles have a chewy texture, topped with white leeks, flavored egg, and thick slices of chashu. The soup is a rich chicken white broth with a strong soy sauce base, with green onions and onions in it. I dipped the homemade medium-thick noodles into the chicken white broth soup, and the soup coated the noodles well, making it delicious. The balance of sweetness and acidity is good. After waiting for about 30 minutes, I entered the restaurant at 10:45 am. I ordered the same soy sauce ramen as my last visit. The ramen was a light chicken broth style, which some may like but I personally prefer a richer broth. The noodles were good though. The side dish of rice with flavorful chashu was quite delicious. Overall, if you like this type of ramen, you will enjoy it, but it wasn't quite my taste.

The shop is only open for lunch on weekdays, making it quite popular and known for long queues, hence the use of a ticket system. I arrived at the shop and got a ticket for 30 minutes later. I killed time nearby and returned at the appointed time to enter smoothly. I ordered the "Soy Sauce Ramen." It arrived in 3-4 minutes. The soy sauce ramen here combines soy sauce base with chicken white broth. The rich chicken white broth has a creamy and wild flavor. The noodles are smooth and medium thickness. Toppings include onions, two types of green onions, and a tender pork belly chashu. Personally, it didn't quite hit the spot for me. The popular "Chashu Don" is also known as a hit, and many people enjoy it together with the ramen. If you're interested, try it as a pair.

The chashu was soft and tasty, easily torn apart with chopsticks. The soup also had small shrimp and scallops from the salt sauce. I also tried the side dish, which was stir-fried chashu with green onions, chopped onions, and a sweet and savory seasoning that went well with rice. The texture and sweetness of the chopped onions were great. It was a delicious bowl of legendary chicken broth ramen.
