I visited the restaurant after seeing the HP and feeling like eating Fukizushi chirashi. I chose the Bara chirashi because if there are ingredients I don't like, I can't eat it anymore. However, Bara chirashi has a harmonious blend with the vinegar rice, so I think there are pros and cons. The restaurant is located along the road, with the Tsuruha drugstore as a landmark making it easy to find. This time, I ordered the Jyou Fukizushi chirashi. The price, including tax, was 2700 yen, which I found to be reasonable. After ordering, I was served green tea in an iron teapot, which was strong but a bit lukewarm. 15 minutes later, the Fukizushi chirashi was handed to me by the owner. It looked exactly like the photos on the HP. The tuna was chu-toro and melted in my mouth. The botan shrimp had a crunchy texture, while the octopus, squid, scallop, salmon, surf clam, snow crab, flounder, yellowtail, ikura, and raw ingredients were all fresh and delicious. I usually use conveyor belt sushi, so I didn't fully appreciate the work of a sushi chef, but this time, I felt the excellence of the sushi chef's work. Tamagoyaki: The tamagoyaki at conveyor belt sushi places is just rolled up, similar to homemade tamagoyaki. The tamagoyaki at a sushi restaurant is tightly packed, slightly sweet, with a hint of sake fragrance. The fluffy texture and moderate elasticity come from mixing white fish meat. Nimono: Using pre-made nimono can make the ingredients too soft and not tasty, and if used for sushi rolls, it can easily fall apart and be difficult to eat. The dried gourd and shiitake mushrooms were cooked in a way that did not affect the vinegar rice. It was sweet but did not interfere with the taste of the vinegar rice. Watching this cooking process made me glad I came to the sushi restaurant. Also, the lotus root in sweet vinegar and pickled ginger reduced the sourness, which was also good. Osumashi: Most places serve instant miso soup, but the osumashi here is served hot. It surprised me with ingredients like grated kelp and surf clam. The refined taste of the soup complements the Fukizushi chirashi well. You can't experience this osumashi with delivery, so I recommend visiting the restaurant. Finally, as conveyor belt sushi becomes more popular and local sushi restaurants close down, there are fewer young successors taking over. Chitose Sushi is one of the few restaurants serving as an adult social gathering place. These types of places can also be used for entertaining, so I encourage all adults to visit.
