A skilled sushi chef takes just the right amount of rice to match the size of the topping when making sushi, without wasting any leftover rice. This is known as the art of not wasting rice, where the chef can determine the number of rice grains used. Lately, it seems like sourcing good quality toppings has become the focus, but the true essence of sushi lies in the art of making the rice and the way it is molded. It feels a bit odd that skills unrelated to the chef's craftsmanship are being highlighted. Of course, being able to source delicious toppings is also a skill in itself! I enjoyed some wonderful abalone, tuna, and the best seasonal Pacific saury. The sushi was truly outstanding. Thank you very much.

No matter how many times I go, this is a restaurant I love. The first tuna that comes out is incredibly delicious, it makes my cheeks fall. And above all, I love Tsunemakoto's rice. The al dente texture is amazing. Number one in the world of sushi rice. Thank you for the meal.

In September of the 5th year of Reiwa, I visited "Jinsei," located on the Michelin Street where reservations are difficult to come by in Shinsaibashi. On this day, three regular customers gathered at the premium counter with 6 seats, and we started by ordering drinks. The omakase course for the day began with: [Omakase Course] Bluefin tuna from Oma (appetizers): - Otoro sashimi with grated daikon - Amberjack shabu-shabu - Steamed abalone and liver - Bonito - Grilled conger eel - Beltfish rice ball (sushi): - Otoro sashimi 1 - Otoro sashimi 2 - Small fin tuna - White sea bream - Striped jack - Fresh squid - Fresh squid legs - Seared horse mackerel - Pacific saury - Conger eel - Marinated red meat - Yura red sea urchin - Small bowl of salmon roe - Spot prawn - Conger eel - Jinsei special roll - Dried gourd roll - Egg - Clam soup (drinks): - Highball - Sake "Shinrai" from Hiroshima - Sake "Hiroki" from Fukushima - Sake "Shichihonyari" from Shiga - Sake "Tohoku Izumi" from Yamagata The Oma bluefin tuna sashimi was exceptionally delicious, with a refreshing richness that melts in the mouth and leaves a lingering aroma. The seasonal new squid had a delightful sweetness, and the squid legs provided a unique texture and umami. The Pacific saury, which I don't often have, was full of richness and flavor. Following last month, we were treated to the Yura red sea urchin, which was rich and had an incredible sea urchin aroma. We also enjoyed the Jinsei special roll, which was large and offered a variety of flavors. Once again, we savored the appetizers, sushi, and drinks. Thank you for the wonderful meal! Jinsei's sushi can be eaten at a good pace and is also satisfying. They offer a variety of ingredients such as salmon roe, sea urchin, abalone, yellowtail, sandfish, red meat, medium fatty tuna, and fatty tuna. Thank you as always. It was a feast!

I was lucky to visit "Jinsei" on the Michelin street in Shinsaibashi, where it is difficult to make a reservation, for the second time in August of Reiwa 5. The counter was filled with regular customers on this day. I started with a bottle of beer and ordered the chef's special course. The course included various appetizers such as fatty tuna, octopus, abalone, grilled conger eel, and more. For sushi, I enjoyed medium fatty tuna, small fin, white sea bream, striped jack, and more. The highlight was the special Chiba Takeoka swordfish rice dish. The combination of sushi rice, grilling, and seasoning was perfect. The seasonal red sea urchin from Yura was also a delightful treat. I also had the special Jinsei roll, which was only available at this time of year. It was another fantastic dining experience at Jinsei.

Hello, this is Tsuneo. The food here is so delicious that it makes my stomach growl while I eat, which is a bug unique to this place... Of course, the highlight is the vinegar rice from Jinsei, which I absolutely love. This time, I had: - The famous Toro (fatty tuna) with grated daikon. I couldn't eat this before, so I'm thrilled. The combination of Toro and refreshing daikon is amazing. - Giant-sized abalone as big as the chef's hand. It's tender, flavorful, and the liver goes perfectly with sake. - Hamo (pike conger) with a crispy texture that is too delicious. - The signature zig-zag octopus with grated daikon and ponzu sauce, refreshing and tasty. - Salted bonito tataki. I love the salt on it. It's chewy and delicious. - Tachiuo (largehead hairtail) rice. The taste exceeded my expectations with its fluffy texture, rich flavor, and surprising deliciousness. - Medium fatty tuna and fatty tuna sushi, served with Toro from the first piece. - Kohada (gizzard shad) that is irresistible. - Karei (flounder) with a perfect balance of soy sauce and other flavors. - Kuro mutsu (blackthroat seaperch) that melts in your mouth and you want to savor it forever. - Hirame (flounder) pudding with a bouncy texture and rich flavor. - Kensaki squid, a favorite of mine that is delicious. - Shima aji (striped jack), possibly my favorite, it's dangerously good. - Kisu (sillago) protein, delicious and satisfying. - Maguro (tuna), why is it so delicious? - Uni (sea urchin) rice, I want to eat Uni and vinegar rice forever. - Boiled shrimp, transparent and perfectly cooked. - Anago (conger eel), even after eating so much, I still want to munch on Anago. - Toro taku and kanpyo (gourd strip) roll, a long and funny experience this time. I also enjoyed Japanese sake from "Mimuro Sugi" in Nara and "Dokkoi" from Akita, and my skills as a sake lover were put to the test. Before I knew it, two cups were gone. This place is definitely a reward meal!! I look forward to enjoying this again and will work hard every day in anticipation. This is my genuine #Tsuneo's recommended gourmet!!

Shari likes red vinegar, and always feels a sense of incongruity somewhere in the unity with white vinegar. However, I finally felt a sense of unity with white vinegar's shari that had no discomfort at all. It was delicious! The snacks were also delicious, and the pickled ginger was light and fresh. Is the soy sauce a bit too much? I will visit again!

