Small cheese factory in Yakumo-cho, run by Mr. Koguri. They also have a ranch where they raise cows by grazing. The cheese factory was established in 2004 with the aim of conveying the taste of milk mainly from grass-fed cows. They produce a wide variety of cheeses, including fresh, hard, and washed. The cheese I recently tried was called "Ume," which is aged by washing it with plum wine. I enjoyed half of it immediately after purchase, and let the other half age for about a month. When I tried it right away, I noticed a subtle plum aroma and a relatively light milk flavor. At the same time, I could still enjoy the distinct washed-rind aroma. After aging, the cheese had a powerful punch to it. I could feel a strong richness and the washed-rind aroma was solid, almost like a cheese from France. I look forward to trying their other cheeses when I get the chance.
