I'm out of flour. Sorry for the bad language, but I'm out of flour lol As a former Kansai resident, I experience periodic withdrawal symptoms. If it's mild, I have takoyaki, but if it's severe, I have to eat okonomiyaki to feel better (^^;
The key to okonomiyaki is not the sauce, but the batter (dashi). My belief is that "No matter how good the sauce is, if the batter is not good, the okonomiyaki won't be good." The okonomiyaki is determined by the batter, sauce, cutting of ingredients, and cooking method. Pork and cabbage is like the standard ramen. Adding toppings is like special ramen. The basic is pork and cabbage. Yunohana's pork and cabbage is not special, but it's good enough for a satisfying meal. I often visit the Hakozaki store, but the one on the 8th floor of the Hakata Station Bus Center has a nice view, so I visit there often.
You need a hot plate! A store with only a counter and a big hot plate, or a hot plate at each table. In Osaka, if there is no hot plate at each table, it's not considered a specialty store. A hot plate is necessary for keeping the food hot. In Fukuoka, it's rare to have a hot plate, and you can cook it yourself at the table. It's a bit of a hassle to mix it in a bowl, so the staff will pour it onto the hot plate for you. Just make sure to flip it twice, cook it for the right amount of time, and you'll get a decently gooey finish. You can add sauce, mayo, bonito flakes, etc. as you like. If you're sharing with someone, cutting it into squares and eating from the edges helps cook it evenly. If you're alone, cutting it with a spatula as you go is best.
They offer a set with a wine corkage fee of 400 yen and an okonomiyaki lunch for 600 yen (limited to weekdays and choice of pork). It's a great deal!