In August of the 5th year of Reiwa, Sushi Hajime is located on the Michelin Street in Shinsaibashi, where reservation-difficult restaurants line up. I visited "Jinsei" last week for the July menu, and was fortunate to be able to visit again this week. This time, three regular customers gathered, and we first ordered drinks. We ordered highballs and toasted with our companions. The star of the Jinsei Theater that day was the omakase course, which included various dishes such as tuna from Oma, tsubugai, hamaguri, grilled hirame, onion octopus with ponzu sauce, steamed abalone with liver, and swordfish rice. The nigiri sushi included chutoro, shinko, hirame, shiroamadai, squid, striped jack, seared kurodai, horse mackerel, aji, kohada, akami zuke, and red sea urchin. The meal also included white shrimp, carabineros, anago, special rolls, dried gourd rolls, and tamago. For drinks, we enjoyed highballs, sake from Hiroshima, Nara, and Ehime, and a special sake from Nara. The grilled hirame in the appetizers was fluffy with a delicious umami flavor and perfect saltiness. The swordfish rice was consistently delicious. The nigiri sushi, especially the flavorful shiroamadai, was particularly delicious. We enjoyed the appetizers, nigiri sushi, and sake on this day. Thank you for the delicious meal!

The owner is really funny and good at getting everyone excited. He is friendly and talks naturally, making it feel like you're having dinner while watching a comedy show (he laughed when I said that). It's a small restaurant with only 6 seats, so it's fun when all the customers interact and have a good time together. This time, I had: - Tokobushi (blowfish) - Famous Octopus Ponzu - Grilled Conger Eel - Sardine and Green Onion Roll - Clams - Tachiuo (Beltfish) Mini Bowl - 12 pieces of Sushi - Uni (Sea Urchin) Bowl - 4 cups of Sake I apologize if my memory is a bit hazy due to the sake haha. The course costs 50,000 yen per person, but the quality and quantity are amazing. Even though I was already full, I couldn't stop eating because the food here is just too delicious. There's quite a lot of food, but I don't think anyone would leave without finishing it! It's so delicious!!! This is Tsuneo's highly recommended gourmet experience.

Located on the Michelin street where it is difficult to make reservations in Shinsaibashi, "Jinsei" is a premium seat with 6 counter seats in the first half (starting at 5:30 PM) where 3 regular customers gathered for the "Jinsei Theater" on this day. We started with ordering bottled beer and toasting with our partners! The omakase course for the day included snacks such as green onion octopus with ponzu sauce, tsubugai (whelk), conger eel, anago liver simmered in ice, and swordfish rice. The nigiri included bluefin tuna from Oma, chutoro, shinko, white sea bream, sea bream, striped jack, squid, seared blackthroat seaperch, horse mackerel, cuttlefish, red sea urchin, shrimp, marinated lean tuna, conger eel, dried gourd, negitoro, and torotaku. The drinks included bottled beer, sake from Fukushima, sake from Nara, and sake from Hiroshima. Everything from the snacks to the nigiri was incredibly delicious. The seared conger eel in particular was fluffy with a great umami flavor and perfect saltiness. The nigiri, especially the first of the season shinko, white sea bream, and striped jack, had excellent fat content and were extremely tasty. The first of the season Yura red sea urchin was outstanding, with a prominent sweetness and rich umami flavor. We thoroughly enjoyed the snacks, nigiri, and drinks on this day. It was incredibly delicious! Thank you for the meal!

Ma Sheng Daisuke and I have a long-standing relationship, and when we went golfing together, he made a private reservation! The name "Jinsei" comes from the prestigious baseball high school "Jinsei Gakuen" in Kagawa Prefecture, where he was a catcher in the Best 4 in the summer Koshien in 1992! Currently, this restaurant is a super difficult reservation-only establishment that does not accept any new reservations! The restaurant is located in the entertainment district of Namba in Osaka, on a small alley off Kasuya-cho Street and Suo-cho Avenue, known as Michelin Street, where many reservation-difficult restaurants are lined up. Awards received include: The Tabelog Award 2023 Bronze, Tabelog Sushi WEST Top 100 2022. The food ratings at the time of visit were 4.11. As for what we had (◎appetizer ●sushi ※alcohol): We started with a toast with beer, followed by various dishes and drinks such as salted tuna from Miyagi, grilled saury wrapped in seaweed, and more. The specialty peeled tuna that comes out as the first dish really captures the hearts and stomachs of the participants! This was the only famous sushi restaurant in Osaka that I had not visited yet. I was able to visit here by chance. The sushi rice was mild with a subtle vinegar flavor, which paired well with the toppings. Perhaps they want customers to appreciate the quality of the ingredients. Overall, I enjoyed it. The chef was friendly and the conversation flowed smoothly, making it a comfortable atmosphere.

I was invited to a private party by one of my followers, and we went to Sushi restaurant Jinsei for the third time✨ It's a Michelin-starred restaurant that is very difficult to make a reservation at, with a high rating of 4.23 on Tabelog. I always thought that if I could go there once in my life, it would be a dream come true, but now I've been there three times and I'm so grateful/////✧︎*。 We had the omakase course for 40,000 yen, and it was amazing. The Jinsei special roll, made with various parts, was a special treat with different flavors to enjoy. Once again, I had a great time enjoying the delicious appetizers, nigiri sushi, and drinks. This is a small restaurant with only 6 seats and a talkative chef. It might be the pinnacle of sushi here! It's not easy to find a place worth over 40,000 yen per person, but this place is worth every penny. You'll want to come back here again and again.
