I made a reservation and visited the restaurant. It was my first time at this place, so I listened to the owner's explanation while placing my order. Most of the menu items are made with homemade ingredients. The semi-soft boiled egg with homemade mayonnaise was a bit different from regular mayonnaise, it had a slightly darker color. According to the owner, the restaurant's name, "Charbon," means "charcoal" in French, and the homemade mayonnaise is mixed with a little bit of charcoal and sprinkled with salt and black pepper. I ordered the assorted appetizers, a 200g grilled Kyushu beef, and a grilled lamb rack. We ended up opening two bottles of wine without even realizing it.

The homemade sausages were amazing, especially when eaten with the mashed potatoes and mustard underneath. The sausages were crispy on the outside, juicy on the inside, and bursting with flavor. The homemade French fries were also delicious, crispy on the outside and fluffy on the inside. The homemade mayonnaise with rock salt on top was a nice touch.
