This shop is quite particular about their bread. They are open so few days that it makes me wonder if it's even appropriate to call it a shop. I found out about their open days through a Facebook post or something and made sure to arrive right at 11 o'clock. However, there were already 3 groups of customers ahead of me. The first person had purchased over 5000 yen worth of bread. Each item was individually wrapped, so by the time it was my turn, I had already waited for about 15 minutes. But that gave me plenty of time to decide what to get. The bread had no names or prices attached, so I struggled to choose between edamame stick bread, orange peel bread, cinnamon rolls, carrot bread, and more. Each item was around 300 yen. The natural sweetness and texture from the sourdough were delightful, whether it was sweet or savory bread. Since it's such a lovely shop, I have a few suggestions. If they want to operate more efficiently, it would be helpful to have a price list or order sheet to make the checkout process smoother. The staff taking orders struggled because they didn't know the prices of each item, causing delays. Having a price list or order sheet would make things much easier.

I have eaten here a few times. However, it's difficult to visit the store because it's only open about once a month. They participate in events a few times a month, so it might be easier to follow them on Instagram to keep track. They use whole grain rye flour from Kosshimizu Farm, locally sourced wheat, soy milk instead of cow's milk, extra virgin olive oil or coconut oil for fats (butter from Yotsuba for pies and croissants), and natural sourdough starter made from wheat and water instead of yeast. Their attention to detail is evident. I had their coconut epi and melon pan last time and they were delicious. This time, I bought some of their hard breads that I missed last time. I chose the walnut and dried fruit rye bread, ciabatta, and apple bread. They seem to last quite long, so I wanted to buy more, but I had already bought a lot from another bakery the day before. The bread is so chewy and delicious, even though it's made with rye. It's not too sour and very easy to eat. I wish they would have events more often, like once a week.
