I entered the shop with my usual partner. It's a place I've been wanting to visit for a while. Recently, it seems like there are more restaurants serving chicken-based ramen or Chinese soba. The interior of the shop is very clean and well-organized. The male (possibly the owner?) and female (possibly the owner's wife?) work efficiently in the kitchen and with customer service. They have a very polite demeanor that I appreciate. Today, I ordered the limited chicken paitan ramen (rich chicken ramen with salt flavor) available only on Fridays, Saturdays, and Sundays, as well as the mini teriyaki chicken bowl made with local Tokachi chicken for 1200 yen. It took some time for the ramen to be served. I couldn't tell if they were working efficiently or slowly, or if they were just being very thorough. However, while waiting, I read a booklet on the table about various chicken-related topics, which made me think that they are very meticulous and have a strong dedication to their work, but at the same time, they set a very high standard. This raised my expectations significantly before even tasting the food. The menu offers additional toppings, such as the special topping and extra meat, which seems to change to the local Tokachi chicken when ordered. So, what kind of chicken is it if you don't order the toppings? When the ramen was served, the soup had a very meticulous preparation, with a good mouthfeel and a distinct sweetness of chicken. The noodles tend to clump together when picked up with chopsticks, making it difficult to slurp them up smoothly. The ramen comes with two slices of chicken chashu, one made from the breast and the other from the thigh, both of which are delicious. It is topped with green onions and shiso leaves. I personally like shiso leaves, so it didn't bother me, but I know that many people are not fond of this ingredient, so I wonder why it's included. Also, adding shiso leaves seems to dilute the richness of the chicken paitan, which makes me wonder why. However, I found myself getting tired of it halfway through the bowl. I tried the yuzu pepper for flavor variation, but I won't order it again next time. I could tell that a lot of effort was put into making the dish. It was very delicious up to about one-third of the way through!! After that, for some reason, I got tired of it and couldn't finish it. Next time, I think I'll try the chicken soba (light salt flavor). I will report back after that. Thank you for the meal.
