Head to Yastada for handcrafted noodles at the east exit of Shin-Osaka Station. It has been three years since my last visit. The menu features two main dishes: Iriko Salt and Bonito Soy, but unfortunately the soy sauce was sold out. However, my favorite is the salt flavor, so I will enjoy it without any regrets. Iriko Salt. A distinctive feature of this dish is the clear soup. The soup is a refreshing blend of chicken umami and rich flavors, with the added depth of aromatic vegetables and bonito essence. It is a clear soup that continues to shine with gentleness on the nose and palate. The homemade handcrafted noodles are also exceptional as always. They have a smooth surface, a rich texture, and a perfect balance with the soup. The noodles now have an even richer and stronger taste than before, making them delicious. Bonito Rice. Topped with a generous amount of bonito flakes. The sauce enhances the flavor of the rice and bonito flakes. It is a side dish that complements the deliciousness of the ramen without overpowering it. It was a satisfying bowl at Yastada after a long time, thank you for the meal.

Let's go to eat ramen in Shin-Osaka. We bookmarked this place and there were two people waiting outside. We waited for about 10 minutes before getting seated. It was really hot inside and the air conditioning wasn't working well. I ordered the Illico salt ramen and a small char siu rice bowl. The ramen was light and tasty, similar to udon broth but still a proper ramen. The char siu rice bowl was 250 yen but had a generous amount of meat.

I arrived in Osaka from Okayama on a business trip and headed to my usual inn near the station for lunch. Since it was still a little early for check-in, I decided to have lunch at a ramen shop just a minute's walk from the hotel. I ordered hand-made salt ramen with dried baby sardines for ¥850 and a bonito rice bowl for ¥150. The bonito rice bowl arrived first, with plenty of dried bonito flakes on top of soy sauce or sauce and sesame seeds sprinkled on white rice. It looked delicious. Then the ramen arrived. The thick hand-made noodles were similar to udon. The clear soup with chashu pork, bamboo shoots, chopped white onions, and thinly sliced green onions on top was beautiful. The bonito broth had a stronger flavor than I expected, but it was delicious and not overwhelming even when mixed with the thick noodles. Despite not being a fan of fish-based broths, I ended up finishing the soup completely. The shop was run by the owner alone, and there were about 7-8 counter seats. It quickly filled up after I entered. It was a great meal.

I happened to see that it was open because it has irregular holidays, so I decided to go in! It was my first time eating hand-made ramen and it was fresh. The hand-made thick noodles and light soup paired perfectly and I finished it in no time. I would love to encounter a place where they are open again.

Order: Iriko Salt Ramen, Char Siu Donburi (small). Located a short walk from JR Shin-Osaka Station East Exit, this small shop is run by a single owner. Despite being a one-man operation, the service is polite. I visited around 12 p.m. on a Saturday, expecting to wait, but surprisingly got seated easily. The salt ramen here has a soup infused with the flavor of iriko (dried baby sardines), reminiscent of udon soup. The original thick noodles have a texture similar to udon. It's a taste that some people will surely love. Personally, I'm a big fan, haha. Additionally, the char siu donburi at this shop is incredibly delicious, so much so that I would come here just for this instead of the ramen, haha. The tender char siu and sweet sauce pair perfectly with the rice. The shop only operates during lunch hours and has irregular closing days, making it a bit challenging to visit, but it's conveniently close to the station, so I highly recommend it.

It's been a while since I posted on Tabelog, but I visited one of my favorite restaurants that I go to regularly. This restaurant doesn't use social media, so I was nervous about it being closed when I arrived (lol). Luckily, it was open! The owner used to work at the famous restaurant "Tenjin Hata." This popular restaurant has fans from all over Japan. If you're taking the Shinkansen from Shin-Osaka, be sure to stop by! I ordered the "Iriko Salt" ramen, which had a gentle seafood broth with a strong saltiness. The hand-cut noodles were chewy and unique as always. And of course, I had to have the bonito rice, which is my favorite. It's truly one of a kind!

I got off at Shin-Osaka Station and walked a little from the east exit. I arrived there with 30 minutes until closing, and since it was a weekday, I was able to enter without waiting in line. I usually prefer soy sauce, but this time I chose salt based on the reviews I checked beforehand. The clear soup was light yet elegant, with a delicious flavor of dried baby sardines spreading throughout. I could finish every drop of it. The noodles were homemade thick and chewy noodles that paired well with the soup, providing a great texture. It was excellent.

