Located near the Harakousaten intersection where Haradori and Route 202 intersect in Sawara-ku, Fukuoka City, near the intersection of the new road in Imaisu and Prefectural Road 558 Haradori, this udon restaurant opened as the 44th store of "Sushisan Udon" in November of Reiwa 1, the 6th direct store in Fukuoka City. "Sushisan Udon" was established as a Sanuki udon restaurant in Tobata-ku, Kitakyushu City in 1976. Incorporating the climate and food culture of Kitakyushu, they offer over 100 items on the menu and operate as a "udon family restaurant" open 24 hours a day, which has been well received and expanded their stores. The founder, Akishige Onishi, passed away in 2015, and a financial fund took over the management and steered the business towards further expansion. Currently, they have over 60 stores concentrated in northern Fukuoka Prefecture, becoming one of the "Big Three Udon Chains in Fukuoka" along with "West," which was founded as a drive-in in Fukutsu City in 1966 and has expanded to over 100 udon shops, and "Kamaage Makino Udon," which was founded in Itoshima City in 1973 and operates 18 stores with the main store serving as a central kitchen. Sushisan Udon is considered the most popular and promising udon shop in Fukuoka. The characteristic of "Sushisan Udon" is the golden-colored soup made by simmering the strong umami from kombu, mackerel, sardines, shiitake mushrooms, and seasoning with kaeshi (soy sauce base) to a rich taste and finishing with a slightly sweet aftertaste. The udon noodles are slightly thin, flat, soft in texture, fluffy, and chewy with a moderate firmness. The soup is made at each store using ingredients specified in grams and can only be used for up to 8 hours, so some stores make it 7-8 times a day. Popular menu items include the Kitakyushu specialty "Kashiwa Udon," the Kitakyushu-originated "Yaki Udon," and the well-known in Hakata "Niku Gobo Ten Udon," which has become a new specialty and the most popular item. The free services of grated tororo kelp and tenkasu, the option to increase the amount of chopped green onions, and the option to change to thinner noodles "saimen" are attractive features of the restaurant. "Sushisan Udon Hara Store" is located near the busy "Hara Intersection," with entrances to the spacious parking lot on both sides of National Route Imaisu Shindo and Prefectural Road Haradori, making it easy to access. This is my nearest "Sushisan" store, so I have been dropping by since it opened. The 24-hour operation is really convenient. This time, I visited on an early holiday morning to replenish energy and load up on carbs for breakfast on my way to climbing Mt. Iimori in Nishi-ku, Fukuoka City. I arrived a little after 5 a.m., and there were only three cars near the entrance. I parked my car next to them and went inside the store. The young male and female staff greeted me warmly, saying, "Welcome!" The spacious store with over 90 seats had about 10 customers, mostly young university students, except for a group of two men who seemed to be returning from drinking. "Sushisan Udon" is mostly used like a family restaurant. I sat at a two-person table in the middle of the store, looked at the menu, and decided to order "Kake Udon" and "Kashiwa Onigiri (2 pieces)." I used the call bell on the table to call a staff member and ordered the udon with "extra green onions for ¥0." I hydrated with the "cold water" from the jug on the table, and soon after, the female staff brought the dishes, saying, "Here is your 'Kake Udon' and 'Kashiwa Onigiri'!" The scent of green onions wafted gently. It's nice♪ Let's dig in. First, I scooped up the udon soup with a ladle and tasted it. It has a rich umami flavor from bonito flakes and dried sardines, with a slight sweetness. It's delicious.
