The interior of the shop reflects the sophisticated atmosphere of the surrounding office buildings. However, the large screen showing live footage still exudes the soul of the UNCHI Group. And the deliciousness of WHICH'S RED is truly outstanding. The slightly sweet soy sauce broth with the lingering taste of clam dashi creates an unparalleled deliciousness. Despite its pop appeal, it's so delicious that it's truly remarkable. The noodles are made of whole wheat flour, giving them a translucent and chewy texture. This is also characteristic of the UNCHI Group, and the compatibility with the soup is unbeatable. From the deeply flavored wrinkled bamboo shoots to the thinly sliced giant marinated chashu with a memorable black pepper seasoning, the toppings are all top-notch, making it a perfectly balanced bowl. I felt that the tenderness of the chashu, the firmness of the noodles, and the flavor of the ramen were all well-balanced. I also enjoyed the gyoza with salt, which left me feeling refreshed. If it were nearby, I would definitely want to visit this ramen shop multiple times.

Recently, they have also opened a new mixed noodles shop called "The World's Most Leisurely Mixed Noodles Shop" in 202307. Arrived at 13:53 on a weekday, the restaurant is located on the 2nd floor of the luxurious building called Nakanojima Diveil. There were 3 people waiting in line outside the restaurant when I arrived. I was seated at 13:57. Orders are taken verbally and payment is made afterwards. The restaurant is quite spacious with a large counter and many tables. The familiar band Mr. Children's live performance was playing on the screen, making me worry if the staff dislikes the band. The ramen was served at 14:10 in a large bowl with a lid made of char siu. The toppings included bamboo shoots, green onions, and seaweed. The soup had a base of animal broth with a hint of clam broth on top. It was savory and delicious. The noodles were medium-thin whole wheat noodles with a firm texture and a strong wheat flavor. The char siu slices were thin and large, with a good meaty flavor. The bamboo shoots were tender, and the green onions added a crunchy texture and strong aroma that affected the overall balance. Towards the end, the soup became more clam-flavored, allowing for a refreshing finish to the meal.

The noodles were medium-thick straight noodles with what seemed to be whole wheat, as there were small granules in them. The soup was a clam-based soy sauce, with a good balance and possibly containing bonito flakes. When I tried the soup and rice together, they matched perfectly! The dish came with a large piece of char siu spread across the bowl, with black pepper on the skin part, giving it a taste similar to high-quality ham. The taste was excellent. The combination of the soup and noodles was great, but the combination of the soup and rice was outstanding!

The Witch's red had a taste that was more like white soy sauce than red, with a hint of sweetness and it paired well with the whole wheat noodles. The Kurofune was not as salty as its color suggested, and it was light and easy to eat. Overall, the flavors were gentle and could be a good way to finish a meal.