I usually go to ramen shops and order dishes like "all toppings," "special," or "premium" to enjoy a luxurious experience. However, this shop is all about simplicity with just salt. The curly thick noodles with a dried fish base salt broth, the taste of the noodles, and the soup flavor all penetrate deep into your body. You can add extra toppings like roasted pork and bamboo shoots, but it's already satisfying as it is. Each slurp of the noodle is delicious. I was moved to think, "Is this completely handmade noodle?" I love simple ramen the most.

The salt-grilled pork bowl with small bonito dashi is incredibly delicious. The salt ramen is also amazing. The owner manages the shop alone. I arrived around 11:30 am on Sunday and was able to get in quite easily. The shop was already open. It's a bit disappointing that they don't have boiled eggs for those who like them. The Chashu bowl is also very tasty.

I tried to go before but it was closed, so this was my second attempt. I ordered the bonito soy sauce ramen and bonito rice. First of all, the hand-made noodles are delicious! They are chewy and have a nice bounce to them, not too hard, just perfect. I thought that these noodles would taste good with any soup, and of course the soup was delicious too. The soup has a strong bonito flavor with a light and refreshing taste, similar to udon broth. The restaurant's hours are unpredictable due to frequent closures, but it is definitely worth a visit to this outstanding place.

This time, I went to "Teuchi Men Yasuda". It is located about a 5-minute walk from JR Shin-Osaka Station. It is quick to get there by exiting from the east exit and turning left. At 11:15, they were open for the day, but since there is only one manager, they may have temporary closures. I ordered the soy sauce ramen with bonito broth (850 yen). Arrived at the restaurant around 12:10 PM on a regular weekday. There were two people waiting inside and one person waiting outside. Waiting outside can be tough in the summer. At 12:18 PM, three people left and went inside. The air conditioning was weak. I ordered hand-made salt ramen (850 yen) and a small roasted pork bowl (250 yen). The roasted pork bowl arrived at 12:25 PM, followed by the ramen at 12:28 PM. I first tried the soup, which had a rich flavor of dried fish stock. The thick curly noodles paired perfectly with the soup, creating an exquisite taste. The chashu and roasted pork bowl were both delicious. This was the best ramen I've had recently, and I would love to come back again. I finished eating by 12:45 PM, and for a moment, there were no customers in the restaurant. As I was paying at the register, three more customers came in.

Around 11:30, there were 2 customers already seated, but by 11:45 there were about 5 groups of customers waiting outside. I ordered the Irigo Salt Ramen for ¥850. Despite being short-staffed, the dish was served efficiently in about 5 minutes. The soup had a subtle dried fish flavor, with a strong peppery kick that gradually numbs the tongue. Personally, I didn't really enjoy it. The noodles were firm with low water content, giving them a chewy texture. They were thick and packed with wheat, providing a satisfying bite and resembling Jiro-style ramen. The toppings included green onions, bamboo shoots, and thinly sliced char siu pork. The bamboo shoots were slightly sweet, possibly one of the best I've had. The char siu pork was thin and rectangular, with a hint of a meaty aroma that I personally liked. It had a strong and delicious meaty flavor.

I wanted to try it because it had good reviews. The ramen that came out was simple with unique noodles. The soup was very light. I visited this restaurant within walking distance from Shin-Osaka Station because it had high ratings. The street leading up to the restaurant made me a bit worried if I was going the right way. I ordered the iriko salt and katsuobushi soy sauce ramen. Both were light yet flavorful, with a clear broth that made me want to eat more. I would love to have it again when I visit Osaka. I went there around 1 pm on a Friday and had to wait a bit to get in. Even after I got in, there were still a few people waiting in line.

This is a ramen restaurant called Irigo Salt Katsuobushi Soy Sauce in Shin-Osaka. I had tried to visit three times before but they were closed, but this time I finally managed to go. I arrived around 11:15 am and was the first in line with no wait. The shutter opened 5 minutes later and the owner invited me in. I ordered salt and soy sauce ramen. The clear and beautiful salt soup arrived first. It had a harmonious blend of chicken and katsuobushi flavors with a hint of sweetness. The thick curly noodles were a delight to slurp, with a great texture and smooth finish. The slightly sweet seasoned bamboo shoots were a nice touch. The flavorful chashu was delicious. I finished every last bit without getting tired of it. Just as I finished, the soy sauce ramen arrived. The soup had a crisp soy sauce flavor enhanced by the katsuobushi. It was so tasty that I could drink the soup by itself. The combination of the amazing soup, top-notch noodles, and flavorful katsuobushi was unbeatable. I finally made it to this long-awaited restaurant and was completely satisfied with the delicious taste!
