For those expecting Hakata tonkotsu, it might be better to look for another ramen shop. The pink, thin slices of chashu had a nice chew to them, making them a dish you might want to order with rice. I also ordered the shumai set for lunch, and the shumai was full of meat and very delicious!

After entering the restaurant, there were about 4 groups waiting! The turnover rate was fast and we were seated in about 5 minutes! I ordered the Char Siu Wonton Soba with Sauce Katsu Don set! The soup had a sweet taste from the chicken and seafood soy sauce, which was quite intriguing! This sweetness may be a bit unusual for people from the Kanto region! The noodles were curly and had a chewy texture, which I liked! The portion of noodles was quite small, so you may want to get a large serving to have enough! The Char Siu was thinly sliced and just okay. The shrimp wonton had a nice firm texture from the shrimp inside and was delicious! The Sauce Katsu Don was thinly sliced, but the sauce soaked in well, so it wasn't bad! I wouldn't go as far as to say it was amazing, but it was decent! It would be nice if it had a bit more thickness though! Thank you for the meal!

On this day, during a business trip to Fukuoka, I was looking for a place to have Hakata tonkotsu ramen for lunch. However, I happened to come across a completely different type of delicious-looking Chuka soba shop, which had just opened. I decided to enter and took a seat at the counter. I looked at the menu and ordered the large serving of Chuka soba (750 yen). After waiting for about 5 minutes, the Chuka soba was brought to me. I tried the soup first, which was hot and had a gentle flavor of sweet chicken broth. It was quite delicious! The thin, flat noodles paired well with the soup and overall, it was a well-balanced and tasty bowl of noodles. It made me realize that in Fukuoka, in addition to tonkotsu ramen, there are also delicious shops offering this kind of orthodox shoyu ramen.

I didn't have much time, so I visited a nearby restaurant. It had been a while since my last visit. I ordered Tamago Kake Gohan (rice with raw egg) and ramen. The Tamago Kake Gohan was delicious. Personally, I really like this restaurant. I visited twice for lunch and even though it was packed, my ramen was served within 5 minutes of ordering! I think ramen just has to be like that, I muttered to myself with a smile. The taste is pretty average overall, but because the restaurant is clean, I rate it highly. Since I was in a hurry, I quickly chose the Char Siu ramen. It arrived in about 5 minutes. I took a bite right away. Delicious!!! The noodles were medium thickness, similar to ramen from Kitakata or Sano. At first, it tasted like a light sukiyaki flavor haha. Later on, it became a regular soy sauce ramen without any sweetness. Even though I didn't add anything, I felt like the taste changed a few times during the meal haha. The Char Siu was prepared in a rare style. Like confit? I'm not a fan of the low-key cooking style. I gave up last time during lunchtime because there was a long line, but this time I visited before the lunch rush and there was no line. I ordered the default Shina soba with a side of sauce katsu don. You can't choose the firmness of the noodles. The sauce katsu don arrived first, but I still wanted to taste the soy sauce soup first. I had to wait a bit for that. The soy sauce soup had a nice balance of richness and sharpness, and even though I couldn't choose the firmness of the noodles, I could feel the texture. The sauce katsu don had a nice crispy texture that I like, with a slightly sweet sauce – I just wished it had a bit more spiciness. Overall, I would definitely come back again. Well, I always have lunch here. Since my favorite restaurant Yacchan closed down, this is the only place I can get Chinese noodles. Yacchan had soy sauce, salt, and miso flavors, but here they only have soy sauce. So, I would rate this place an 8 out of 10 compared to Yacchan's 10. They don't have meat noodles, only Char Siu Chinese noodles, which are quite different. I have included pictures of the menu and condiments. The mini sauce cutlet bowl here is good. The cutlet is thin but tastes great with the sauce. Since Yacchan closed, I haven't found any other Chinese noodle place besides this one. It may not be as good as Yacchan, but it's still a delicious place to eat. However, the taste at this branch in Hakata Station is different from the main store, with a sweeter soup.

Surprisingly, all the staff are women! It's quite rare to see a ramen shop where women are actively working. Similar to "Tonkotsu Ramen Tsukiya," which also has a high percentage of female staff, this place is part of a group that is rapidly expanding with its "Shina Soba Tsukiya" and "Clear Tonkotsu" ramen.
The menu features a base of soy sauce ramen, as well as items like sauce katsudon, black pork shumai, and tamago kake gohan. I tried the "Shina Soba" and the "Sauce Katsudon." First, let's start with the soup. The soy sauce ramen has a subtle flavor, with a base of chicken and vegetables, aiming to highlight the soy sauce. The soup's taste is gentle and deep, with a nice fusion of soy sauce. Personally, I think adding a seafood base to enhance the aroma would make the ramen even better. The thick, flat, curly noodles hold up well to the soup and have a strong wheat flavor. The chashu is made from lean pork shoulder, which pairs nicely with the soup. The menma has a slight odor, but could use some improvement.
As for the "Sauce Katsudon," it's meant to be enjoyed as is, but I feel it could use a bit more fat in the pork and a softer texture. If you enjoy the sauce, you can add some extra spice with the table's hot sauce. It would be even better if the katsudon was bound with egg and dashi.
